Provence wine is wine produced in the Provence wine region of southeastern France, primarily in the Var, Bouches-du-Rhône, and Alpes-Maritimes departments, under multiple Appellation d'Origine Protégée (AOP) frameworks administered by INAO. The principal AOP is Côtes de Provence, covering approximately 21,000 hectares and accounting for approximately 80% of Provence wine production. Other Provence AOPs are Coteaux d'Aix-en-Provence, Les Baux de Provence, Coteaux Varois en Provence, Bandol, Cassis, Palette, and Bellet. Provence is the world's leading rosé wine region by both volume and international commercial recognition, with rosé accounting for approximately 90% of all Provence AOP wine production. The dominant rosé style is pale (rosé de Provence) — produced by very short skin maceration of red grape varieties to extract minimal colour — rather than the darker saignée (bleeding) method used in some other regions. How Provence became the world's rosé capital

Provence has produced rosé wine for centuries — it is one of the oldest wine-producing regions in France, with viticulture documented from the Greek colonisation of Massalia (Marseille) from approximately 600 BCE. But the rise to global dominance is a recent phenomenon. In 2001, the Côtes de Provence AOP represented approximately 50% rosé production by volume. By 2023, rosé accounted for over 90% of Provence AOP production.

This transformation was driven by two factors operating simultaneously. First, global demand for pale, dry rosé wine increased dramatically from approximately 2005 onwards — driven by lifestyle marketing, restaurant adoption, and the success of a small number of premium Provence rosé brands (particularly Whispering Angel, first released 2006 by Caves d'Esclans). Second, the Côtes de Provence AOP allowed producers to respond to this demand by progressively increasing their rosé share — the AOP rules do not mandate a minimum percentage of any wine style, so producers simply planted and made more rosé.

The pale colour — the signature of Provence rosé — is the result of very brief skin contact during pressing. Red grape varieties (Grenache, Cinsault, Syrah, Mourvèdre, Tibouren) are pressed gently, with the juice spending only hours or even minutes in contact with the skins. The resulting wine is pale pink to nearly copper in colour, dry, relatively low in alcohol by Provence standards (typically 12.5–13.5%), and high in fresh red fruit aromatics.

Bandol — the serious red beneath the rosé story

Bandol is Provence's most prestigious AOP — and one of France's finest red wine appellations. Located along the coastal limestone hillsides between Toulon and Cassis, Bandol requires a minimum of 50% Mourvèdre in its red wines, with a minimum ageing of 18 months in oak. Mourvèdre — a thick-skinned, late-ripening, heat-dependent variety — requires the specific warm, sheltered amphitheatre microclimate of Bandol's coast-facing terraces to ripen fully. The resulting wines are deeply coloured, powerfully tannic, with notes of iron, meat, garrigue, and dark fruit — among the most age-worthy red wines of the south of France.

Bandol rosé is also produced — and is among the most distinctive rosés in France, with significantly more depth, weight, and complexity than the pale Côtes de Provence style, reflecting the higher Mourvèdre content permitted in Bandol rosé.

The Provence rosé style — pale colour and its commercial significance

Two rosé methods — and why pale won
There are two primary methods for producing rosé wine. The direct press (or short maceration) method used for Provence pale rosé: red grapes are pressed immediately or after very brief (0–12 hours) skin contact. The small amount of skin contact extracts trace quantities of anthocyanin pigments, producing pale pink to copper colour. The saignée (bleeding) method: red wine is made, and a portion of the juice is "bled off" early in fermentation (typically 12–24 hours). This produces a darker, more intense rosé as a byproduct of red wine concentration — the remaining red wine becomes more concentrated as the volume decreases. Provence pale rosé is made by direct press. The pale colour became a commercial asset from approximately 2010 — signalling a premium, dry, sophisticated style to export markets — driving further investment in pale rosé production.

The chemistry of rosé colour — anthocyanins and brief maceration

The colour of rosé wine is determined by the concentration and chemical form of anthocyanin pigments extracted from grape skins during maceration. Anthocyanins — the same pigments responsible for red wine colour and the colour of red fruits and flowers — are water-soluble and extracted rapidly during cold maceration or pressing. Brief skin contact (hours rather than days) extracts only a small fraction of the total anthocyanin content.

The specific pale salmon-to-pink colour of Provence rosé is further influenced by three factors: the grape varieties used (Grenache produces a lighter, more orange-tinged colour than Syrah; Cinsault contributes delicate red-pink; Tibouren, unique to Provence, produces particularly pale extracts); the pressing pressure (gentle pressing extracts less tannin and less colour than aggressive pressing); and the winemaking temperature (cold fermentation, typically 14–16°C, preserves the primary fruit aromatics and reduces the extraction of phenolic compounds that would otherwise darken the colour).

The oxidation state of the wine also affects colour: anthocyanins are pH-sensitive and exist in multiple equilibrium forms — the flavylium cation (red/pink) predominates at low pH, while colourless carbinol pseudobase forms predominate at higher pH. The pH of Provence rosé (typically 3.2–3.5) favours the pink flavylium form. With age, anthocyanins polymerise with tannins to form larger pigment-tannin complexes that slowly precipitate — which is why rosé wine becomes paler and more orange-tinged over time. This chemistry is documented in Boulton (2001) for anthocyanin equilibria in wine.

Mourvèdre — why it thrives in Bandol and almost nowhere else in France

Mourvèdre (Vitis vinifera Monastrell in Spain, Mataro in Australia) is one of the latest-ripening red wine varieties in southern France — it requires sustained heat through to late October to achieve full phenolic maturity. In the Languedoc, it is a blending component but rarely dominant because the heat units are insufficient to consistently ripen it to full maturity. In Bandol's sheltered, sea-facing limestone amphitheatres, the combination of accumulated heat, reflected solar radiation from limestone, and protection from cold northerly winds allows Mourvèdre to ripen fully in most vintages. The wines have documented tannic intensity (high total polyphenol content, particularly condensed tannins/proanthocyanidins from thick skins), iron-like reduction compounds, and a characteristic garrigue, thyme, and black olive profile. Bandol reds typically require 5–10 years minimum ageing to fully integrate the tannins.
