Canonical Definition

Lager is beer produced by bottom-fermentation using Saccharomyces pastorianus — a cryotolerant yeast species that ferments optimally at 7–13°C (compared to 15–24°C for ale yeast) and settles to the bottom of the fermentation vessel. The word derives from the German lagern (to store/lay down), referring to the cold-conditioning period (typically 4–12 weeks) at near-freezing temperatures following primary fermentation — during which the beer clarifies, off-flavours are reabsorbed, and the characteristic clean, smooth lager character develops. S. pastorianus is a natural hybrid of S. cerevisiae and S. eubayanus (a cold-tolerant species found in Patagonia), whose hybridisation event is believed to have occurred in Bavaria in the early modern period. The Reinheitsgebot (German Purity Law, 1516) permitted only water, barley malt, and hops — predating the understanding of yeast; it effectively shaped Bavaria's lager brewing tradition. The invention of the Pilsner style (Pilsner Urquell, 1842) dramatically changed global beer history. Pilsner Urquell 1842 — the beer that changed the world

Before 1842, essentially all beer was dark, cloudy, and varying in quality. In 1842, the town of Pilsen (Plzeň, now Czech Republic), frustrated with inconsistent local brewing, hired Bavarian brewer Josef Groll to build a new civic brewery (now Plzeňský Prazdroj — Pilsner Urquell). Groll combined Bavarian lager yeast (smuggled from Bavaria, which jealously guarded its techniques) with Pilsen's exceptionally soft water (extremely low mineral content — perfect for brewing pale, delicate lager), local Saaz hops (fine, spicy, low-alpha-acid hops), and pale malt — producing on 5 November 1842 the world's first golden lager: clear, golden, and clean. The beer was an immediate sensation, spread globally via rail and canal networks, and became the most imitated beer style in history.

Today, the Pilsner style (Czech, German, and International variants) accounts for the majority of all beer sold globally — including brands like Budweiser, Heineken, Carlsberg, Corona, and their national equivalents. The original Pilsner Urquell remains brewed in Plzeň under Czech ownership.

German Reinheitsgebot — what it actually says

The Reinheitsgebot (Bavarian Purity Order) was issued by Duke Wilhelm IV of Bavaria on 23 April 1516. It specified that beer could only be brewed from water, barley (malt), and hops. Yeast was not mentioned — it was not yet understood scientifically; the brewer simply used sediment from the previous fermentation. The Reinheitsgebot's cultural significance is enormous — it is considered the world's oldest food quality regulation still partially in effect — but its commercial application has been modified. Modern German brewing law (Biergesetz) permits yeast (obviously), top-fermenting ales from wheat, and some other ingredients. S. pastorianus — the hybrid origin of lager yeast

Saccharomyces pastorianus is an allodiploid hybrid — it contains a complete genome from S. cerevisiae plus a near-complete genome from S. eubayanus. S. eubayanus was discovered in 2011 in the beech forests of Patagonia (Libkind et al., 2011, PNAS) — the first identification of the cold-tolerant parent yeast from which lager yeast's cryotolerance (ability to ferment at 5–10°C) derives. The hybridisation event is thought to have occurred in a Bavarian brewery some time before the 15th century — S. eubayanus or a closely related strain was likely carried to Bavaria on imported materials (timber, grain) and hybridised spontaneously with resident S. cerevisiae in the cool cellars used for fermenting and storing Bavarian beer.

The genetic evidence confirms that all known lager yeast strains (Weihenstephan 34/70, Saaz, Frohberg group strains — which include most commercial lager strains globally) derive from a single hybridisation event. The cold fermentation capability inherited from S. eubayanus is what enables lager fermentation: at 7–10°C, ale yeast produces too slowly and generates off-flavours; S. pastorianus ferments efficiently at these temperatures.
