Fine Champagne — The Blended Designation

"Fine Champagne" (or "Fine Cognac Champagne") is a legally defined designation for cognac blended exclusively from Grande Champagne and Petite Champagne eaux-de-vie, with a minimum of 50% of the volume derived from Grande Champagne. This designation allows producers to create volume blends with the quality characteristics of the two premier crus while maintaining the prestige "Champagne" appellation. Rémy Martin's entire standard range — Rémy Martin VSOP, 1738, XO Excellence — uses Fine Champagne as its sole blending source, making Rémy Martin the largest purchaser of Grande and Petite Champagne fruit in Cognac. The "Champagne" in the name has no connection to the Champagne wine region of Marne — it derives from the Latin campania (open plain/chalk country), predating the Champagne wine appellation's modern usage by centuries.

Geography Note — Why "Champagne"?
The Grande and Petite Champagne zones of Cognac use the word "Champagne" (from Latin campania) in its geological sense — referring to the open, chalk-dominated limestone country (champagne as opposed to bocage/wooded country). This usage predates the Champagne wine appellation's modern commercial dominance and predates the sparkling wine association entirely. The chalk geology in both Cognac's Champagne zones and Épernay's Champagne region shares the same Cretaceous chalk formation — but the regions are 500km apart and the naming is coincidental convergence on the same geological term rather than any shared identity.

Ugni Blanc — The Paradox Grape

Vitis vinifera L. var. Ugni blanc (synonym: Trebbiano Toscano in Italy; Saint-Émilion des Charentes in the Cognac region historical name) is the dominant grape variety in Cognac production, accounting for approximately 90% of all AOC Cognac plantings. Why Low-Quality Wine Makes Great Brandy

Fermentation

Ugni blanc grapes are harvested in October, typically at 8–9% potential alcohol. Fermentation is straightforward — S. cerevisiae converts all grape sugars to alcohol over 3–5 days, producing the thin, dry, high-acid base wine. Under AOC rules, no chaptalisation (sugar addition), no acidification (the wine is already very acid), and no enrichment is permitted. Malolactic fermentation (MLF) is not universally performed — the very high natural acidity makes the wine stable without MLF, and the malic acid's acidic contribution to the distillate is considered beneficial by some producers. The wine is typically stored in tanks and distilled in batches from November through the following March; AOC rules require all distillation to be completed by 31 March of the year following harvest. No SO₂ additions are permitted to wine destined for distillation after 1 January following harvest.

The Alembic Charentais — Mandated Still Design

The alembic charentais (Charentais alembic pot still) is the only distillation apparatus permitted for cognac production under AOC Decree 2009. The Double Distillation Process

First distillation (première chauffe): The copper still body (typically 25 hL capacity, maximum 30 hL under AOC rules) is charged with the fermented Ugni blanc wine. The wine is heated by an external direct flame (historically wood or coal; now predominantly gas burner) through the copper base. The vapour rises through the onion-dome body, passes through the col de cygne, and is condensed. The product — called brouillis — is collected at approximately 28–32% ABV. Lees (dead yeast cells) may be included in the first distillation at the distiller's option — their inclusion contributes additional fatty acid esters and complexity; some premium producers include lees (distillation sur lies), though this requires more frequent still cleaning. The wine preheater (chauffe-vin) — a copper coil or cylindrical heat exchanger positioned in the vapour path — uses the condensing vapour's heat to warm the incoming wine before it enters the still, improving energy efficiency.

Second distillation (bonne chauffe): The brouillis (28–32% ABV) from the first distillation is charged back into the still and redistilled. The heads fraction (têtes) — the first portion to emerge, containing methanol, acetaldehyde, and light congeners — is separated and recycled back to the next brouillis batch. The heart cut (cœur) is collected as the cognac eau-de-vie, emerging at 68–72% ABV. The tails fraction (secondes) — lower in alcohol, higher in heavy congeners and fatty acids — is also recycled to the next brouillis. The Angel's Share and Cellar Microclimate

Parallel to the Big Four mega-houses, a smaller but growing category of grower cognac producers has emerged — estates that grow their own grapes, produce their own wine, distil their own eaux-de-vie, and bottle under their own estate label, typically from a single cru or even a single vineyard.
