Awamori (泡盛) is a spirit produced exclusively in Okinawa Prefecture, made from long-grain indica rice (外米 — imported Thai-style rice), fermented using black koji (Aspergillus luchuensis) only, and distilled by single distillation, with an alcoholic strength not exceeding 45%. Ryukyu Awamori (琉球泡盛) is a protected geographical indication under WTO TRIPS and NTA administrative designation, restricted to production in Okinawa Prefecture.

What is Awamori?

Awamori is the distilled rice spirit of Okinawa — Japan's southernmost island chain. It predates mainland Japanese shochu by a significant margin. While Kyushu shochu has a documented history from the 15th–16th centuries, Okinawa's distilled spirit tradition may be two or three centuries older, arriving via trade routes from the Siamese (Thai) kingdom through the Ryukyu Kingdom when Okinawa was an independent maritime trading state.

Three things make Awamori immediately distinct from all other Japanese spirits. First: it is made only from long-grain indica rice — the type grown in Thailand and Southeast Asia, not the short-grain japonica rice used in sake and kome shochu. Second: it uses exclusively black koji mould (Aspergillus luchuensis) — the ancient form of koji that produces a rich, full, complex fermentation. Third: it ages in a way that makes it unique in the world — a practice called shitsugi, using the solera-like blending of old and new Awamori over many years in clay pots.

Kusu — aged Awamori
Awamori aged for three years or more is called Kusu (古酒 — "old liquor"). The longer it ages, the deeper and more complex it becomes. Some distilleries on Okinawa maintain ceramic jar stocks (kame) of Awamori aged 10, 20, and in rare cases 100 years. During WWII, the Battle of Okinawa (1945) destroyed most of the island's aged stocks — a cultural loss whose recovery is still ongoing.

What does it taste like?

Young Awamori (30% ABV typical) is clean, slightly earthy, with a faint sweetness from the indica rice and a characteristic depth from the black koji fermentation — richer and more complex than a young kome shochu. It does not have the grassiness of imo shochu or the lightness of mugi shochu. It tastes like itself.

Kusu — aged Awamori — transforms with time in ceramic. The spirit rounds out, develops dried fruit notes, hints of honey and dried flower, and a remarkable integration of alcohol into flavour. Ten-year Kusu is a serious contemplative spirit. Served neat, slightly chilled, or with water, it rewards attention.

Traditionally, Awamori is served mizuwari (with water) or on the rocks. It is the ubiquitous spirit of Okinawan food culture, pairing with the strong flavours of Okinawan cuisine — pork, bitter melon, champuru stir-fries.

History and the Ryukyu Kingdom

Okinawa was not historically part of Japan. It was the Ryukyu Kingdom — an independent maritime state from approximately 1429 to 1879, when it was annexed by the Meiji government of Japan. The Ryukyu Kingdom occupied a central position in East Asian maritime trade, acting as a trading hub between China, Japan, Korea, and Southeast Asia — particularly the kingdoms of Siam (Thailand), Malacca, and Java.

Distillation technology entered the Ryukyu Kingdom through these trade routes, most likely in the 14th–15th centuries from Siam and the Siamese rice spirit tradition. The earliest documented reference to Awamori in Ryukyuan records dates to 1534 (the account of a Chinese envoy who described being served "rice wine" that had been distilled — distinctly different from the fermented sake he was familiar with). By the time the Ryukyu Kingdom was a mature trading state in the 16th century, Awamori was a significant export product to the Japanese mainland and China.

The WWII Battle of Okinawa (April–June 1945) was the most destructive land battle in the Pacific War. It destroyed approximately 90% of Okinawa's buildings, its population, and most of its aged Awamori stocks. The oldest surviving pre-war Awamori is held by a small number of distilleries that managed to evacuate or hide ceramic jar stocks. The reconstruction of Okinawa's Awamori tradition from near-zero after 1945 is one of the remarkable recovery stories in global spirits history.

Production — What makes Awamori different

The rice: indica, not japonica

All Awamori uses long-grain indica rice — primarily imported from Thailand (Oryza sativa indica variety), the same grain used in Thai and Southeast Asian cooking. This is a legal requirement, not a choice. Japonica (short-grain) rice is not permitted. The indica grain has a different starch structure (higher amylose, lower amylopectin content) and a different flavour profile when fermented with black koji, producing the characteristic earthy depth of Awamori.

