What is Cachaça?

Cachaça (pronounced ka-SHA-sa) is Brazil's national spirit. It is made from freshly squeezed sugarcane juice — not molasses, not syrup, not concentrate — fermented and then distilled. That single difference is what makes it its own category of drink.

To understand why this matters: almost all the world's rum is made from molasses, the thick dark by-product left over after sugar is extracted from cane. Cachaça skips that step entirely. The cane is cut, the juice is squeezed out fresh, and that juice goes straight into fermentation. The result is a spirit that tastes like living cane — grassy, fruity, slightly vegetal — rather than the deep, syrupy character you get from molasses-based spirits.

Brazil produces more cachaça than any other country produces any other cane spirit. Over 4,000 registered distilleries operate across the country. Most of what is produced is consumed domestically — Brazilians drink approximately 800 million litres per year. Very little of this reaches the rest of the world, which means cachaça is both one of the most-consumed spirits on earth and one of the least-known outside its home country.

The word you have probably heard is caipirinha — Brazil's national cocktail, made with cachaça, fresh lime, and sugar. That is how most of the world encounters cachaça for the first time. The spirit itself, however, is far more varied and interesting than a single cocktail suggests.

Is it the same as rum?

No — and Brazil went to considerable legal effort to make that clear. Under Brazilian federal law, cachaça is a distinct category of spirit with its own legal definition, production requirements, and geographic indication. It must be produced in Brazil. It must be made from fresh sugarcane juice. It must contain between 38% and 54% alcohol by volume.

Rum has no such juice requirement. Most rum in the world is made from molasses. The two spirits share a raw material — sugarcane — but they diverge at the first step of production, which means they diverge in everything that follows: flavour, aroma, texture, and character.

The distinction also matters diplomatically. Brazil negotiated with the United States and the European Union to have cachaça recognised as a distinct Brazilian product, not a subcategory of rum. From 2013, the US officially recognises cachaça as a distinctive product of Brazil — the same protected status that bourbon enjoys as a distinctive product of the United States.

The one-sentence distinction
Rum is made from molasses or other sugarcane by-products. Cachaça is made from fresh sugarcane juice only. This difference in raw material produces two fundamentally different spirits.

Where does it come from?

Sugarcane arrived in Brazil with Portuguese colonisers in the early 1500s. By the mid-1500s, Brazil was the world's largest sugar producer, and the by-products of sugar production — including fermented cane juice — were being consumed by enslaved workers and eventually by the wider colonial population.

The Portuguese crown, initially, tried to ban production to protect its own wine trade. It failed. Cachaça was too embedded in Brazilian life. By the late colonial period it was a major trade commodity — used as payment, exchanged for enslaved people along the African slave trade routes, and deeply woven into the cultural fabric of Brazil across all social classes.

Today, the state of Minas Gerais is considered the heartland of artisanal cachaça production, accounting for the majority of registered alambique (pot still) distilleries. São Paulo and the northeast of Brazil are home to the large industrial producers.

What does it taste like?

Fresh, unaged cachaça — called prata (silver) or branca (white) — tastes grassy, fruity, and slightly fermented, with a clean bite. There is a quality that wine people might call "terroir" — you can taste the cane, the climate, the soil it grew in. It is lighter and more vegetal than rum, with less sweetness.

Aged cachaça — called ouro (gold) or envelhecida — takes on woody, vanilla, spice, and fruit notes from the barrels it rests in. Brazilian distillers use an extraordinary variety of native wood species for ageing, many of which exist nowhere else in the world. Each wood imparts a distinct flavour that has no equivalent in any other aged spirit tradition.

Legal Definition and Classification

Cachaça is regulated under Brazilian federal law — principally Lei nº 8.918 of 14 July 1994 (the Beverages Law) and its implementing decree, Decreto nº 6.871 of 4 June 2009. The regulatory authority is the MAPA — the Brazilian Ministry of Agriculture, Livestock and Food Supply.

