Absinthe is a spirit drink produced from ethyl alcohol of agricultural origin flavoured with the bitter substances of Artemisia absinthium together with Pimpinella anisum and/or Foeniculum vulgare and/or other plant materials, in accordance with traditional practices. The maximum thujone content shall be 35 mg/kg. The minimum alcoholic strength by volume of absinthe is 45%.

What is absinthe?

Absinthe is a high-alcohol botanical spirit — typically 45–74% ABV — distilled with grand wormwood (Artemisia absinthium), green anise, and fennel as its three defining botanicals. It originated in Switzerland and France in the late 18th century, became the defining drink of European bohemian culture in the 19th century, was banned across most of the Western world between 1905 and 1915, remained banned for nearly a century, and was formally rehabilitated and relegalised in the European Union in 2005.

The reason for the ban, the reason the ban was wrong, and the story of how a single drink became the scapegoat for Europe's social anxieties is one of the most extraordinary histories in the world of spirits.

Why was it banned?

The short answer: moral panic, not science.

By the 1890s, absinthe was the most popular spirit in France. It was drunk by artists, writers, workers, and aristocrats alike. Vincent van Gogh drank it. Oscar Wilde drank it. Henri de Toulouse-Lautrec drank it. The hour between five and seven in the evening was called l'heure verte — the green hour — and cafés across Paris served it to everyone.

The wine industry, devastated by the phylloxera epidemic that had destroyed French vineyards in the 1860s–1880s, had recovered by the 1890s and found a powerful competitor in cheap absinthe. Wine producers, temperance campaigners, and conservative social reformers formed an alliance and targeted absinthe specifically — not alcohol generally. They claimed that the wormwood compound thujone caused hallucinations, madness, and violence. The term "absinthism" was coined to describe a supposedly distinct form of alcohol-induced psychosis caused only by absinthe.

The decisive moment came in August 1905 in Commugny, Switzerland, when a farmworker named Jean Lanfray murdered his wife and daughters. Lanfray had drunk two glasses of absinthe that day — but also significant quantities of wine, brandy, and crème de menthe. The press focused entirely on the absinthe. A petition of 82,000 signatures demanded a ban. Switzerland banned absinthe in 1908. France banned it in 1915. The United States banned it in 1912. The ban was total and it lasted nearly 100 years.

What science actually found
Modern toxicological research has established that thujone — the compound blamed for "absinthism" — is present in historically produced absinthe at levels far too low to cause psychoactive effects. The hallucinations and madness attributed to absinthe were caused by alcohol itself, and in some cases by adulterants (copper sulphate, antimony, cheap industrial spirits) used in low-quality industrial absinthe. Pre-ban quality absinthe contained approximately 5–15 mg/kg thujone. You would die of alcohol poisoning before consuming enough absinthe to ingest a toxic dose of thujone.

How was it rehabilitated?

The rehabilitation came gradually and from two directions: chemistry and regulation.

From the 1990s, historians, chemists, and distillers began analysing surviving sealed bottles of pre-ban absinthe using gas chromatography. What they found repeatedly contradicted the prohibition mythology: thujone concentrations in authentic pre-ban absinthe were 5–10 mg/kg — not hundreds of mg/kg as prohibition-era claims had implied. At those concentrations, thujone has no psychoactive effect.

In 1998, Switzerland quietly removed the ban on absinthe production in the Val-de-Travers region — absinthe's birthplace — as part of agricultural reform, though it took years before this was widely acted upon. In 2005, the EU's new Spirits Regulation legalised absinthe across the European Union, setting a maximum thujone limit of 35 mg/kg. In 2007, the United States TTB issued Ruling 2007-5, effectively relegalising absinthe in the US provided thujone content was below 10 mg/kg (the US threshold for a product to be considered "thujone-free" under FDA regulations).

Today, absinthe is produced legally in France, Switzerland, the Czech Republic, Spain, the United States, and dozens of other countries. The revival has been substantial.

