Codex Definition

Rum is produced from sugarcane-derived raw materials — primarily molasses (the viscous residue remaining after maximum sucrose has been crystallised from raw cane juice) or fresh sugarcane juice (for rhum agricole) — fermented with yeast and distilled in pot stills, column stills, or both. Unlike most spirits categories, rum has no single overarching global regulatory framework: EU Regulation 2019/787, the US TTB (27 CFR 5.22(f)), and the WIRSPA Caribbean Rum Standard each define the category differently, producing a category of extraordinary raw material, production method, and regulatory diversity. The flavour spectrum of commercial rum — from the light, neutral column-still rums of Puerto Rico and Cuba to the massively esterified pot-still rums of Jamaica — is wider than virtually any other spirit category.

Raw Materials: Molasses, Cane Juice, and Syrup

Molasses: The Industry's Primary Substrate

Approximately 70–75% of world rum production uses molasses as its primary raw material. Molasses is the dark, viscous syrup that remains after raw cane sugar (sucrose) has been crystallised from clarified sugarcane juice in centrifuges. It is a complex mixture — not simply "liquid sugar" — and its composition varies significantly by sugarcane variety, growing region, harvesting conditions, and sugar processing method. The composition of typical blackstrap molasses (the final, most exhausted grade) is approximately:

The high potassium and mineral content of molasses is nutritionally important for yeast fermentation — these ions are essential cofactors for yeast enzymatic activity. However, the sulphate content of some molasses can produce hydrogen sulphide (H₂S) during fermentation, requiring careful management to avoid off-flavours (copper contact in pot stills helps remove H₂S, as in Cognac). Melanoidins, the Maillard reaction products of amino acids and reducing sugars formed during the hot sugar evaporation and crystallisation steps, give molasses its dark colour and contribute to the characteristic caramel, dark sugar, and toasty base notes of molasses-based rum.

Rhum Agricole: Fresh Cane Juice

Rhum agricole (agricultural rum) is produced from fresh sugarcane juice rather than molasses, and is exclusively produced in the French Antilles (Martinique, Guadeloupe, and their dependencies). The fresh juice is pressed within 24–48 hours of cutting to prevent fermentation onset; it contains a very different chemical profile from molasses: approximately 12–15% sucrose, minimal melanoidins (no Maillard products — the juice hasn't been heat-concentrated), high levels of grassy, vegetal volatiles (particularly cis-3-hexen-1-ol and hexyl acetate — the same "cut grass" compounds in fresh-pressed wine), and much lower mineral content. The fermentation of cane juice proceeds more rapidly and cleanly than molasses fermentation, and the resulting rum has a characteristic fresh, grassy, vegetal, floral character entirely unlike molasses-based rum at the same age.

Martinique rhum agricole AOC (appellation d'origine contrôlée — the world's first rum GI, established 1996) specifies: fresh sugarcane juice from Martinique grown varieties only; natural yeast fermentation; distillation in a single-column copper pot still (the charentais-type colonne créole) to 65–75% ABV; minimum 3 months in oak for rhum vieux (aged) or immediate bottling for blanc; minimum 40% ABV. Rhum blanc from Martinique has a protected designation for unaged expressions.

Fermentation: Clean, Dirty, and Dunder

The Fermentation Spectrum

Rum fermentation spans from the most controlled, clean, and rapid (Puerto Rican style: pure-culture yeast, 24–36 hours, temperature-controlled) to the most wild, extended, and complex (Jamaican heavy pot still: mixed culture including bacteria, 5–21 days, open-air wooden fermentation vessels). The fermentation approach is the single most important variable in rum congener profile — more than still type, cask, or ageing duration.

Jamaica's Dunder and Muck Pit

The most celebrated and technically unusual rum fermentation practice is Jamaica's dunder/muck system, which produces the world's highest-ester rums. The system involves two recycled materials added to fresh fermentation charges:

Dunder (also "dead wash" or "lees"): the spent liquid remaining in the still pot after distillation. Rich in yeast autolysis products, organic acids (acetic acid, butyric acid, caproic acid), residual minerals, and spent yeast cells. When added back to fresh molasses wash (typically 10–30% of wash volume), dunder: (1) inoculates the new wash with wild microorganisms from the previous fermentation; (2) lowers the pH, favouring acid-producing bacteria over competing organisms; (3) contributes free fatty acids as ester precursors, dramatically increasing the potential for ester formation. Farrasmane & Ganou-Parfait (1998) showed dunder addition increases total ester content of Jamaican rum fermentation by 200–500% compared to equivalent ferments without dunder.