The koji: black only

Awamori uses exclusively Aspergillus luchuensis — black koji. No white koji, no yellow koji. Black koji produces abundant citric acid (providing acid protection for the moromi), a rich enzyme profile, and distinctly complex flavour precursors compared to the cleaner white koji used in modern mainland shochu. The pairing of black koji with indica rice is the defining chemistry of Awamori.

All-koji fermentation (全麹仕込み / zen-koji shikomi)

The most distinctive production feature of Awamori: 100% of the rice is converted to koji, then fermented. In honkaku shochu, typically only a portion of the base ingredient is koji-treated; the rest is added as raw or cooked ingredient in the second mash. In Awamori, every grain of rice has been processed through the koji-making step before fermentation begins. This all-koji process (zen-koji shikomi) produces a higher enzyme load, more complete starch conversion, and a distinctly richer flavour base than the two-stage honkaku process.

Ageing: Kusu and the shitsugi system

Young Awamori is aged in ceramic pots (甕 / kame) or stainless tanks. Awamori aged 3+ years earns the Kusu designation. The traditional shitsugi system is a form of solera ageing: as aged Awamori is drawn from a ceramic pot, an equal volume of younger Awamori is added. Over time, the blended spirit takes on the character of the oldest stock in the vessel. Some pots in active use have had continuous additions for 50+ years — creating a living history of the distillery in liquid form.

Regulatory Framework and GI

Ryukyu Awamori (琉球泡盛) is a protected geographical indication under the WTO TRIPS Agreement Annex — one of three Japanese shochu/awamori GIs listed alongside Iki Shochu and Kuma Shochu. This protection requires that products labelled "Ryukyu Awamori" must:

  • Be produced entirely in Okinawa Prefecture
  • Use only long-grain indica rice as the base ingredient
  • Use only Aspergillus luchuensis (black koji) in fermentation
  • Be distilled by single distillation (単式蒸留)
  • Not exceed 45% ABV at the still
  • Undergo all-koji fermentation (zen-koji shikomi)

The NTA's administrative GI designation for Ryukyu Awamori codifies these requirements at the domestic level, with the WTO TRIPS Annex providing international protection for member countries.

Black Koji Chemistry

Aspergillus luchuensis (synonyms: A. awamori, A. luchuensis var. kawachii for white koji) produces a distinctive biochemical profile compared to the white koji used in most modern mainland shochu:

  • Citric acid production: both black and white koji produce substantial citric acid (20–40 mg/g), providing essential pH reduction for spoilage prevention. Black koji's citric acid profile creates a slightly different acid-driven fermentation environment compared to white koji.
  • Melanin pigments: the dark colour of black koji spores comes from melanin polymerisation — the same pigment class as human skin melanin. These do not transfer to the final distillate but affect the visual character of the koji itself during production.
  • Enzyme profile: black koji produces higher levels of certain acid-stable glucoamylases — enzymes that remain active at the lower pH of the moromi — contributing to more complete starch saccharification under acidic fermentation conditions.
  • Flavour precursors: the combination of black koji enzymatic activity with indica rice produces higher concentrations of certain fusel alcohols and esters compared to white koji + japonica rice fermentations, contributing to Awamori's characteristic depth and complexity.

Kusu Ageing Chemistry

Ceramic kame (earthenware pots) are the traditional vessel for Kusu ageing. Unlike oak barrels, ceramic is chemically inert and oxygen-permeable only through microscopic pores in the fired clay. This creates a slow, controlled oxidation environment significantly different from barrel ageing:

  • No wood-extract compounds (vanillin, lignin derivatives, tannins) enter the spirit — Kusu ageing is purely oxidative and esterification-driven
  • Esterification of acids with alcohols proceeds slowly over years, building complex ester profiles without wood character
  • Oxidation of aldehydes to acids continues throughout maturation
  • The result is a flavour evolution that is entirely internal to the spirit — no external wood contribution

NRIB research on Kusu ageing has documented that ester concentrations increase significantly over 3–10 years of ceramic ageing, while fusel alcohol concentrations remain relatively stable. This is consistent with esterification reactions consuming fusel-derived acids faster than new fusel alcohols form, progressively integrating harsh elements into complex flavour compounds.
