Codex Definition

Sake (Japanese nihonshu; legally seishu) is a Japanese alcoholic beverage brewed from rice, water, koji and yeast through a process unique among the world's drinks: multiple parallel fermentation, in which the koji mould (Aspergillus oryzae) saccharifies rice starch into sugar at the same time, in the same tank, as the yeast ferments that sugar into alcohol. This simultaneous conversion lets sake reach an unusually high alcohol level for an undistilled brew (commonly ~15–20% before dilution). The defining quality variable is seimaibuai, the rice-polishing ratio — the percentage of the grain remaining after the outer layers (proteins, fats, minerals that cause off-flavours) are milled away to expose the starchy heart (shinpaku). Japan's premium classification, tokutei meishōshu (special designation sake), is defined by seimaibuai and by whether a little distilled brewer's alcohol is added: Junmai (pure rice, none added), Honjōzō (a little added, ≤70%), Ginjō (≤60%), and Daiginjō (≤50%), each in junmai and alcohol-added forms. The yeast starter (shubo/moto) is built by the fast modern sokujō method or the traditional kimoto and yamahai methods. Sake also varies by rice variety (shuzō kōtekimai such as Yamada Nishiki), water, pasteurisation (namazake is unpasteurised), filtration (nigori is cloudy) and ageing (koshu).

Koji & Multiple Parallel Fermentation

The single fact that sets sake apart from every other alcoholic drink on earth is how the starch becomes alcohol. Rice, like barley, is starch — it must be broken into fermentable sugar before yeast can act. Beer solves this in two separate steps: first malting and mashing convert starch to sugar, then yeast ferments the sugar. Sake does both at the same time, in the same vessel.

The Koji Mould

Koji is steamed rice on which the mould Aspergillus oryzae (kōji-kin) has been cultivated. As it grows, the mould secretes powerful enzymes — chiefly amylases — that break rice starch into glucose. Koji is the Japanese national fungus (kokkin), also central to miso, soy sauce and shōchū. Making it (seigiku) is the most skilled, hands-on stage of brewing: the steamed rice is inoculated with kōji spores (tane-kōji) and tended in a hot, humid kōji-muro room over ~2 days, the brewer adjusting temperature by hand.

Multiple Parallel Fermentation (並行複発酵)

In the main fermentation tank (the moromi), koji enzymes and yeast work side by side: the amylases continuously release glucose from the rice, and the yeast continuously ferments that glucose into alcohol. Because sugar never accumulates to a level that would inhibit the yeast (high sugar is osmotically stressful), the yeast keeps working to a very high alcohol concentration — sake routinely reaches 18–20%+ ABV in the tank, the highest of any naturally fermented (undistilled) beverage in the world, before it is typically diluted to ~15–16% for bottling.

Why "rice wine" is a misnomer
Sake is often called "rice wine," but technically it is closer to a brewed beverage like beer — it is made from a grain whose starch must be enzymatically converted, not from a fruit with ready sugar. Yet it is unlike beer too, because of the simultaneous conversion. Sake is genuinely its own thing: neither wine nor beer, but a third fermentation paradigm. Calling it nihonshu ("Japanese alcohol") sidesteps the inaccurate "wine."

Seimaibuai — the Rice-Polishing Ratio

If multiple parallel fermentation is what makes sake unique, seimaibuai (精米歩合) is what most determines its style and grade. It is the percentage of the rice grain that remains after milling.

Why Polish the Rice?

A rice grain is not uniform. Its starchy centre — the shinpaku (心白, "white heart") — is almost pure starch, ideal for clean fermentation. The outer layers contain proteins, fats, and minerals that, while nutritious, produce rough, heavy, off-flavours in sake. Milling (seimai) abrades away those outer layers to expose the clean heart. The more you polish away, the cleaner, more delicate and more fragrant the sake — and the more rice (and cost) is wasted.

The counterintuitive number
Seimaibuai is stated as the percentage remaining, not removed — so a lower number means more polishing and (generally) a more premium sake. A seimaibuai of 50% means half the grain has been milled away; a seimaibuai of 35% means 65% is gone. This is the reverse of how most people first read the number. Polishing rice this finely, slowly, without cracking the grain or overheating it, can take days per batch and is a major cost driver in premium sake.

Tokutei Meishōshu — the Premium Classification

Roughly two-thirds of sake by volume is ordinary table sake (futsūshu), outside the premium system. The premium tier, tokutei meishōshu (特定名称酒, "special designation sake"), is defined by two variables: the seimaibuai, and whether a small amount of distilled brewer's alcohol (jōzō alcohol) is added.

The Brewer's-Alcohol Distinction

Junmai (純米, "pure rice") sake is made from only rice, water, koji and yeast — nothing added. Non-junmai premium grades have a small, legally limited amount of distilled alcohol added late in fermentation. Crucially, this is not cheap fortification or padding: in moderation it lightens the body and, importantly, extracts and carries aromatic compounds, which is why many of the most fragrant competition daiginjōs are alcohol-added rather than junmai. It is a stylistic tool, not a shortcut.

The two axes to read on any premium label
Every premium sake name encodes two things at once: (1) junmai or not — is it pure rice, or is a little brewer's alcohol used to lift aroma and lighten body? and (2) how polished — ginjō (≤60%) and daiginjō (≤50%) signal progressively more milling and usually more fragrance. "Junmai Daiginjō" therefore means pure-rice AND highly polished — the most prestigious common combination. Neither axis is strictly "better"; junmai and alcohol-added, polished and less-polished are stylistic choices.

The Yeast Starter (Shubo), Rice & Water

Shubo / Moto — the Yeast Starter

Before the main fermentation, the brewer builds a concentrated, healthy yeast culture called the shubo (酒母, "mother of sake") or moto. Its job is to grow a large yeast population while using acidity to keep spoilage organisms out. There are two philosophies, and the difference is mainly how the protective lactic acid arrives.

Sake Rice (Shuzō Kōtekimai)

Premium sake is usually made from specialised sake rice (shuzō kōtekimai, "rice suitable for brewing") — different from table rice. These varieties have large grains, a prominent starchy shinpaku core, and lower protein. The most prized is Yamada Nishiki ("the king of sake rice"), alongside Gohyakumangoku, Omachi (an old, undiluted heirloom variety with a cult following) and Miyama Nishiki.

Water (Sui)

Sake is ~80% water, so its mineral content matters enormously. The famous Nada region (Hyōgo, near Kobe) is built on miyamizu — a hard, mineral-rich water that yields robust, dry "masculine" (otoko-zake) sake; the Fushimi region (Kyoto) has softer water giving gentler, rounder "feminine" (onna-zake) sake. Iron and manganese are particularly unwanted, as they damage colour and flavour.