Muck (or "muck pit"): the most extraordinary element. A muck pit is a brick-lined or earthen pit adjacent to the distillery, containing accumulated material from decades of production: pressed sugarcane fibre (bagasse), animal bones, dunder, and other organic waste. The pit hosts an anaerobic microbial community including Clostridium species that produce butyric acid and caproic acid (the same acids that drive nong-xiang baijiu's ethyl caproate character — a convergent evolution of production technique). The muck drawn from the pit is added to the fresh wash as a microbial inoculant and fatty acid source. Some Jamaica muck pits have been in continuous use for over 100 years; the accumulated microbial community is considered part of a distillery's living heritage.

Ester Chemistry in Jamaican Rum

The combination of dunder, muck, prolonged fermentation (5–21 days), warm temperatures (28–35°C), and wild-yeast/bacterial cultures produces extraordinarily high ester concentrations in Jamaican heavy pot still rum. The Jamaica Rum GI (JRPA — Jamaica Rum Producers' Association; JIPO — Jamaica Intellectual Property Office) uses a "Marks" system to categorise rum by ester content, measured in grams of ester per 100 litres of pure alcohol (g/100 lAA):

Distillation: From Pot to Column and Hybrid

Pot Still Rum

Pot still rum distillation produces the heaviest, most congener-rich rum — retaining high levels of esters, fusel alcohols, fatty acids, and other flavour-active compounds that would be removed by column rectification. Pot stills used in rum production are typically copper alembic stills (similar to Cognac and Scotch Charentais design in principle, but with adaptations for high-ester washes). Most traditional pot still rum distilleries use a double distillation: wash → low wines (25–30% ABV) → high wines/new rum (70–80% ABV).

Jamaica is the primary home of pot still rum. The distinctive "retort" system used at historic Jamaican distilleries adds further complexity: instead of directly condensing low wines and redistilling in a spirit still, some distilleries use a series of retorts (intermediate condensing vessels, usually two or three in sequence) through which vapour passes before final condensation. Each retort contains previously distilled low wines; vapour bubbling through the retorts undergoes partial condensation and re-evaporation, effectively adding distillation steps without a separate still charge. The retort system dramatically increases ester concentration in the final distillate by providing additional esterification time and contact with fatty acid-rich low wines.

Demerara's Extraordinary Wooden Pot Stills

The most unusual rum distillation equipment in the world is at Diamond Distillery (DDL — Demerara Distillers Ltd), Georgetown, Guyana. DDL operates a unique collection of antique wooden pot stills — the last of their kind anywhere in the world — originally from closed Demerara estates that DDL has preserved and consolidated at a single site. Two connected wooden pot stills in sequence; the only surviving double wooden pot still system in the world. Produces the "PM" marque rum for El Dorado blends — the heaviest, most aromatic component in the El Dorado range. The wooden construction (English oak, lined with copper plates) leaches woody tannins and compounds unavailable from copper-only stills, contributing to PM rum's distinctive furniture-polish, sawdust, and tropical-fruit character. Fermentation wash is the most bacteria-rich and ester-rich of DDL's production streams.

An original Aeneas Coffey-designed continuous column still (patent still), constructed in wood (unlike virtually all modern column stills, which are stainless steel or copper). The wooden construction imparts a subtle woody warmth to the lighter spirit produced. The "EHP" (Enmore Pot Still) marque is the lightest and most delicate in the DDL portfolio, despite being produced on a continuous still. The paradox of an antique Coffey still at the same distillery as a 200-year-old wooden pot still is unique in global spirits production.

Column Still Rum: Light and Neutral

The majority of commercially sold rum worldwide is produced partly or entirely in continuous column (patent) stills, which allow a high degree of congener separation and produce spirit at 90–96% ABV before dilution. Column-still rum is the basis of the world's largest rum brands: Bacardí (Puerto Rico and multiple global production sites), Captain Morgan (Diageo, multiple sites), and Havana Club (Cuba/France, mixed production). Puerto Rico's rum industry — producing roughly a quarter of all rum consumed in the United States — is based on column-still production using a standard two-column rectification system producing light, clean, mixable rum at high efficiency.

