Absinthe is an anise-flavoured spirit distilled with grande wormwood (Artemisia absinthium) among its botanicals, historically associated with 19th-century French bohemian culture and with a widely believed but largely discredited claim that it caused a distinct syndrome called "absinthism" — hallucinations, convulsions and madness — attributed to the compound thujone present in wormwood. This belief, combined with prohibition-era temperance politics and pressure from the wine industry, led to absinthe being banned in Switzerland in 1910, the United States in 1912, France in 1915, and most other producing countries by the 1920s. Modern toxicological and analytical chemistry, notably re-analysis of original 19th and early-20th-century absinthe bottles, found thujone levels far lower than historically assumed and concluded that absinthism was most likely caused by ordinary alcohol toxicity, methanol contamination, and adulteration with toxic copper or antimony compounds used to fake the colour of poorly made cheap absinthe — rather than by thujone itself. Beginning in the 1990s and accelerating through the 2000s, most countries legalised absinthe under regulated maximum thujone limits (typically ~10 mg/kg standard, up to 35 mg/kg for bitters-category products) rather than banning wormwood outright. Absinthe is traditionally produced in two stages: maceration of grande wormwood, green anise and fennel followed by distillation, and for the green verte style, a secondary cold maceration of colouring herbs. When water is added, the spirit turns cloudy through the louche effect, as anise and fennel essential oils precipitate out into microscopic droplets.

The International Ban (1908–1915)

No spirit on the Codex has a more dramatic legal history than absinthe. At its 19th-century peak, absinthe was an enormously popular drink across France and beyond, associated with bohemian Parisian café culture and artists and writers including Van Gogh, Toulouse-Lautrec, Verlaine and Rimbaud — and then, within little more than a decade, it was effectively eliminated from legal commerce across nearly the entire Western world.

The Triggering Event

The most cited triggering incident is the 1905 case of Jean Lanfray, a Swiss farmer who murdered his pregnant wife and two daughters after a day of heavy drinking that included a small amount of absinthe alongside large quantities of wine, brandy and other spirits. Despite absinthe being a minor part of what he consumed, sensationalist press coverage fixated on it as the cause, fuelling a public panic that crystallised existing anti-absinthe sentiment into political action.

The wine industry's role — an inconvenient factor
The temperance and "absinthism" narrative was genuine, but it was also politically convenient: France's wine industry, devastated through the late 19th century by the phylloxera louse epidemic, saw absinthe's soaring popularity as direct competition for a recovering market and actively lobbied for the ban alongside temperance campaigners. This commercial self-interest doesn't invalidate the genuine public-health concerns of the era, but it is a documented part of why the political momentum to ban absinthe specifically — rather than alcohol generally — built as fast as it did.

The Thujone Myth — What the Science Actually Found

The scientific case against absinthe rested almost entirely on thujone, a compound found in wormwood believed to cause a distinct toxic syndrome — "absinthism" — separate from ordinary alcoholism, supposedly producing hallucinations, convulsions, and a specific kind of madness. Modern chemistry has substantially dismantled this claim.

What Modern Analysis Found

A pivotal body of research, notably by toxicologist Dieter Lachenmeier and colleagues, directly analysed surviving pre-ban bottles of original absinthe using modern analytical chemistry. The results were striking: actual thujone concentrations in historical absinthe were far lower than 19th-century critics had assumed or than later popular legend claimed — nowhere near levels that could plausibly explain a distinct neurological syndrome at normal drinking quantities.

How thujone actually works pharmacologically
Thujone is a GABA-receptor antagonist (it can, at sufficiently high doses, interfere with the same inhibitory neurotransmitter system that alcohol itself affects, in the opposite direction), which is pharmacologically plausible as a basis for the original hypothesis — it isn't a baseless idea in principle. The scientific correction isn't that thujone is harmless at any dose; it's that the doses actually present in real absinthe, then and now, were never high enough to be the operative cause of "absinthism," which is far better explained by the cruder, more familiar culprits: strong alcohol, contamination, and outright poisoning from fake colourants.

The Modern Legal Revival & Thujone Limits

Rather than re-litigating the ban country by country from scratch, the modern legal solution that emerged from the 1990s onward was elegant: instead of banning wormwood or absinthe outright, regulators set a maximum permitted thujone level, allowing the spirit to be legally produced and sold as long as it stays under a defined toxicological safety threshold.

Why this regulatory model matters beyond absinthe
The thujone-limit approach is a good case study in how spirits regulation can mature: rather than a blunt, symbolic ban driven by 19th-century panic and incomplete science, the eventual fix was a precise, dose-based toxicological threshold — treating wormwood the way food regulators treat any naturally occurring compound with a genuine but dose-dependent risk profile (similar in spirit to how nutmeg, certain herbs, or even alcohol itself are regulated by concentration rather than outright prohibition). It is a rare example of a spirits category being un-banned through chemistry rather than nostalgia.

Production & the Louche Effect

Quality absinthe is traditionally made in two distinct stages, and the most famous thing about drinking it — the cloudy "louche" — is simple, elegant chemistry rather than any kind of additive trick.

Stage One: Maceration & Distillation

The core botanicals — grande wormwood (Artemisia absinthium), green anise, and fennel, sometimes called the "holy trinity" — are macerated in neutral spirit, then the mixture is distilled. This distillation step is important: it carries over the desirable aromatic essential oils while leaving behind most of wormwood's intensely bitter compounds (notably absinthin), which don't pass through distillation efficiently. The resulting distillate is clear or pale.

Stage Two: Colouring (for Verte)

For the classic green verte style, the clear distillate undergoes a second, gentler cold maceration with additional herbs — typically more wormwood (sometimes petite wormwood, Artemisia pontica), hyssop, melissa (lemon balm), and others, sometimes loosely called the herbes de Provence step. This stage extracts chlorophyll, giving absinthe its natural green colour, along with additional aromatic complexity, without the harsh bitterness a longer hot extraction of wormwood would bring.

The Louche Effect

Absinthe is bottled at high proof (typically 45–74% ABV) with anise and fennel essential oils fully dissolved in the alcohol. When water is added — the traditional preparation, often via a slotted spoon and sugar cube — the alcohol concentration drops, and those essential oils, which are not soluble in lower-proof water-alcohol mixtures, precipitate out as countless microscopic droplets suspended in the liquid. This is the same physical principle (a louche or "ouzo effect") seen in pastis, ouzo, raki and sambuca; it is not a special absinthe phenomenon, but absinthe is the drink most strongly associated with the ritual of watching it happen.

Val-de-Travers — absinthe's birthplace
The Val-de-Travers region of the Swiss canton of Neuchâtel is widely credited as absinthe's birthplace, with production traditions dating to the late 18th century. Fittingly, Switzerland was both the first country to formally ban absinthe (1910) and one of the first to fully legalise it again (2005) — a tidy bookend to the entire ban-and-revival story, and the region remains a centre of serious modern production, including unbranded clear blanche styles that pre-date the coloured verte tradition more commonly associated with France.
