Sauternes and neighbouring Barsac produce sweet Bordeaux wine made possible by deliberately welcoming a fungal infection rather than treating it as a defect. The mould Botrytis cinerea, under specific alternating humid and dry conditions, perforates and dehydrates grape skins in a beneficial form known as noble rot — concentrating sugars and contributing distinctive honeyed, apricot-like aromatic compounds — as opposed to the destructive grey rot the same fungus causes under sustained wet conditions. The zone's characteristic autumn morning fog, created by the confluence of the cold Ciron river and the warmer Garonne, followed by warm dry afternoons, provides the specific alternating conditions noble rot requires to develop reliably rather than turning destructive. Harvesting is extraordinarily labour-intensive, requiring workers to pass through the vineyard multiple times over several weeks (tries), picking only individual berries that have reached the correct stage of botrytization on each pass, since grapes on the same bunch rot at different rates. This results in very low yields — among the lowest of any wine region — and correspondingly high prices. Château d'Yquem holds a unique position in the 1855 classification of Sauternes and Barsac, designated the sole Premier Cru Supérieur, a tier placed above Premier Cru and held by no other property.
Noble Rot — the Chemistry of a Welcomed Infection
Almost everywhere else in the wine world, a fungal infection on the grapes is unambiguously bad news. Sauternes exists because, under one very specific set of conditions, it is not.
One Fungus, Two Outcomes
The mould Botrytis cinerea is capable of producing two completely different outcomes on the same grape variety, depending entirely on the weather conditions it encounters. Under sustained wet, humid conditions, it causes grey rot — a straightforwardly destructive infection that ruins the fruit, splits skins, and invites secondary spoilage organisms, the outcome every other wine region fears and actively works to prevent. Under alternating humid mornings and dry, warm afternoons, the same fungus instead produces noble rot: it perforates the grape skin with microscopic holes without fully rupturing it, allowing water to evaporate from the berry (concentrating sugar and acidity) while the fungus itself metabolises some of the grape's acid and contributes its own distinctive compounds.
The Ciron/Garonne Microclimate
Noble rot doesn't occur reliably just anywhere Semillon is grown — it needs a very specific, geographically localised weather pattern, and Sauternes sits at almost exactly the right spot to get it most years.
Two Rivers, One Fog Bank
Sauternes and Barsac sit near the confluence of the small, cold Ciron river and the much larger, warmer Garonne. In autumn, the temperature difference between the two bodies of water generates a reliable morning fog that settles over the vineyards — providing exactly the humid conditions botrytis needs to establish itself on the grape skins. Crucially, this fog typically burns off by afternoon as the sun warms the area, drying the grapes and preventing the sustained dampness that would otherwise tip the infection toward destructive grey rot.
Multiple-Pass Hand Harvesting
Even when the weather cooperates, actually harvesting botrytized grapes is one of the most labour-intensive processes in the wine world, precisely because the fungus doesn't work uniformly.
Why One Harvest Pass Isn't Enough
Botrytis develops unevenly — even within a single grape bunch, some berries reach ideal noble-rot concentration before others, while some may never develop it properly at all. Serious Sauternes producers respond by sending pickers through the vineyard on multiple separate passes (tries) over several weeks, hand-selecting only the berries — sometimes individual berries rather than whole bunches — that have reached the right stage of botrytization on each specific pass, then returning again days or weeks later for the next wave.

Château d'Yquem — a Classification Tier of One
The 1855 Bordeaux classification, best known for its Médoc red-wine hierarchy, also classified the sweet wines of Sauternes and Barsac — and created one category that has never had a second member.
Premier Cru Supérieur
Within the 1855 Sauternes-Barsac classification, Château d'Yquem alone was designated Premier Cru Supérieur — a tier placed explicitly above the ordinary Premier Cru properties, reflecting a reputation for quality considered to be in a class by itself even among the appellation's best estates. No other Sauternes or Barsac property has ever held this designation; it remains, over 150 years later, a category of exactly one.