Richard Seale (MD and owner) has been the most vocal advocate for honest rum labelling and the elimination of permitted additives (sugar, caramel, artificial flavours) in "premium" rum — his public position papers on rum labelling reform are the primary driver behind the rum industry's ongoing labelling transparency debate. Foursquare produces pot still rum (from two pot stills) and column still rum separately, then blends them at various ratios for different expressions. The world's primary producer of Very High Ester (VHE) Jamaican rum and the definitive "funky Jamaican" style. Hampden produces rum from a continuum of ester marks: LFCH (light), C<FM ("light funk"), C<FM+F (moderate), OWH, Hh (high), HLCF, <C> (very high). The distillery uses the full dunder and muck pit system with one of the oldest operating muck pits in Jamaica. Hampden distillate is the heart of the original Wray & Nephew White Overproof formula. Venezuela's most internationally recognised rum, produced at Hacienda Saruro and La Miel distilleries. Rum Labelling and Regulatory Frameworks

The absence of a single global rum regulatory framework is rum's defining regulatory characteristic — and its biggest consumer transparency challenge. Three principal frameworks govern rum labelling in the major markets:

EU Regulation 2019/787 — Category 1 (Rum)

Under EU Reg 2019/787, rum is defined as a spirit produced exclusively by alcoholic fermentation and distillation of: (a) sugarcane molasses, or (b) sugarcane juice, or (c) syrups from the production of cane sugar — then distilled at under 96% ABV, retaining characteristic sensory qualities of rum; minimum 37.5% ABV at bottling. The EU definition is notable for what it permits: the addition of caramel colouring (E150a) for colour adjustment; and up to 20 g/L added sucrose or equivalent sweetening — both without label disclosure. This means that a bottle labelled as "rum" in the EU may contain 20g/L added sugar and artificial caramel colouring with no consumer notification. The EU Reg 2019/787 definition of "rum" covers a vast quality range — from single-estate aged Barbados pot-still rum to column-still cheap Caribbean bulk product.

US TTB 27 CFR 5.22(f) — Rum Standards

The US Alcohol and Tobacco Tax and Trade Bureau (TTB) defines rum under 27 CFR 5.22(f) as "spirits distilled from the fermented juice of sugar cane, sugar cane syrup, sugar cane molasses, or other sugar cane by-products at less than 190° proof [95% ABV]." The TTB definition is broad: there is no minimum maturation requirement, no limit on additives (including caramel and sugar syrup, up to 2.5% by weight for flavoured/blended rum), and no geographical production requirement. "Rum" may be bottled below 40% ABV in the US (minimum 40% is required for designation as "rum" under TTB, but flavoured rums under 40% can be labelled differently).

WIRSPA Caribbean Rum Standard (CRS)

The West Indies Rum and Spirits Producers' Association (WIRSPA), headquartered in Barbados, administers the Caribbean Rum Standard (CRS) — a voluntary certification scheme for rums produced in CARICOM (Caribbean Community) member states. The CRS is the most consumer-protective of the three frameworks: it requires authentic Caribbean sugarcane origin; prohibits the addition of non-rum flavouring agents or non-caramel artificial colouring; and limits added sugar to a maximum of 20g/L (which it requires to be disclosed if exceeding 5 g/L). The "Authentic Caribbean Rum" hexagonal mark on a label indicates WIRSPA/CRS certification — analogous to the ITA Trappist hexagonal mark, it is a provenance and quality floor signal.

The Sugar Addition Controversy

The addition of sugar (dosage) to rum before bottling — a practice producing "hotter," sweeter, more immediately approachable spirit at younger ages — has been the defining transparency controversy in rum since approximately 2013, when the blog The Rum Mercenary (Alko, Finland, in collaboration with others) began publishing Alcoholmeter density measurements showing that several widely sold "premium" rums contained 30–50 g/L added sugar. The findings provoked significant industry debate: producers like Diplomatico Reserva Exclusiva (~40 g/L), Ron Zacapa 23 (~40 g/L), and some Plantation releases were shown to contain more sugar than some dessert wines. Foursquare's Richard Seale and the WIRSPA CRS framework have championed mandatory sugar disclosure; most major international brands continue to resist it.