The law defines three requirements that distinguish cachaça from all other spirits including rum:

  • Raw material: fermented sugarcane must (caldo de cana — fresh juice) only. Molasses and other by-products are explicitly excluded.
  • Origin: must be produced in Brazil. This is the geographic indication requirement.
  • Alcohol range: minimum 38% ABV, maximum 54% ABV at 20°C.

The law further distinguishes between two production categories:

Artisanal production requires registration with IBRAC and compliance with MAPA's technical standards. Industrial producers operate under separate licensing. Approximately 99% of cachaça by volume is produced industrially — brands like Pitú, 51, and Velho Barreiro dominate the domestic volume market. The artisanal segment, though a small fraction of volume, commands premium pricing and represents most export-quality cachaça.

Production Process

Step 1 — Sugarcane harvesting

Cachaça production begins at harvest. The quality of the cane — variety, soil, climate, and timing — has a direct effect on the flavour of the final spirit in a way that molasses-based spirits cannot replicate, because molasses is a processed commodity that equalises regional differences. Fresh juice does not. This is why single-estate and single-origin cachaça exists in a meaningful way.

Cane must be processed quickly after cutting — ideally within 24 hours — because the juice begins to deteriorate rapidly. Industrial producers have mechanised this with large-scale mills. Artisanal producers use smaller mills and smaller batches, maintaining tighter control.

Step 2 — Juice extraction and preparation

The cane stalks are crushed in a mill (moenda) to extract the caldo de cana (fresh juice). The juice is then filtered to remove fibre and impurities. At this stage, sugar content (Brix) is measured. For fermentation, the juice may be diluted with water to achieve an optimal sugar concentration — typically 14–16° Brix for artisanal production.

No sulphur, no concentrates, no molasses additions are permitted.

Step 3 — Fermentation

Fermentation is one of the defining variables in cachaça production. The choice of yeast strain and fermentation vessel significantly affects flavour. MAPA regulations permit three yeast approaches:

  • Spontaneous fermentation — wild indigenous yeasts from the cane, the environment, or the distillery walls. Common in traditional artisanal producers. Imparts regional and seasonal character.
  • Back-slopping (pé-de-cuba) — a portion of previous ferment retained and used to inoculate the next batch. Maintains a house yeast culture specific to that distillery over many years.
  • Commercial yeasts — selected strains for consistency. Standard in industrial production.

Fermentation vessels include wooden vats (dornas de madeira), ceramic, stainless steel, and copper. Many artisanal producers consider the material of the vessel — particularly wood — to contribute to the microbial ecology and flavour of their cachaça. Fermentation typically runs 16–30 hours for artisanal batches, faster for industrial.

The resulting wash reaches approximately 6–9% ABV.

Step 4 — Distillation

Artisanal cachaça uses copper pot stills (alambiques), typically of the simple pot still type — one distillation pass producing a spirit at 38–54% ABV. The distiller performs cuts: discarding the heads (cabeça) and tails (cauda), retaining only the heart (coração) for bottling or ageing.

Industrial cachaça uses continuous column stills. MAPA regulations permit a maximum distillation strength of 54% ABV for both types — an unusually low ceiling that preserves more congeners and flavour compounds than the higher cut points used in, for example, vodka production.

The 54% ABV ceiling is legally significant: it is lower than most other spirits categories and intentionally so, to preserve the organoleptically characteristic volatile compounds of the sugarcane.

Step 5 — Ageing (optional)

Cachaça may be bottled unaged (prata/branca) or aged in wood. Ageing requirements and classifications:

The wood species used for ageing is one of the most distinctive aspects of cachaça. Brazilian law permits an enormous range of native woods, each imparting different compounds and flavour profiles. This is unique among major spirit categories — no other tradition offers this diversity of wood character.

Scale and Industry

Cachaça is the third most consumed distilled spirit in the world by volume after Chinese baijiu and Scotch whisky blends, according to IBRAC data. However, this ranking reflects almost entirely domestic Brazilian consumption — export volumes are relatively small.

Why so little is exported
Approximately 98–99% of cachaça produced in Brazil is consumed domestically. The price point for industrial cachaça in Brazil is extremely low — it competes with beer as an everyday drink. Premium artisanal cachaça exports have grown significantly since 2000 as the international cocktail market discovered the caipirinha, but total export volume remains a small fraction of production.

