London Dry Gin

London Gin is a legally defined category under EU Regulation 2019/787 (Article 2 and Annex II, Category 22). The regulation defines London Gin as: (1) produced exclusively by redistilling ethyl alcohol of agricultural origin (minimum 96% ABV) in the presence of all the natural plant materials used — the flavouring must come entirely from redistillation, not from added extracts; (2) the resultant distillate must be at least 70% ABV (preserving this high-strength distillate character); (3) no flavourings, colouring, or other additives may be added post-distillation, except water (to reduce to bottling strength) and a small amount of sweetening (maximum 0.1 g/L of sugars per litre); (4) minimum bottling strength 37.5% ABV; (5) juniper must be the predominant flavour. The term "London Dry" is not explicitly a separate legal category from "London Gin" in EU 2019/787 — it is a traditional commercial descriptor meaning London Gin without added sweetening. The Gin Craze — why London Dry emerged
The London Gin Craze of the early 18th century (1720–1751) was a documented public health crisis in which cheap, low-quality gin — produced without regulation in London's backstreet stills — was consumed in extreme quantities by the urban poor. Estimates from historical records suggest Londoners consumed approximately 10 million gallons of gin per year at the height of the Craze, with some areas having one gin shop per four houses. William Hogarth's 1751 engravings "Gin Lane" and "Beer Street" are the most famous contemporary visual documents of the social impact.
The Gin Act 1751 was the effective legislation that ended the Craze by restricting gin sales to licensed premises and establishing minimum quality standards. Over subsequent decades, a higher-quality tradition of gin production emerged in large, regulated London distilleries — producing the cleaner, juniper-forward spirit that became "London Dry" gin by the 19th century, after continuous distillation (Coffey still, 1831) allowed production of high-strength neutral spirit as the base for redistillation with botanicals.
How London Gin is made — distillation with botanicals
London Gin production involves soaking botanicals (typically for 12–48 hours) in neutral grain spirit within a pot still, then heating the still to redistil the spirit. As the vapour rises through the botanical charge (in the pot) or through a botanical basket in the still's neck (cold-vapour infusion), the steam carries volatile aromatic compounds — α-pinene and linalool from juniper, linalool and limonene from coriander seed, terpene alcohols from angelica root — into the condenser. The "heart" of the distillation run (the middle cut, after the early volatile "heads" and before the heavier "tails") becomes the London Gin distillate. Different producers choose different cut points and botanical combinations, producing distinct house styles from the same regulatory framework.

Juniper essential oil chemistry — α-pinene and gin's defining character
Juniper berry essential oil contains approximately 50–80% monoterpene hydrocarbons, dominated by α-pinene and β-pinene, plus monoterpene alcohols (linalool, borneol, terpinen-4-ol) and sesquiterpenes. α-Pinene is the primary compound responsible for the resinous, piney, fresh character that defines gin's baseline aroma — it is also found in many other coniferous plants (pine, fir, spruce) and is responsible for the characteristic smell of pine forests. In gin, α-pinene provides the distinctive fresh-resinous backbone that distinguishes gin from other spirits.
At the concentrations found in gin (~10–30 mg/L α-pinene in the final spirit), α-pinene produces a fresh, piney, slightly medicinal character that is below the "turpentine" threshold that would make it unpleasant. The balance between α-pinene (resinous, piney), linalool (floral, lavender), and the other botanical monoterpenes and esters is what produces the characteristic gin "nose" — and why different botanical combinations produce distinctly different gins within the same London Dry framework.
