Cognac is an Appellation d'Origine Contrôlée (AOC) brandy produced in the Charente and Charente-Maritime departments of southwest France, governed by the Bureau National Interprofessionnel du Cognac (BNIC). The AOC requires: grapes grown in the Cognac delimited zone (primarily Ugni Blanc, also Folle Blanche and Colombard); double distillation in a copper pot still of the Charentais type (alambic charentais) producing spirit at 68–72% ABV; ageing in French oak barrels (Limousin or Tronçais, Quercus petraea); minimum 2 years ageing (VS designation); minimum 40% ABV when bottled. The BNIC administers production statistics, quality controls, and enforces the appellation. Cognac is the world's most commercially significant brandy — France exports approximately 95% of Cognac production, with the USA, China, Singapore, and the UK as primary markets.
What makes Cognac different from all other brandy
Cognac is the world's most precisely regulated brandy — an AOC with mandatory double distillation in a specific pot still design, mandatory ageing in French oak, mandatory geographic origin, and a tiered age classification system. The regulations are administered by the BNIC (Bureau National Interprofessionnel du Cognac) and governed by the Cognac AOC under French and EU law.
The double distillation in the Charentais alembic (alambic charentais) is a copper pot still that produces a first distillation at 28–32% ABV (the "brouillis"), which is then redistilled to produce the "bonne chauffe" at 68–72% ABV. This two-pass process concentrates flavour compounds while removing the harshest heads and tails from each pass — producing a spirit with far more aromatic complexity than a single distillation, but at a fraction of the congener load of an unaged pot still whisky.
Aging in Limousin (Quercus petraea) or Tronçais (also Quercus petraea) oak is mandatory. Cognac cannot be labelled Cognac unless aged in these specific French oaks — not American white oak (used for rum and Bourbon), not Eastern European oak. Limousin oak is particularly porous, allowing faster oxygen ingress and more tannin and vanillin extraction than tighter-grained oak varieties.

Rancio and wood chemistry — the ageing science of Cognac
Rancio is the distinctive flavour note associated with aged Cognac and old French brandies — described as walnut, oxidised fat, cheese rind, dried fruit. It is produced by a complex of chemical reactions during long oak ageing: oxidation of fatty acid esters in the spirit, combined with wood-derived compounds and Maillard-type reactions between amino acids and sugars. The specific compounds responsible include oxidised fatty acid methyl esters, γ-nonalactone (coconut/peach), and oxidation products of unsaturated aldehydes.
The primary wood chemistry: Limousin Quercus petraea releases more ellagitannins (vescalagin and castalagin — structural tannins that add body and bitterness, then polymerise to soften with extended ageing) and lignin degradation products (vanillin — vanilla aroma; guaiacol — smoky/spicy; eugenol — clove). The longer the Cognac ages, the more vanillin accumulates — an XO Cognac typically shows 3–7× more vanillin than a VS. Limousin oak's looser grain (larger pores) allows faster oxygen ingress than tighter-grained American oak — accelerating oxidative reactions including rancio development. Source: Sarni et al.