Permitted Additions

Brazilian law permits limited additions to finished cachaça:

  • Sugar: up to 6 g/L may be added without requiring a label declaration. Cachaça with 6–30 g/L sugar must be labelled "adoçada" (sweetened).
  • Caramel colouring: permitted for colour standardisation in aged expressions.
  • Water: for dilution to bottling strength.

No flavourings, essences, or other spirits are permitted. The 6 g/L undeclared sugar threshold is controversial among purists and is a known point of difference between industrial and artisanal producers.

Regulatory History and GI Architecture

The modern legal framework for cachaça was established through a sequence of federal instruments spanning three decades. The primary sequence:

  • Lei nº 8.918/1994 — The Beverages Law. Established the legal distinction between cachaça and aguardente de cana (generic sugarcane spirit). Prior to this law, the two were conflated; the law created separate legal identities.
  • MAPA Instrução Normativa nº 13/2005 — Technical standards for cachaça and aguardente de cana production. Defined production methods, analytical limits for congeners, and classification criteria.
  • Decreto nº 6.871/2009 — The implementing decree of Lei 8.918. Article 52 contains the canonical legal definition of cachaça quoted above. This decree also codified the ageing classifications (prata, envelhecida, premium, extra premium).
  • US-Brazil Bilateral Agreement, 2013 — The United States Trade Representative formally recognised cachaça as a distinctive product of Brazil under a bilateral agreement, establishing the same class of protection that protects Tennessee whiskey and bourbon as American products.

The critical legal distinction between cachaça and aguardente de cana is the alcohol ceiling: aguardente de cana may be distilled to a higher strength (up to 70% ABV). Cachaça's 54% ceiling is a deliberate flavour-preservation requirement based on the regulatory intent that cachaça must present "the volatile characteristics of the sugarcane."

The Cachaça vs Rum Dispute

For decades, Brazilian exporters faced the classification problem that customs authorities in importing countries categorised cachaça as rum — either under the general HS Code 2208.40 (rum and other spirits obtained by distilling fermented sugarcane products) or under domestic rum regulations. This affected labelling, taxation, and trade positioning.

Brazil's approach was to negotiate bilateral and multilateral GI recognition. The 2013 US-Brazil agreement was the most significant outcome — it permits cachaça to be labelled solely as "cachaça" in the US without a rum sub-designation, and prohibits US producers from labelling their products as cachaça. Similar recognition exists in the EU under the "distinctive product" framework established for bilaterally negotiated spirits GIs.

Despite these agreements, the international HS classification system still places cachaça under 2208.40 alongside rum for tariff purposes — an ongoing point of tension for the Brazilian industry.

Fermentation Chemistry

Fresh sugarcane juice contains primarily sucrose (approximately 12–18% w/v), glucose, and fructose. Saccharomyces cerevisiae metabolises sucrose via invertase, splitting it into glucose and fructose prior to glycolysis. The resulting ethanol production is straightforward; the congener complexity is where cachaça diverges from molasses-based fermentation.

Fresh juice contains no sulphur dioxide (which is added in some molasses processing), retaining a broader spectrum of volatile aroma precursors. The cane-derived compounds include:

  • Terpenes and terpenoids — limonene, linalool, and other cane-variety-specific compounds that survive fermentation partially and contribute floral and citrus notes.
  • Esters — ethyl acetate and isoamyl acetate from ester synthesis during fermentation. The ester profile in spontaneously fermented cachaça is broader and more variable than in commercial-yeast ferments.
  • Higher alcohols (fusel alcohols) — isoamyl alcohol, propanol, isobutanol. Concentration depends on yeast strain, fermentation temperature, and nitrogen content of the must. MAPA IN 13/2005 establishes maximum permitted levels: total fusel alcohols ≤360 mg/100 mL anhydrous alcohol.
  • Acetaldehyde — the primary carbonyl compound. MAPA limits: ≤30 mg/100 mL anhydrous alcohol.
  • Acetic acid / volatile acidity — limited to ≤150 mg/100 mL anhydrous alcohol by MAPA IN 13/2005.