The Green Fairy and the Louche

Absinthe is traditionally served with water — cold water poured slowly over a sugar cube resting on a slotted spoon, dripping into the glass. As the water hits the spirit, the clear green liquid turns milky, opalescent, and white. This transformation is called the louche (from the French for "opaque" or "shady").

The louche is not a trick. It is chemistry. The aromatic compounds in absinthe — primarily trans-anethole from anise and fennel — are soluble in high-proof alcohol but not in water. When water is added and the alcohol concentration drops, these compounds come out of solution and form an emulsion of microscopic droplets that scatter light, producing the characteristic milky-green-to-white transformation.

The quality and character of the louche is one of the ways experienced drinkers assess the quality of an absinthe. A genuine distilled absinthe using real botanicals will louche slowly, consistently, and produce a milky-white finish. An artificially flavoured absinthe may not louche at all, or louche inconsistently.

Origin and History

The canonical origin of absinthe is attributed to Dr. Pierre Ordinaire, a French physician living in Couvet in the Val-de-Travers region of Switzerland, who around 1792 developed a wormwood-based medicinal elixir. The recipe was subsequently acquired by Henri-Louis Pernod, who established the first commercial absinthe distillery — Pernod Fils — in Pontarlier, France in 1805. Pontarlier became, and remains, the symbolic capital of French absinthe.

The drink spread rapidly. By 1850 it was the standard aperitif of French military officers serving in Algeria, who brought it back to France. By 1870 French production exceeded 5 million litres per year. By 1900 it exceeded 36 million litres per year. In Paris, consumption was so widespread that the period 1880–1914 is sometimes called the Belle Époque of absinthe.

The Holy Trinity — Core Botanicals

All genuine absinthe is built on three botanicals. The first is mandatory under EU law; the second and third must be present in combination with the first:

Beyond the trinity, traditional recipes include a secondary botanical maceration (called the colorisation step in French absinthe) using additional herbs — most commonly Artemisia pontica (petite wormwood/Roman wormwood), hyssop (Hyssopus officinalis), and melissa (Melissa officinalis). It is this secondary maceration, performed after distillation, that produces the natural green colour of authentic absinthe. The chlorophyll from these herbs dissolves in the high-proof spirit and creates the characteristic verte (green) colour.

Absinthe that has not undergone this natural colouration step is called blanche (white/clear) or La Bleue in Switzerland. Artificially coloured green absinthe — using synthetic colourants rather than natural chlorophyll — is a modern shortcut and does not represent traditional production.

Production Process

Step 1 — Cold maceration

The three core botanicals (grand wormwood, anise, fennel) are macerated in a neutral grain spirit or grape spirit base for 12–24 hours. This extracts the essential oils, bitter compounds, and aromatic molecules into the spirit.

Step 2 — Distillation

The macerated spirit is distilled in a traditional copper pot still. During distillation, the volatile aromatic compounds — primarily the anethole from anise and fennel — pass over with the spirit. The heavy bitter compounds of wormwood (absinthin, artabsin) are largely left behind in the still. This is critical: the bitterness of wormwood is extracted in the maceration but largely removed during distillation, leaving its aromatic contribution without the most harsh bitter elements.

Step 3 — Colouration (verte only)

For verte (green) absinthe, the distilled spirit is placed over a second botanical charge — typically petite wormwood (Artemisia pontica), hyssop, and melissa — at a lower temperature. The chlorophyll and aromatic compounds of these herbs dissolve into the spirit naturally, imparting the green colour and an additional herbal complexity.

Step 4 — Dilution and bottling

The spirit is diluted with water to bottling strength, which by EU regulation must be a minimum of 45% ABV. Most traditional absinthes are bottled between 55–74% ABV. Water is added at the point of serving, not at bottling.

A significant quality distinction exists between distilled absinthe and cold-mixed absinthe. Distilled absinthe is produced by maceration and pot still distillation as described above. Cold-mixed (or "mixed oil") absinthe is produced by simply combining essential oils — predominantly anise oil — with neutral spirit, adding colouring, and bottling. Cold-mixed products lack the complexity of distilled absinthe and typically do not produce a proper louche. EU Regulation 110/2008 does not explicitly prohibit cold-mixed production within Category 26, which remains a criticism of the regulation among traditional producers.

