Mead is an alcoholic beverage produced by fermenting honey diluted in water, with or without the addition of other fermentable ingredients such as fruit, hops, spices, or grains. It is one of the oldest fermented alcoholic beverages documented in human history — archaeological evidence for mead production has been identified at sites in northern China (Jiahu site, Henan Province, dated to approximately 6500–7000 BCE, documented in McGovern et al. 2005 PNAS), and in European Bronze Age contexts. Mead is produced by fermenting a solution of honey and water (must or 'honey must') with yeast — either commercial strains or wild/ambient yeast. The primary fermentable sugar in honey is a roughly equal mixture of fructose (~38%) and glucose (~31%), plus sucrose, maltose, and minor sugars, at approximately 80% total sugar content by weight; when diluted to a typical honey-must gravity, fructose and glucose provide the fermentable substrate for Saccharomyces cerevisiae. Mead has a wide ABV range: from session meads (4–7% ABV) to traditional meads (10–14% ABV) to sack meads (fortified/high-gravity, 14–20%+). The most comprehensive current production guidelines and style classifications are maintained by the American Mead Makers Association (AMMA) and the BJCP (Beer Judge Certification Program), which defines mead style categories in its Mead Judging Guidelines.

The world's oldest alcoholic beverage — and the evidence

The claim that mead is humanity's oldest fermented alcoholic drink rests on archaeological chemical evidence rather than written record. The Jiahu site in Henan Province, China, excavated from 1983 onwards, yielded pottery vessels dating to approximately 6500–7000 BCE with residues analysed by Patrick McGovern and colleagues at the University of Pennsylvania Museum. The chemical analysis (published in McGovern et al. 2005, PNAS) identified tartaric acid (from wild grape/hawthorn), beeswax compounds (from honey), and rice fermentation markers — suggesting a mixed fermented beverage containing honey, rice, and wild fruit. This predates the first documented grape wine and barley beer by 1,000–2,000 years.

European mead evidence is more geographically specific: the Egtved Girl burial in Denmark (dated c. 1370 BCE) contained a birch bucket residue with pollen from lime flowers (Tilia), clover, meadowsweet (Filipendula ulmaria), and bog myrtle — consistent with a honey-based fermented beverage flavoured with plants. The Viking mead tradition, documented in Norse sagas from the 9th–12th centuries CE, describes meadhalls (mead-halls) as the central social institution. The word "mead" derives from Proto-Indo-European *médhu- (honey, sweet drink) — cognate with Sanskrit madhu, Greek méthy, Welsh medd, and Lithuanian medus.

Tej — Ethiopian honey wine
Tej (ጠጅ) is the traditional Ethiopian/Eritrean honey wine — often cited as the most widely consumed mead tradition in the world by population. It is made with honey and gesho (Rhamnus prinoides), a hop-like bittering agent native to East Africa, which provides Tej's characteristic bitter, earthy character distinct from European meads. Tej is brewed in traditional clay vessels and consumed fresh (often within days of fermentation completing). It is produced at household, artisanal, and commercial scales throughout Ethiopia. Tej houses (tej bets) are the traditional equivalent of the pub.

Honey fermentation — the unique challenges

Honey is an inherently antimicrobial substance. Its antimicrobial properties come from: (1) very low water activity (aw ~0.6 in undiluted honey — most bacteria and yeast cannot grow below aw 0.7); (2) hydrogen peroxide produced by the enzyme glucose oxidase acting on glucose in diluted honey; (3) the natural antimicrobial peptide bee defensin-1 (Royal Jelly Protein-1); (4) phenolic acids, flavonoids, and other compounds that vary with floral source; (5) low pH (typically 3.9–4.5). All these mechanisms protect the hive from microbial infection — but they also inhibit mead fermentation.

The mead-maker's challenge is to dilute the honey sufficiently to overcome antimicrobial properties (honey must is typically diluted to starting gravity 1.080–1.150, water activity above 0.95) while providing adequate yeast nutrition. Honey is particularly deficient in yeast-assimilable nitrogen (YAN) — essential yeast nutrients including free amino nitrogen (FAN) and ammonium salts. Without supplemental YAN, mead fermentations become nitrogen-stressed, producing high concentrations of fusel alcohols (particularly isoamyl alcohol and propanol) which give stressed mead a harsh, "hot" character. Most modern mead-makers supplement with diammonium phosphate (DAP) and organic nitrogen sources (Fermaid-O or similar yeast nutrient blends) to support healthy fermentation.
