The Caribbean produces more distinct styles of rum than any other spirit category — not despite being made from the same crop, but because of three centuries of different colonial traditions, different distillation philosophies, different fermentation cultures, and the most diverse collection of microclimates on earth compacted into a 4,000km archipelago.

Rum is a spirit produced by distillation of fermented sugarcane products — either fresh sugarcane juice (vesou in French; the base for rhum agricole) or sugarcane molasses (the byproduct of sugar refining; the base for rhum industriel or rhum de mélasse). There is no single internationally agreed regulatory definition of rum covering the entire Caribbean — regional and national definitions apply. In the French islands, AOC Martinique Rhum Agricole (issued by INAO, established 1996 — the world's first GI protection for a rum) specifically requires fresh sugarcane juice fermented and distilled in Martinique to strict geographical and production standards. One crop, three entirely different spirits

Every rum in the world is made from sugarcane — either from the fresh juice of the plant, or from molasses (the thick dark syrup left over after sugar crystals have been extracted from boiled cane juice). That is where the similarity ends. The French Caribbean tradition, the British Caribbean tradition, and the Spanish Caribbean tradition have been producing completely different spirits from the same raw material for three centuries — and the differences are not minor variations of flavour. They are fundamental differences in production philosophy, raw material, fermentation approach, and distillation method.

Fresh juice vs molasses — why it matters fundamentally
Rhum agricole (French tradition) is made from fresh-pressed sugarcane juice fermented within hours of harvest. The juice contains not just sugars but also amino acids, minerals, chlorophyll breakdown products, and the specific aromatic compounds of the cane variety itself — which vary by soil, climate, and cane cultivar. When this juice is fermented and distilled, those aromatic compounds carry through into the rum, creating a grassy, vegetal, terroir-expressive spirit. Rhum industriel (made from molasses in any tradition) starts from a heavily processed byproduct in which the cane's fresh character has been largely destroyed by the high-heat sugar refining process. What molasses brings is residual sugars plus caramelised, roasted, and concentrated compounds — a richer, darker starting point that produces rum of different character. Neither is superior — they are different products from the same crop.

The consequence of this divide is that a French rhum agricole from Martinique and an aged Spanish-style ron from Cuba — both called "rum" on international markets — are as different from each other as white wine is from red wine. Understanding Caribbean rum requires understanding the three colonial traditions that shaped it.

The Three Colonial Traditions

Molasses-based; pot still distillation (Jamaica especially) or combined pot/column. Longer fermentation periods with "dunder" (spent still residue) added to promote ester development. Jamaica is world-famous for extremely high ester marks (funk/overproof). Rich, heavy, complex — fruit, earth, funk character. Key producers: Hampden Estate (Jamaica), Worthy Park (Jamaica), Foursquare (Barbados), El Dorado (Guyana), Angostura (Trinidad). Mount Gay (Barbados) claims to be the world's oldest rum producer (est. 1703).
Spanish Tradition
Ron · Light column-distilled · Cuba, Puerto Rico, Dominican Republic, Panama
Molasses-based; column still distillation to higher ABV (lighter, more neutral spirit). Shorter fermentation. Aged in small American white oak barrels (ex-bourbon); charcoal filtration often used. Clean, light, vanilla-forward, accessible — designed for mixing and cocktails. Key producers: Havana Club (Cuba), Bacardi (originally Cuba, now global), Brugal and Barceló (Dominican Republic), Ron Zacapa (Guatemala adjacent Spanish tradition), Diplomatico (Venezuela).

AOC Martinique — The World's First Rum GI

Martinique's Appellation d'Origine Contrôlée for rhum agricole, established in 1996 by INAO decree, was the first GI protection ever granted to a rum. The AOC defines: the geographic zone (the island of Martinique); the permitted sugarcane varieties (approximately 12 varieties approved, each contributing different aromatic characteristics); the harvest season (January to July); the crushing and distillation requirement (juice must be distilled within 24 hours of crushing to preserve freshness); the minimum Brix (cane juice sugar concentration — must reach minimum 14°Brix); the distillation parameters (copper column still; off-still strength 65–75% ABV); the ageing classifications (rhum blanc — not less than 3 months in cask or stainless; rhum paille — minimum 12 months; VSOP — minimum 4 years in oak under 650L; XO — minimum 6 years); and labelling requirements.