Wild yeast fermentation (which uses indigenous Saccharomyces and non-Saccharomyces species including Candida, Pichia, and Kluyveromyces) produces a significantly different congener profile versus commercial Saccharomyces strains — generally higher in total esters and higher alcohols, with more complex aromatic compound distributions. This is the scientific basis for claims about terroir and house character in artisanal cachaça.

Distillation — Technical Parameters

The copper alambique used in artisanal cachaça is typically a direct-fire pot still with a capacity of 200–2,000 litres. The single-pass distillation produces a raw spirit (bruto) at 54–70% ABV before dilution. The 54% ABV bottling maximum is achieved by dilution with water.

The cuts made by the distiller have a significant effect on the congener profile of the final spirit:

  • Heads (cabeça / primeiro): high in acetaldehyde, methanol (metanol), and low-boiling-point esters. Methanol content is a safety parameter — MAPA IN 13/2005 limits methanol in cachaça to ≤20 mg/100 mL anhydrous alcohol. The heads fraction contains the highest methanol concentration and is discarded.
  • Heart (coração): the desired fraction. The experienced distiller identifies the transition by taste, smell, and measurement of the distillate coming off the still. Typically runs from approximately 55–65% ABV down to approximately 40–42% ABV depending on the producer's style.
  • Tails (cauda / segunda): high in fusel alcohols and heavy esters. Some producers return a controlled fraction of tails to the next distillation for flavour contribution; others discard entirely.

Copper catalysis is an active part of the distillation process: copper reacts with hydrogen sulphide and other sulphur compounds in the wash, removing them from the distillate. This is why copper alambiques are specifically valued over stainless steel — they produce a cleaner spirit with less sulphurous character. MAPA limits copper content in the final spirit to ≤5 mg/L.

Wood Chemistry in Ageing

When cachaça is aged in wood, a range of chemical reactions occur at the wood-spirit interface that transform the distillate's flavour profile:

  • Extraction: the spirit solubilises lignin degradation products (vanillin, syringaldehyde, coniferaldehyde), ellagitannins (from oak), and species-specific compounds from native Brazilian woods.
  • Oxidation: oxygen permeating through barrel staves oxidises aldehydes to acids and alcohols to aldehydes, rounding harsh notes.
  • Esterification: organic acids in the spirit react with alcohols to form new esters during extended maturation.

Amburana wood (Amburana cearensis) is of particular chemical interest. It contains high concentrations of coumarin (a lactone with vanilla-cinnamon aroma), which is extracted into the spirit during ageing. The resulting flavour profile — intensely aromatic, sweet-spiced, unlike any other aged spirit — is specific to this Brazilian native wood species. There is no equivalent wood widely available in European or American cooperage traditions. Amburana-aged cachaça is effectively a flavour category that exists nowhere else in the world spirits market.

MAPA does not impose a mandatory minimum ageing time for the base "envelhecida" classification beyond 1 year, but producers of premium and export-market cachaça routinely age for 2–10 years in small barrels (≤700L as required by law, with many using 50–200L barrels for faster extraction and greater wood contact surface area per volume).

Geographic Indication — Paraty and Salinas

Within the broader Brazilian GI for cachaça, two sub-regional GIs exist for specific production areas:

  • Cachaça de Paraty — Paraty, Rio de Janeiro state. One of the oldest production regions in Brazil, with documented production since the 17th century. The GI was granted by INPI (Instituto Nacional da Propriedade Industrial) in 2007. Paraty cachaça is defined by its use of copper alambiques and the specific terroir of the Paraty region.
  • Cachaça de Salinas — Salinas municipality, Minas Gerais. Granted GI status in 2008. The Salinas region is considered one of Brazil's most important artisanal production areas; the municipality contains the largest concentration of registered alambique distilleries in the country.

Further regional GIs are under application or development for other producing municipalities within Minas Gerais, representing the ongoing formalisation of cachaça's geographic identity within Brazilian and international IP law.