The Traditional Absinthe Ritual

Traditional service requires specific equipment and a specific ratio. The classic method:

  • Pour 30–45 mL absinthe into a wide-mouthed absinthe glass
  • Place a slotted absinthe spoon (cuillère) across the rim
  • Place one sugar cube on the spoon
  • Pour very cold water — ideally from a brouille (dripper) or carafe — slowly over the sugar, dripping into the glass at approximately 3–4 drops per second
  • Water ratio: traditionally 3:1 to 5:1 water to absinthe; the louche begins at approximately 1:1 and deepens as water is added
  • The sugar cube dissolves slowly; sweetness is optional and adjustable

The Czech "burning ritual" — setting fire to a sugar cube soaked in absinthe — is a modern invention with no historical basis in authentic absinthe culture. It was commercialised in the 1990s by Czech producers targeting tourists. Traditional producers and absinthe historians uniformly reject it as both inauthentic and counterproductive — burning the spirit destroys aromatic compounds and overheats the drink.

Thujone — Chemistry and Toxicology

Thujone is a naturally occurring monoterpenoid ketone present in the essential oil of Artemisia absinthium and several other plants. It exists as two isomers: α-thujone (CAS 546-80-5) and β-thujone (CAS 471-15-8), differing in stereochemistry at C4. α-thujone is the more pharmacologically active isomer.

The mechanistic action of thujone at toxicologically relevant concentrations is as a GABA-A receptor antagonist — it competitively inhibits GABA-gated chloride channels, reducing inhibitory neurotransmission. At high concentrations this can cause convulsions. The same mechanism is shared by camphor and related terpenoids.

The thujone concentration question

The 2000–2008 analytical research programme led by chemists including T.A. Breaux, Dirk Lachenmeier, and others examined pre-ban absinthe samples from sealed bottles using GC-MS (gas chromatography–mass spectrometry). Key findings published in the Journal of Agricultural and Food Chemistry and other peer-reviewed sources:

  • Pre-ban Pernod Fils absinthe (1890s–1910s): 5–10 mg/kg total thujone
  • Other authentic pre-ban samples: typically 5–40 mg/kg, with most under 15 mg/kg
  • The EU current limit of 35 mg/kg encompasses historically authentic concentrations
  • Toxic dose of thujone in humans (estimated LD50 extrapolation from animal studies): approximately 40 mg/kg body weight — meaning a 70 kg person would need to ingest approximately 2,800 mg of thujone
  • At 10 mg/kg thujone concentration in absinthe at 68% ABV: fatal alcohol dose would be reached at approximately 100 mL of absinthe — delivering approximately 1 mg of thujone. Psychoactive thujone dose would require impossible alcohol intake

The EFSA (European Food Safety Authority) Scientific Opinion on thujone (2003, updated) concluded: "At the concentrations found in alcoholic beverages, thujone does not represent a safety concern." The prohibition mythology of thujone-induced hallucinations and madness has no support in modern toxicological literature.

The Louche — Physicochemical Mechanism

The louche effect is a spontaneous emulsification — specifically a Ouzo effect (named after the Greek anise spirit, which produces the same phenomenon). The mechanism:

Trans-anethole (the principal aromatic compound of anise and fennel, constituting approximately 80–90% of their essential oils) is hydrophobic and highly soluble in ethanol at concentrations above ~30% ABV. When water is added to a solution of trans-anethole in ethanol and the ethanol concentration drops below approximately 30% v/v, trans-anethole exceeds its water solubility (~80 mg/L at 20°C) and spontaneously forms a microemulsion of droplets typically 100–500 nm in diameter.

These sub-micron droplets scatter visible light through Mie scattering — the same physical process that makes milk appear white, clouds appear white, and the sky appear blue at different wavelengths. The resulting visual appearance ranges from pale green (if natural chlorophyll from the verte colouration is present) to opaque white to pale blue-white depending on the concentration and botanical source of anethole.

