Fermented pear juice — but only from perry pears, not dessert pears. Sorbitol chemistry that makes it taste sweet even when dry. And some of the rarest old orchard fruit varieties in the world.

Perry is an alcoholic fermented beverage produced from the juice of pears (Pyrus communis), analogous to cider but using pear rather than apple. Traditional perry is produced from specific perry pear varieties — not from dessert or culinary pear varieties — that contain unique polyphenol profiles, high sorbitol content, and distinctive aromatic compounds. Perry is produced primarily in a limited geographic zone of England (the Three Counties — Herefordshire, Gloucestershire, and Worcestershire), France (Normandy — poiré), and parts of Germany (Birnenwein). The perry pear varieties used for traditional production are fundamentally different from dessert pears such as Conference, Comice, and Williams — perry pears are typically astringent, hard, and often inedible fresh, containing very high tannin concentrations, but producing a distinctive fermented juice with complex floral, mineral, and earthy aromatic character. Traditional perry has experienced significant revival as part of the broader premium cider and heritage fermented beverage movement since approximately 2000. Pear cider — a separate, widely-sold commercial product typically produced from dessert pear juice, concentrate, or pear flavouring added to apple cider — is legally and stylistically distinct from traditional perry; the term 'perry' under UK regulations (Food Standards Agency guidance) specifically refers to pear fermented without apple juice addition.
Why perry is harder to make than cider
Perry production presents unique challenges not encountered in cider-making, stemming primarily from the unusual biochemistry of perry pear juice:
Sorbitol — perry pears contain high concentrations of sorbitol (a sugar alcohol, typically 3–8% of juice weight, compared to less than 1% in apple juice). Sorbitol is not fermented by Saccharomyces cerevisiae — it passes through fermentation unchanged, contributing to perry's characteristic sweetness even in fermented (nominally dry) examples. This makes perry appear sweeter than its measured residual sugar would suggest, because the sorbitol sweetness is not accounted for in standard sugar measurements. Sorbitol is also a laxative in large quantities — a traditional concern about perry overconsumption.
Pectin — perry pears contain much higher pectin concentrations than apples. During pressing, pear pectin can produce methanol via pectin methylesterase enzymes acting on pectic methyl ester bonds. Traditional perry made from specific varieties requires careful attention to pressing technique and fermentation management. EU and UK regulations set maximum methanol levels for perry at 1,500 mg/L of pure alcohol.
Fermentation instability — perry fermentations are notoriously unpredictable, often stopping prematurely (stuck fermentations) or restarting unexpectedly after bottling. The combination of high tannin, high sorbitol, and specific fermentation inhibitors present in some perry pear varieties creates challenging fermentation conditions even for experienced cider-makers. Traditional Herefordshire perry-makers often describe perry as "never perfectly under control."
The perry pear varieties and the Three Counties
Traditional English perry pear varieties are among the rarest fruit varieties in commercial use — many are found in only a handful of ancient orchards in Herefordshire, Gloucestershire, and Worcestershire (the "Three Counties"). The Marcher Apple Network and the Bulmers (now Heineken-owned) Foundation have documented and preserved many of these varieties. Some key examples:

Sorbitol chemistry — why perry tastes sweet even when dry
Sorbitol (D-glucitol, a 6-carbon sugar alcohol) is synthesised in pears via the sorbitol-6-phosphate pathway — using sorbitol-6-phosphate dehydrogenase to convert fructose-6-phosphate to sorbitol-6-phosphate, which is then dephosphorylated to free sorbitol. In mature perry pears, sorbitol concentrations of 30–80 g/L are common — and sorbitol is the primary transported sugar in the Rosaceae family (apples also contain sorbitol, but at lower concentrations than perry pears).
Because Saccharomyces cerevisiae lacks sufficient sorbitol dehydrogenase activity to ferment sorbitol at industrially significant rates, the sorbitol present in perry pear juice passes through primary fermentation essentially intact. A perry with 5 g/L residual sucrose/fructose/glucose — technically a "dry" perry — may still contain 30–60 g/L sorbitol, contributing significant sweetness to the palate. This effect is unique to perry (and to a lesser extent, pear-based ciders) among major fermented beverages.
