Baijiu (白酒, bái jiǔ — "white alcohol") is a Chinese distilled spirit produced from fermented grain — primarily sorghum, but also wheat, rice, corn, and mixed grains — using qu (曲), a complex mixed-culture fermentation agent containing moulds, yeasts, and bacteria. It is the world's most consumed distilled spirit by volume (~35% of global consumption), governed by China National Standardisation Administration (CNSA) GB/T standards that differ by aroma type. The four primary aroma types are: Sauce aroma (jiàng xiāng, 酱香型); Strong aroma (nóng xiāng, 浓香型); Clear/Light aroma (qīng xiāng, 清香型); and Rice aroma (mǐ xiāng, 米香型).

What baijiu actually is — and why Westerners find it challenging

Baijiu (白酒, bái jiǔ — "white alcohol") is a distilled spirit produced from fermented grain — primarily sorghum, but also wheat, rice, sticky rice, corn (maize), and other grains depending on style. It is by volume the world's most consumed spirit, accounting for approximately one-third of all distilled spirit consumption globally (IWSR data). Yet it is almost entirely consumed within China — baijiu is virtually unknown in non-Chinese markets.

The reason non-Chinese consumers find baijiu challenging is the qu (曲) fermentation culture. Baijiu uses qu (a dried brick or powder of fermented grain inoculated with specific moulds, bacteria, and yeasts) rather than pure yeast as the fermentation agent. The diverse microbial community in qu produces an extraordinarily complex mixture of fermentation by-products — including butyric acid (cheese/rancid), caproic acid (goat/vinegar), and their respective esters (ethyl butyrate: pineapple; ethyl caproate: apple/fruity) at high concentrations — which give baijiu its characteristic pungent, complex, multi-layered aromatic profile that can be bewildering to palates unfamiliar with it.

To Chinese drinkers, these same flavours are deeply familiar and associated with quality — specifically, the distinctive "aroma types" (香型, xiāngtíng) that classify baijiu.

Moutai — the world's most valuable spirits brand
Kweichow Moutai (贵州茅台酒, produced by Kweichow Moutai Co., Ltd., listed on Shanghai Stock Exchange) is consistently ranked as the world's most valuable spirits brand by brand valuation and by price per bottle at auction. Moutai is produced in Maotai town, Renhuai, Guizhou Province — a location that Chinese drinkers consider uniquely suited to Moutai's production because of the local microbiota of qu (specifically the Daqu large brick qu used for Moutai). Moutai's fermentation is extraordinarily long — the grain undergoes 9 rounds of steaming, 8 rounds of fermentation, and 7 rounds of distillation over approximately 12 months, then aged for 3+ years before blending and bottling. This extended process produces the Sauce aroma type's complexity.

Qu — the fermentation culture and why it differs from koji

Qu (曲) is baijiu's equivalent of sake's koji — but more complex. While koji is a pure culture of a single fungus (Aspergillus oryzae) grown on steamed rice under controlled conditions, qu is a mixed culture brick or ball containing dozens of species of moulds (Aspergillus, Rhizopus, Mucor), yeasts (Saccharomyces, Pichia, Torulaspora), and bacteria (Lactobacillus, Bacillus, Pediococcus), formed by spontaneous inoculation from the environment when moistened grain or wheat flour is shaped into bricks or balls and allowed to ferment at ambient temperatures for 2–6 weeks.

The specific microbial community in qu determines the aroma type of the resulting baijiu. Strong aroma baijiu's characteristic ethyl caproate is produced primarily by specific bacteria in the qu (particularly Clostridium kluyveri and related species in the mud pit fermentation) that generate caproic acid — then esterified with ethanol to produce ethyl caproate during fermentation and distillation.
