Canonical Definition

The Mosel is one of Germany's 13 Anbaugebiete (specified wine regions), designated under the German Wine Law (Weingesetz), covering approximately 8,800 hectares of vineyards along the Mosel River and its tributaries (Saar and Ruwer) in the Rhineland-Palatinate state. The region produces primarily white wine — almost exclusively from Riesling, which accounts for approximately 60% of plantings — from some of the steepest commercial vineyards in the world (slopes up to 70° incline, mechanically impassable). The most significant wines are classified under the Qualitätswein mit Prädikat (QmP, now called Prädikatswein) system, which ranks wines by the natural sugar content of the grapes at harvest: Kabinett, Spätlese, Auslese, Beerenauslese, Trockenbeerenauslese, and Eiswein. In addition, the VDP (Verband Deutscher Prädikatsweingüter) runs its own voluntary classification system identifying Große Lage (Grand Cru equivalent) vineyards, whose dry wines are labelled Großes Gewächs (GG). The Mosel's distinctive character — piercing acidity, low alcohol (7–9% for Kabinett, even in ripe years), and complex TDN (petrol/mineral) ageing notes — derives from Riesling grown on vertiginous slate slopes above the river.

What makes Mosel Riesling unlike any other wine

Mosel Riesling at its finest produces wines that are simultaneously sweet and refreshing — a combination that seems contradictory but is achieved through the balance of residual sugar with the region's extremely high natural acidity. A Mosel Spätlese at 8% ABV with 50 grams per litre of residual sugar does not taste sweet like a dessert — it tastes like biting into a ripe peach, then getting a spray of lemon juice immediately after. The sugar and the acid are in dynamic equilibrium, each amplifying the perception of the other without either dominating.

This balance is the product of Riesling's genetic predisposition to retain acid even at full ripeness, combined with the Mosel's cool continental climate where grapes ripen slowly over a long season, building fruit character and sugar while cold nights preserve malic and tartaric acid. The slate soils — grey Devonian slate that covers the best sites — absorb daytime heat and radiate it at night, extending the growing season by several critical days or weeks each autumn.

Low alcohol is not a weakness — it is a feature. At 7.5% ABV, the alcohol does not mask aromas or generate heat on the palate. The wine's full aromatic complexity is accessible without the dulling effect that higher alcohol can produce. This is why Mosel Kabinett is considered one of the world's best lunchtime and food-pairing wines — its lightness and acidity refresh rather than overwhelm.

The slate — why Devonian grey slate matters

The Mosel's finest vineyards — the Wehlener Sonnenuhr, Bernkasteler Doctor, Graacher Himmelreich, Ürziger Würzgarten — sit on Devonian grey slate (Devonischer Grauschiefer), a rock formation approximately 400 million years old. This slate is the geological foundation of the Mosel's character. It fractures easily into small pieces that form a free-draining, heat-retaining substrate — porous enough to prevent waterlogging (critical in the wet Mosel climate) but thermally massive enough to store solar heat and release it slowly.

The red slate (Roter Schiefer) found in some upper Mosel sites — particularly in the Saar — produces wines with a different mineral character, described as more iron-rich and angular. The differences between grey and red slate soils produce measurable mineral composition differences in the vine's uptake, though the direct transfer of these minerals to wine flavour remains scientifically contested (as documented in the Water & Terroir entry).

Oechsle — the German must-weight measurement
The Oechsle scale measures grape must density (and thus sugar content) in degrees Oechsle (°Oe). It was developed by physicist Ferdinand Oechsle in the early 19th century. Formula: °Oe = (must density in g/L − 1000). A must density of 1.085 g/L = 85°Oe. The scale corresponds approximately to 2.5–3 grams of sugar per litre per degree Oechsle — so 85°Oe ≈ 212–255 g/L potential sugar in the must. The Prädikat thresholds vary by variety and region, with Riesling having slightly lower minimums than other varieties in recognition of its naturally higher acidity.

The VDP classification — Große Lage and Grosses Gewächs

The VDP (Verband Deutscher Prädikatsweingüter) is a voluntary association of approximately 200 of Germany's top wine estates. Its own classification system, which runs parallel to the legal Prädikat system, uses a Burgundy-style vineyard hierarchy:

Große Lage (GL) — the VDP's Grand Cru equivalent. The highest classification of individual vineyard sites, determined by VDP committee review of historical reputation, soil quality, and production results. Dry wines from Große Lage sites are labelled Grosses Gewächs (GG). Sweet wines from the same sites use their Prädikat designation. The GG designation applies only to dry wine (Trocken).

Erste Lage (EL) — the VDP's Premier Cru equivalent. The next quality tier below Große Lage. Wines labelled Erstes Gewächs (EG) in some regions.

Ortswein — village wine. From the named town or village.

Gutswein — estate wine. The base classification — from vineyards within the estate's holdings.

The following are among the most internationally recognised Mosel Große Lage sites:
  • Wehlener Sonnenuhr (Wehlen) — grey slate, south-facing. J.J. Prüm is the reference producer.
  • Bernkasteler Doctor (Bernkastel) — one of Germany's most expensive vineyard parcels. Three owners (Wegeler, Lauerburg, Deinhard). Grey slate.
  • Graacher Himmelreich (Graach) — grey slate. Multiple VDP producers.
  • Ürziger Würzgarten (Ürzig) — red/volcanic slate. Distinctive spicy, mineral character.
  • Scharzhofberger (Saar tributary) — the Saar's most celebrated site. Egon Müller's Scharzhofberger TBA is among the world's most valuable white wines at auction.
  • Erdener Prälat (Erden) — very steep red slate, protected by cliff above. Dr. Loosen is primary producer.

Botrytis chemistry — why noble rot produces extraordinary sweetness

Botrytis cinerea (noble rot) is a fungal infection (Botrytis cinerea Pers., also known as grey mould) that, under specific humid, fog-followed-by-sunshine conditions (morning mist from the Mosel river, afternoon sun), infects ripe Riesling berries and causes a specific pattern of concentration — rather than the rotting that occurs in damper conditions.

The botrytis fungal mycelium penetrates the grape skin and the resulting enzymatic and metabolic activity produces several documented effects: (1) Water evaporates through the permeable skin — concentrating all remaining compounds by 2–5× in the berry; (2) Glycerol is produced by botrytis metabolism — adding viscosity and a softening sweetness different from simple sugar sweetness; (3) Gluconic acid is produced — a non-metabolisable acid that contributes a distinctive, clean, slightly sharp note; (4) Botrytis-specific aroma compounds including sotolon (caramel, fenugreek notes) and γ-valerolactone are produced; (5) Natural grape acidity is concentrated alongside the sugars, maintaining the critical acid balance in BA and TBA wines.

The combination of concentrated sugar, glycerol-induced viscosity, botrytis-specific aromatics, and preserved acidity produces wines with a complexity that simple late-harvest concentration without botrytis cannot achieve. This is why TBA from a botrytis-rich year has a character that exceeds even the most concentrated non-botrytised sweet wine.

The 2021 German wine law amendment

The German Wine Law (Weingesetz) was significantly amended in 2021, introducing a new three-tier geographic classification: Gutswein, Ortswein, Lagenwein — aligning the statutory law more closely with the VDP's voluntary classification. The Lagenwein tier (equivalent to a premier or grand cru designation) requires: single vineyard origin, minimum site reputation, and specific production standards. This reform was the most significant revision to German wine law since 1971. The Prädikat system remains intact under the 2021 reform.