The quality of the louche is determined by:

  • Anethole concentration — higher anethole content produces a thicker, more opaque louche
  • Presence of other terpenes — fenchone (from fennel) and other terpenoids participate in the emulsion, affecting droplet size distribution and therefore light scattering characteristics
  • Temperature of water — cold water produces finer droplets and a slower, more dramatic louche; warm water produces a faster, less refined effect
  • Rate of addition — slow water addition produces a slower, more visually distinctive louche

Cold-mixed absinthes using isolated anethole oil can produce a louche, but the droplet size distribution and final appearance differ from distillate-derived anethole, typically producing a coarser, less refined visual effect that experienced drinkers can identify.

Regulatory Framework — Detailed

EU Regulation 110/2008 — Category 26

Regulation (EC) No 110/2008 of the European Parliament and of the Council of 15 January 2008 on the definition, description, presentation, labelling and protection of geographical indications of spirit drinks establishes absinthe as Category 26. Key provisions:

  • Mandatory botanical: Artemisia absinthium
  • Must also contain Pimpinella anisum and/or Foeniculum vulgare
  • Maximum thujone: 35 mg/kg
  • Minimum ABV: 45%
  • Sweetening: permitted (may be sweetened — no maximum declared in Cat. 26 itself)
  • Colouring: Regulation 110/2008 does not restrict artificial colouring in absinthe (a noted limitation)

Swiss SR 817.022.110

Switzerland's Ordinance of the Federal Department of Home Affairs (FDHA) on alcoholic beverages (SR 817.022.110) regulates absinthe under Swiss law. Following the 1998 constitutional reform that removed the absolute ban (which had been enshrined in Article 32b of the Swiss Federal Constitution, inserted by referendum in 1908 and removed by referendum in 2000), the SR 817.022.110 framework applies. Swiss absinthe from the Val-de-Travers carries Protected Geographical Indication status — Absinthe de la région du Val-de-Travers — granted by the Swiss Federal Institute of Intellectual Property.

US TTB Ruling 2007-5

The Alcohol and Tobacco Tax and Trade Bureau (TTB) issued Ruling 2007-5 on 13 March 2007, establishing that absinthe may be approved for importation and sale in the United States if it is "thujone-free" as defined under FDA regulation 21 CFR §172.510 — meaning less than 10 mg/kg thujone. The Absinthism Myth — Scientific Record

The term "absinthism" was coined by Dr. Valentin Magnan, a French psychiatrist at the Sainte-Anne asylum in Paris, who published a series of papers in the 1860s–1890s describing a purported syndrome distinct from ordinary alcoholism — characterised by epileptic convulsions, hallucinations, and accelerated mental deterioration — which he attributed to wormwood extract.

Magnan's experimental methodology was severely flawed by modern standards. His animal experiments involved administering pure wormwood oil in doses equivalent to hundreds of times what absinthe drinkers could have consumed. His clinical observations conflated severe alcoholism (his patients were typically consuming 1–2 litres of high-ABV absinthe per day) with a thujone-specific pathology. No controlled studies were conducted.

The modern scientific consensus, based on toxicological review by Lachenmeier et al. (2006), Strang et al. (1999), and the EFSA thujone opinion (2003), is:

  • Absinthism as a distinct clinical entity does not exist
  • The symptoms attributed to absinthism are consistent with severe alcoholism alone
  • Thujone at concentrations found in authentic absinthe does not produce psychoactive, hallucinogenic, or convulsive effects in humans
  • Some 19th-century industrial absinthes were adulterated with copper sulphate (to enhance green colour), antimony trichloride (to enhance louche), methanol, and cheap industrial alcohol — these adulterants may have contributed to neurological symptoms in heavy consumers of low-quality product

The prohibition of absinthe was a regulatory outcome driven by social, economic, and political forces — not by scientific evidence of a specific harm distinct from that of any other high-alcohol spirit.
