Wine too thin to drink — but perfect to distil

The Charente region of western France produces a wine that most wine drinkers would not enjoy. Ugni Blanc — the dominant grape in the Cognac zone — makes a high-acid, low-alcohol, almost neutral white wine. Unblended and undistilled, it is harsh and thin. As table wine, it has essentially no commercial market. But as the base material for double distillation in copper pot stills, its austerity becomes an asset: the lack of flavour in the base wine allows the distillation process and subsequent oak ageing to create the flavour, unimpeded by excessive fruit character from the starting material.

This counter-intuitive principle is central to Cognac. The best Cognacs are not made from the best wines — they are made from wines specifically grown for distillation, with high acidity (which acts as an antioxidant during ageing) and low alcohol (which maximises the concentration effect of distillation). The Charente's Atlantic climate — mild, humid, relatively frost-free — produces consistent yields of this unpretentious wine vintage after vintage, giving Cognac blenders a reliable supply to create consistent house styles.

Why Cognac has crus — soil matters even for distilled spirit
Cognac's six crus (growth zones) are defined by their soil types, which directly affect the character of the spirit distilled from wines grown on them. The centre of the Cognac region — Grande Champagne and Petite Champagne — sits on deep Campanian-stage chalk (champagne in French means chalky plain — this chalk is the same formation as in the Champagne wine region). This chalk produces wines of particularly fine acidity and mineral character that, after distillation and long ageing, develop extraordinary floral, Rancio, and complex character. Moving outward from this chalk core, soils become progressively more clay-dominant, and the brandies progressively heavier, more rapid-maturing, and less complex. The outermost crus (Bois) are used primarily for blending to add volume.

Armagnac, 200km to the southeast in Gascony, takes a different path entirely. Where Cognac is refined and consistent, Armagnac tends toward individuality and terroir expression. Many Armagnac producers release vintage-dated bottlings — something virtually unknown in Cognac's house-driven blending culture. The traditional Armagnac still (the alembic armagnacais) is a continuous column still, not a pot still — a technically different distillation method that produces spirit retaining more of the raw grape and wine character.

The Six Cognac Crus

The six crus are defined in the BNIC/INAO Cognac AOC decree and classified by soil type — concentric zones radiating from the chalk heartland outward to progressively clay-dominant soils. Only wines grown within a specific cru may be distilled and labelled with that cru designation.

Grande Champagne

Deep Campanian chalk; the finest cru. Produces the most elegant, floral spirits requiring the longest ageing (30–50+ years for finest expressions). Cognac Champagne blends must contain min. 50% Grande Champagne to carry the "Fine Champagne" designation.

Harder limestone and clay soils surrounding the inner three crus; the largest volume source. Produces rounder, fruity, faster-developing spirits used primarily for younger blends (VS, VSOP).

The traditional alembic armagnacais is a continuous column still (alembic à repasse is the pot still version used by some producers). The column still operates semi-continuously — wine flows into the top of the column and descends through a series of perforated plates while steam rises from below, stripping the alcohol and congeners from the wine. The resulting distillate emerges at approximately 52–72% ABV — lower than Cognac's pot still output (approximately 70–72%) — retaining more of the wine's aromatic character. This is why Armagnac typically has more grape character, more rustic complexity, and a more individual, less polished profile than Cognac.

Armagnac age designations broadly parallel Cognac: VS (minimum 1 year oak), VSOP (minimum 4 years), XO (minimum 10 years), Hors d'Age (minimum 10 years). Vintage Armagnac is a major category — the BNIA maintains records of historical vintage stocks dating back to the early 20th century, and some négociants offer single-vintage expressions from decades past.

The Charentais Double Distillation — Chemistry and Process

The Cognac production method mandates two distillations in the Charentais pot still (alembic charentais). The Charentais still is a specific design: an onion-shaped copper pot (typically 25 hectolitres capacity), a tapering neck called the col de cygne (swan neck), a coiled copper condenser (serpentin) immersed in cooling water, and a small preheater (chauffe-vin) through which the incoming wine is warmed by the hot vapours from the previous distillation — improving energy efficiency. The entire still must be copper: copper reacts with sulphur compounds in the distillate (removing malodorous sulphides) and with fatty acids (forming copper soaps that are removed in the still rather than appearing in the distillate).

First distillation: brouillis

The fermented wine (approximately 8–9% ABV, highly acidic) is charged into the still and heated for approximately 8 hours. The first distillate — the brouillis — collects at approximately 28–32% ABV. It is cloudy and aromatic but not yet spirit-level quality.

Second distillation: bonne chauffe and the cuts

The brouillis is recharged into the still for the second distillation — the bonne chauffe (good heating). The distillate is divided into three fractions: the têtes (heads — the first 1–2% that emerges, containing the most volatile compounds including acetaldehyde and methanol; discarded); the coeur (heart — the main fraction collected, approximately 70–72% ABV, the Cognac spirit); and the secondes (tails — the last fraction, lower in alcohol, retained and added to the next batch of brouillis). The distiller's skill in making the cuts — deciding precisely when to switch from heads to heart and from heart to tails — is critical to the final spirit quality.

The Rancio character

Rancio is a distinctive flavour descriptor used for mature Cognac (and some other aged spirits and wines) that has no precise English equivalent. It refers to a complex of nutty, mushroom, walnut, dried fig, and slightly rancid-fat notes that develop in spirit after long ageing in Limousin or Tronçais oak. Chemically, Rancio is associated with the oxidation and esterification of fatty acids (principally from the grape distillate) over long maturation — particularly the formation of ethyl esters of medium-chain fatty acids (ethyl hexanoate, ethyl octanoate, ethyl decanoate) and the oxidation products of these esters. Research on Rancio chemistry has been conducted at INRAE (Institut National de Recherche pour l'Agriculture, l'Alimentation et l'Environnement), Villenave d'Ornon, France · inrae.fr, in collaboration with BNIC.

Cognac Chalk Geology — Why Grande Champagne is Superior

The geological basis for Cognac's cru hierarchy is the same Cretaceous chalk formation found in the Champagne wine region, the Côte des Bar, and the coastal chalk cliffs of Normandy and southern England — all part of the same Late Cretaceous sea that covered the Paris Basin approximately 80–90 million years ago. The Grande Champagne and Petite Champagne crus sit on deep, continuous beds of Campanian chalk (approximately 80–83 Ma) — pure, soft, white limestone with approximately 90–95% CaCO₃ content and exceptionally high porosity (30–40% by volume).

This chalk creates growing conditions for Ugni Blanc that parallel its effect on Champagne's Chardonnay: consistent moisture availability (chalk stores and slowly releases water), high natural acidity in the fruit (the calcium carbonate buffers soil pH and the vine's metabolic processes), and a distinctively mineral character in the wine. After distillation and long oak maturation, these qualities translate into the elevated floral and Rancio complexity of great Grande Champagne Cognac.

Moving outward from the chalk core, the Fins Bois soils become progressively more clay-dominant. Clay soils warm more slowly in spring (delaying flowering), retain more water (potentially diluting fruit character), and produce wines of different acidity profiles. The resulting spirits mature faster (more rapid oxygen exchange through the more reactive distillate's wood contact in cask) but are less complex.