The AOC zone covers 23 communes across Martinique from the volcanic north (richer, more complex soils — particularly in the region around Saint-Pierre, devastated in the 1902 eruption of Mont Pelée; now partly replanted) to the flat, dryer south. Different communes produce cane and therefore rum of different character; Neisson (Domaine de la Cour, 97215 Le Carbet · neisson.com) in the volcanic north near Saint-Pierre is considered one of the finest terroir expressions.

Jamaica — High Ester Rum and the Marks System

Jamaican rum's defining characteristic is its exceptionally high ester content — particularly ethyl acetate and isoamyl acetate, which produce the "funk," tropical fruit (overripe banana, pineapple, mango), and earthy character that has made it the most distinctive rum tradition in the world. This ester content is measured in grams per hectolitre of pure alcohol (g/hlpa), and Jamaica classifies its rum production by ester level using a system of historic marks:

The extreme ester levels in Jamaican rum come from the fermentation process. Distillers use a "dunder pit" — a large open vessel containing dunder (spent still residue, the unfermented solids and liquids remaining after distillation) which has been fermenting for months or years, developing populations of wild yeasts and bacteria (particularly Clostridium species) that produce a range of congeners. This dunder is added to the next fermentation in proportions that affect the final ester profile of the rum. The addition of muck (fermented cane trash and other organic material) in some distilleries adds further complexity. Hampden Estate (Trelawny, Hampden Estate PO, Trelawny, Jamaica · hampdenrum.com) is the world's most studied producer of high-ester Jamaican rum.

Ester Chemistry — Why Jamaican Rum Smells Like That

Esters are organic compounds formed from the reaction of an alcohol with a carboxylic acid — in rum fermentation, primarily from the reaction of ethanol with fatty acids produced by yeast and bacterial metabolism. The dominant esters in Jamaican high-ester rum are:

Ethyl acetate (ethanol + acetic acid): The most abundant rum ester; acetate character (nail polish remover at extreme concentrations; fruity/solvent at moderate levels). Produced by Saccharomyces cerevisiae fermentation and also by bacteria.

Isoamyl acetate (isoamyl alcohol + acetic acid): Banana/pear drop character; the dominant "tropical fruit" note in Wedderburn-style Jamaican rum. Produced primarily by yeast via the ehrlich pathway from leucine degradation.

Ethyl butyrate (ethanol + butyric acid): Pineapple, tropical fruit. Butyric acid is produced by Clostridium species in the dunder pit under anaerobic conditions; it then reacts with ethanol during fermentation and distillation to form this ester.

Ethyl hexanoate (ethanol + hexanoic acid/caproic acid): Apple, tropical, waxy. Also produced through bacterial fermentation pathways. A key compound in the complex fruity profile of high-ester rums.

The tropical ageing effect — the Angel's Share in the Caribbean

Rum aged in the Caribbean matures at dramatically faster rates than Scotch whisky aged in Scotland. The average temperature in Jamaica, Barbados, or Martinique is 25–30°C year-round versus 8–12°C in Scotland. Higher temperatures accelerate the chemical reactions between spirit and oak (ester formation from wood compounds, lignin and hemicellulose degradation, tannin extraction, and vanilla/caramel compound release from toasted oak). A rum aged 5 years in Jamaica is considered roughly equivalent in maturation development to a Scotch whisky aged 15–20 years in Scotland. The "angel's share" (evaporation loss) in the Caribbean is approximately 5–8% per year versus 1–2% in Scotland, meaning Caribbean-aged rum loses a significant portion of its volume but concentrates remaining flavour compounds proportionally.

Barbados — The Oldest Commercial Rum Tradition

Barbados makes a strong claim to the world's oldest documented rum production. The earliest written reference to rum produced in the Caribbean appears in a 1647 account from Barbados describing a spirit made from "Kill-Devill" (fermented cane juice). Mount Gay Distilleries (Spring Garden, St. Lucy, Barbados BB26000 · mountgay.com) holds a deed dating to 1703 establishing the distillery on the site of an operation already producing rum — making it the oldest continuously operating rum distillery supported by documentary evidence.

Foursquare Rum Distillery (St. Philip, Barbados BB22000 · foursquare.net), under master blender Richard Seale, has become one of the world's most respected premium rum producers through its Exceptional Cask Selection series — single-cask, vintage-dated expressions that have helped establish Barbados rum as a connoisseur's category alongside single malt Scotch. Foursquare uses both pot still and column still distillation, blending the two for complexity.
