Honey presents a distinctive fermentation challenge: it is extremely low in yeast-assimilable nitrogen (YAN), the nutrients yeast need to reproduce and ferment cleanly, which without intervention causes stuck fermentations and produces fusel alcohols and sulfur off-flavours. Modern meadmaking addresses this through staggered nutrient supplementation, adding diammonium phosphate (DAP) and complex nutrient blends such as Fermaid-O at multiple points during fermentation. Mead's style range, codified by bodies such as the BJCP, includes traditional mead (honey and water alone), melomel (with fruit, with named sub-types cyser using apples and pyment using grapes), metheglin (with spices or herbs), braggot (a mead-beer hybrid using malt), bochet (made from caramelised or scorched honey for deep toffee notes), and sack mead (high-gravity, very sweet, fortified-wine-like). The Low-YAN Problem — Honey's Fermentation Trap

Mead looks like the simplest fermented beverage imaginable — honey, water, yeast — and yet it is notoriously one of the hardest to ferment cleanly. The reason is almost entirely chemical, and it is the single most important technical fact in modern meadmaking.

What YAN Is and Why Honey Lacks It

Yeast need more than sugar to thrive — they need YAN (yeast-assimilable nitrogen): free amino acids and ammonium that the yeast use to build proteins, reproduce, and complete fermentation cleanly. Grape juice is naturally rich in YAN (which is why wine ferments comparatively smoothly); honey is almost the opposite — bees process nectar specifically to be a near-pure, shelf-stable sugar store, stripping out most of the nitrogen along the way. A must of honey and water alone is therefore a near-starvation environment for yeast.

The Modern Solution: Staggered Nutrient Addition

Serious modern meadmakers solve this with staggered nutrient additions — adding nitrogen sources not all at once but in several doses spread across the active fermentation, timed to when the yeast population actually needs them (roughly at pitching, then again around 24–48 hours, then near the one-third sugar-break point). The two workhorse additives are DAP (diammonium phosphate, a simple, fast-acting inorganic nitrogen source) and complex organic blends like Fermaid-O or Fermaid-K, which supply amino acids and micronutrients alongside nitrogen, more closely mimicking what grape must naturally provides.

Why this makes mead a relatively "modern science" craft
Because the YAN problem wasn't well understood until relatively recent fermentation science, much of historical mead was probably plagued by exactly these issues — stuck, hot, sulfurous ferments — which may explain why mead's reputation suffered for long stretches relative to wine and beer despite its ancient pedigree. The current renaissance in serious craft mead owes a great deal directly to nutrient-science understanding that simply didn't exist a few decades ago.

Cyser and pyment as the two "gateway hybrids"
Cyser and pyment are worth knowing specifically because they sit at the exact intersection of three Codex categories at once: cyser blends mead and cider chemistry (honey fermented alongside apple sugars and acids), while pyment blends mead and wine (honey fermented with grape must, sometimes literally using wine grapes and wine yeast strains). Both are often the easiest entry point for wine or cider drinkers trying mead for the first time, since the fruit component gives a familiar anchor.

Honey Varietal Character

In traditional mead — honey and water alone — the honey itself carries the entire burden of flavour, the way grape variety does in wine. Different floral sources (monofloral or near-monofloral honeys, where bees forage predominantly one bloom) give recognisably different character.

Honey as mead's "single vineyard" concept
Serious traditional meadmakers increasingly treat honey source the way a winemaker treats vineyard site — naming the floral source, sometimes even the specific apiary or region, on the label. A wildflower mead from one region's bees will taste meaningfully different from another's, for the same underlying reason terroir matters in wine: what the bees forage on (and the local minerals/climate behind it) genuinely shapes the final honey, and therefore the mead.

Ethiopian Tej — the World's Living Mead Tradition

While much Western mead history is archaeological or revivalist, Ethiopia's tej is a continuously living, widely consumed mead tradition that never stopped being part of daily and ceremonial life — arguably the world's most-consumed mead style today, even though it's barely known outside Ethiopia and its diaspora.

Gesho — Tej's Defining Ingredient

What separates tej from a generic honey-water ferment is gesho (Rhamnus prinoides, "African dogwood" / shiny-leaf buckthorn), a bittering plant whose leaves and twigs are added during fermentation. Gesho functions much like hops do in beer: it contributes bitterness to balance honey's sweetness, antimicrobial/preservative compounds, and a distinctive herbal, slightly bitter, tannic character that no Western mead style replicates. This makes tej production conceptually closer to a hopped beverage than to a typical Western traditional mead.

Production & Culture

Tej is traditionally fermented in large clay vessels, with strength and sweetness varying widely by household and region — home and small-batch production remains the norm, alongside a growing commercial sector. It holds deep cultural and ceremonial significance in Ethiopian society, traditionally served in distinctive round-bottomed flasks called berele, and is central to celebrations, religious occasions, and the institution of the tej bet ("tej house"), a social drinking establishment roughly analogous to a tavern or wine bar.

Why tej matters to mead's global story
Most popular accounts of mead frame it as a niche, mostly-historical European drink undergoing a small modern revival. Tej complicates and enriches that picture: a major African nation has an unbroken, large-scale, everyday mead culture that likely outweighs all Western mead consumption combined, built on a completely independent technical solution (gesho) to balancing honey's sweetness — arrived at without any connection to European meadmaking traditions.

Ratio Classification & Historic European Mead

Beyond the BJCP's ingredient-based style tree, historic European mead — especially the well-documented Polish tradition — classifies mead by a different axis entirely: the ratio of honey to water used in the must, which directly determines strength, sweetness, and how long the mead needs to age.

The logic is straightforward: more honey means more fermentable sugar, which means a stronger, sweeter, more honey-forward result that also needs far longer to mature into balance — a półtorak can require years of ageing, while a czwórniak is comparatively quick. This ratio-driven system runs as a genuinely separate classification axis from the BJCP's ingredient-based tree (a półtorak could also be a melomel or metheglin if fruit or spice is added) and reflects mead's deep, continuous presence in Central/Eastern European drinking culture, parallel to (and considerably older than) the region's vodka tradition.
