100% Agave vs Mixto

NOM-006-SCFI-2012 permits two types of tequila: 100% agave (labelled "100% de agave" or "100% puro de agave") — produced entirely from blue Weber agave sugars; and mixto — which must contain a minimum 51% blue Weber agave sugars, with the remaining up to 49% derived from other approved sugars (typically cane sugar or corn syrup). Fermentation

Double Distillation

NOM-006-SCFI-2012 requires a minimum of two distillations. The first distillation (destrozamiento) in a pot still or column still takes the fermented wash (ordinario) from ~6% to approximately 20–30% ABV, separating the bulk of water and solids. The second distillation (rectificación) refines to 55–75% ABV new-make spirit. NOM-006 specifies a maximum distillation strength of 75% ABV and a minimum bottling strength of 35% ABV (maximum 55% ABV for non-additive tequila). The cut points of the second distillation — how much heads (methanol, acetaldehyde) and tails (higher alcohols, fatty acids) are retained — are critical flavour decisions. Traditional pot still double distillation retains more congeners (more character); modern column stills can produce a cleaner, more neutral spirit. Some producers use a copper pot still for the second distillation specifically for copper's catalytic role in reducing sulphur compounds.

Permitted Additives — The "Additive-Free" Movement

NOM-006-SCFI-2012 permits up to 1% by weight of certain additives in tequila without disclosure requirements: caramel colour (E150a), oak extract, glycerin, and sugar syrup (jarabe). The Diffuser Controversy

How the Diffuser Works

The extracted sugary liquid is then sent to a separate cooker/hydrolysis vessel where the inulin is hydrolysed to fermentable fructose using acid or enzyme catalysis and high heat. The diffuser's advantages are purely economic: extraction yields of 85–92% sugar from the agave (vs ~70–75% for tahona or roller mill); faster throughput; lower labour costs; ability to process piña that is not fully mature or optimally cooked. The industrial scale is extraordinary — the largest tequila diffuser installations process hundreds of tonnes of agave per day.

Why Critics Object — The Flavour Argument

The core technical objection to diffuser-produced tequila is that the process bypasses the Maillard and caramelisation reactions of traditional cooking, eliminates the contact between agave fibre and fermenting juice, and strips out the wax, phenolic compounds, and terpenoid aromatic precursors bound in the agave cell walls — compounds that are only released by cooking and mechanical disruption in the traditional process. The resulting diffuser "tequila wine" (fermented sugar solution) is analytically low in agave-characteristic terpenoids (linalool, β-myrcene, trans-β-ocimene — the compounds most associated with agave character in sensory analysis) and high in residual bitterness from raw agave glucosides and saponins that traditional cooking would have degraded or modified. The resulting distillate is frequently described as harsh, bitter, and thin — requiring heavy use of permitted additives (glycerin for mouthfeel, caramel for colour, sugar syrup for sweetness) to be palatable. Critically, the raw-agave diffuser process also generates more methanol than cooked-agave processes — because pectin methylesterase in raw agave fibres converts agave pectin to methanol during the extraction, before heads removal in distillation.

Which Brands Use Diffusers?
The CRT and NOM-006 do not require producers to disclose whether a diffuser is used. Brands identified as using diffuser production include several high-volume products from major multinational conglomerates. The Industry Defence

Producers using diffuser technology argue that NOM-006 permits the method, that modern diffuser operations include subsequent cooking steps that do produce some Maillard products, that skilled distillation cuts and permitted additives can produce acceptable finished products, and that the high volume and accessible price points of diffuser tequila serve an important market segment.
