Esters are organic compounds formed from the reaction of an alcohol with a carboxylic acid — in rum fermentation, primarily from the reaction of ethanol with fatty acids produced by yeast and bacterial metabolism. The dominant esters in Jamaican high-ester rum are:
Ethyl acetate (ethanol + acetic acid): The most abundant rum ester; acetate character (nail polish remover at extreme concentrations; fruity/solvent at moderate levels). Produced by Saccharomyces cerevisiae fermentation and also by bacteria.
Isoamyl acetate (isoamyl alcohol + acetic acid): Banana/pear drop character; the dominant "tropical fruit" note in Wedderburn-style Jamaican rum. Produced primarily by yeast via the ehrlich pathway from leucine degradation.
Ethyl butyrate (ethanol + butyric acid): Pineapple, tropical fruit. Butyric acid is produced by Clostridium species in the dunder pit under anaerobic conditions; it then reacts with ethanol during fermentation and distillation to form this ester.
Ethyl hexanoate (ethanol + hexanoic acid/caproic acid): Apple, tropical, waxy. Also produced through bacterial fermentation pathways. A key compound in the complex fruity profile of high-ester rums.

The tropical ageing effect — the Angel's Share in the Caribbean
Rum aged in the Caribbean matures at dramatically faster rates than Scotch whisky aged in Scotland. The average temperature in Jamaica, Barbados, or Martinique is 25–30°C year-round versus 8–12°C in Scotland. Higher temperatures accelerate the chemical reactions between spirit and oak (ester formation from wood compounds, lignin and hemicellulose degradation, tannin extraction, and vanilla/caramel compound release from toasted oak). A rum aged 5 years in Jamaica is considered roughly equivalent in maturation development to a Scotch whisky aged 15–20 years in Scotland. The "angel's share" (evaporation loss) in the Caribbean is approximately 5–8% per year versus 1–2% in Scotland, meaning Caribbean-aged rum loses a significant portion of its volume but concentrates remaining flavour compounds proportionally.
