Welsh Whisky
A tradition that disappeared for a century. A distillery that brought it back. A Faraday still found nowhere else in the world.
Welsh Whisky is a whisky that has been produced in Wales from a mash of malted barley and/or other cereals, distilled in Wales, and matured in oak casks in Wales for a minimum period. Welsh Whisky holds Geographical Indication (GI) protection under UK law, maintained post-Brexit under the UK's domestic GI framework administered by the Department for Environment, Food and Rural Affairs (DEFRA) and the UK Intellectual Property Office. The primary and essentially sole commercially significant producer of Welsh Whisky is Penderyn Distillery, established in 2004 in Penderyn, Rhondda Cynon Taf, in the Brecon Beacons National Park. Penderyn uses a bespoke single-pot still design — known as the Faraday still — developed specifically for the distillery and found in no other whisky distillery in the world. Welsh Whisky must be distilled and matured in Wales.
A tradition recovered
Wales had an active whisky distilling tradition in the 18th and 19th centuries — documented in historical records including a licensed distillery in Frongoch, Bala, in the 1880s. This tradition effectively disappeared by the late 19th century, partly through the influence of the Welsh temperance movement (one of the strongest in Britain) and partly through the commercial dominance of Scotch whisky. For over a century, no whisky was commercially distilled in Wales.
Penderyn Distillery opened on St David's Day (1 March) 2004 — the first Welsh whisky distillery in approximately 100 years. It was established by a group of Welsh businesspeople who wanted to create a distinctly Welsh spirit using Welsh water (from the Brecon Beacons), Welsh barley where possible, and a production method unlike any other distillery in the world.
The Faraday still — what makes it unique
The Faraday still was designed specifically for Penderyn by Dr. David Faraday of the University of Surrey. It is a single-pot still with a continuous rectification column attached — a hybrid design that produces a spirit of approximately 92% ABV in a single distillation pass, unlike the double or triple distillation used by most pot-still whisky producers. The high distillation strength means the spirit is lighter and more delicate than most single malts off a conventional pot still, with less heavy congener content.
The new make spirit is then reduced to cask strength and matured, typically in ex-Bourbon barrels with a range of cask finishes — Madeira, port, peated cask, and various wine casks. The combination of the lighter new make character from the Faraday still and the varied cask programme produces expressions significantly different from both Scotch single malt and Irish pot still whiskey.
GI protection — post-Brexit status
Welsh Whisky held GI protection under EU law before Brexit. Following the UK's departure from the EU in January 2020, the UK established its own domestic GI scheme under the UK Geographical Indications (Amendment) (EU Exit) Regulations 2019 and subsequent legislation. Welsh Whisky was transferred to and protected under the UK GI scheme. UK-protected GIs are administered by DEFRA and the UK Intellectual Property Office.
Post-Brexit, Welsh Whisky GI protection applies within the UK. International GI protection in EU member states and other markets is subject to bilateral trade agreements between the UK and the relevant jurisdiction — this is an evolving area of trade law as of April 2026.

The Faraday still — engineering and chemistry
The Faraday still consists of a copper pot still of conventional design connected to a tall rectification column approximately 7 metres in height. The column contains copper plates that promote vapour-liquid equilibrium — lighter, more volatile compounds rise higher in the column, while heavier, less volatile compounds are returned as reflux to the pot. A single pass through this system achieves approximately 92% ABV — a distillation strength that would require three passes in a conventional pot still.
At 92% ABV, the spirit retains significantly fewer heavy congeners than a conventional double-distilled pot still spirit (typically 65–70% ABV at the spirit receiver). The result is new make spirit that is lighter, fruitier, and more delicate — suited to maturation in heavily characterful casks (Madeira, port, peated casks) where the cask character becomes a significant part of the final expression's profile rather than a complement to a heavy base spirit.
Dr. David Faraday's design was informed by the Coffey still principle of continuous rectification but applied in a single-batch format — a hybrid that had no direct precedent in Scotch or Irish whisky production. The design is patented and is not licensed to any other distillery.
