Cider Apples Are Not Eating Apples

The single most important fact about serious cider is one most drinkers never learn: the apples used are usually inedible. A true cider apple — bitten straight off the tree — is typically too astringent, too sour, or both, to eat with any pleasure. Cider apples are bred and selected for what they contribute to fermented juice, not the dessert bowl.

The Long Ashton Classification

English cider science (notably the historic Long Ashton Research Station in Somerset) formalised apples into four categories on two axes: tannin (giving bitterness and astringency, body and structure) and acid — chiefly malic acid (sharpness, the "green apple" bite).

Why bittersweets matter so much
A cider made entirely from sweet/sharp dessert and culinary apples (the kind most commercial mass-market cider uses) tends to be thin and one-dimensional — pleasant, but lacking structure. Tannin from bittersweet and bittersharp apples is what gives serious cider the body, grip and complexity that distinguishes it from "fermented apple juice." This is exactly analogous to tannin in red wine: it's a textural and structural backbone, not just a flavour. Traditional English and French cider orchards are planted overwhelmingly with bittersweet/bittersharp varieties for this reason.

Kingston Black — the Benchmark

Among hundreds of named cider-apple varieties, Kingston Black stands apart as the most prized: a bittersharp variety balanced enough in tannin, acid and sugar to be vinified alone as a single-variety cider — a rarity, since most ciders are blends of multiple varieties to balance the quadrant. It is to cider roughly what a great single-vineyard Pinot Noir is to wine: difficult to grow well, but capable of real complexity on its own.

Keeving & the Pays d'Auge AOC

France's great contribution to cider technique is keeving (défécation naturelle, sometimes called garde) — a method that produces a naturally sweet, gently sparkling, low-alcohol cider without adding any sugar or stopping fermentation artificially.

How Keeving Works

Fresh apple juice naturally contains pectin. The keever adds a pectinase-inhibiting enzyme (or relies on cold and calcium) so that, instead of breaking down, the pectin binds with calcium and rises to the surface, dragging nitrogen-rich nutrients and proteins with it as it forms a thick brown cap called the chapeau brun. The clear juice is drawn off from beneath this cap and fermented. Because the nitrogen the yeast needs has been stripped out with the cap, fermentation proceeds very slowly and incompletely — it naturally stalls before converting all the sugar, leaving a cider that is low in alcohol (often 3–5% ABV), naturally sweet, and lightly sparkling from the residual CO₂ of the slow ferment.

The Pays d'Auge AOC

The technique underlies Normandy's Cidre Pays d'Auge (sometimes labelled cidre bouché, "corked cider"), an AOC administered by INAO — one of the very few protected appellations in the cider world. The specification governs the growing area (the Pays d'Auge region of Calvados), permitted apple varieties (predominantly bittersweet and bittersharp), minimum proportions of those tannic varieties in the blend, and the keeving-based production method itself. It is also the cider most closely tied to Calvados, the apple brandy distilled from the same regional cider tradition.

Why keeving is hard to do well
Keeving is notoriously unpredictable — it depends on the specific pectin and calcium chemistry of that year's apples, and a "keeve" can simply fail to form a proper cap, leaving the maker with an ordinary dry cider instead. This unpredictability is part of why keeved cider is prized: it cannot be reliably forced, only coaxed, vintage by vintage.

The English West Country Tradition

England's deepest cider culture is the West Country — Herefordshire, Somerset, Gloucestershire, Worcestershire and Devon — where cider apple orchards have been cultivated for centuries, distinct from the country's separate tradition of eating and cooking apples.

Single-Variety vs Blended

English cidermaking spans two philosophies: single-variety ciders (Kingston Black, Dabinett, or Yarlington Mill vinified alone, showing that variety's specific character) and blended ciders, where the maker balances sweet, sharp, bittersweet and bittersharp apples — much as a winemaker blends grape varieties — to achieve a rounded result no single variety could give alone. Most traditional farmhouse cider is blended, by both tradition and necessity (orchards are typically mixed-variety).

Still vs Sparkling, and "Scrumpy"

English cider ranges from fully still, flat farmhouse cider to bottle- or tank-conditioned sparkling versions. Scrumpy is the informal, often rustic term for traditional, cloudy, strong, still farmhouse cider — historically a West Country term, now sometimes used loosely (and sometimes inaccurately) for any "rough" or strong cider. The National Association of Cider Makers and bodies like CAMRA maintain definitions distinguishing genuine "real cider" (minimal processing, no concentrate, no heavy dilution) from industrially produced cider made from apple juice concentrate and water.

Spanish Sidra Natural — Asturias & the Basque Country

Northern Spain's cider tradition is one of the most distinctive in the world, built around minimal intervention and a uniquely theatrical way of serving the drink.

The Style

Sidra natural (centred on Asturias, with a related Basque tradition, sagardoa) is fermented with native wild yeasts, typically bone-dry, quite sour/acidic, barely carbonated, and often slightly funky or "barnyard" in character from spontaneous fermentation — closer in spirit to a natural wine than to a clean commercial cider. Asturian sidra natural carries its own DOP (Denominación de Origen Protegida).

Escanciado — the High Pour

Because sidra natural is so flat, it is traditionally served by escanciado (Basque: txotx pouring) — the server holds the bottle high above their head and the glass low at hip level, pouring a thin stream that aerates and briefly carbonates the cider as it falls. Only a small amount (a culín) is poured at a time, drunk immediately in one go before it goes flat again, and the process repeats throughout the session. This is not showmanship for its own sake; it is the practical method by which a still, flat cider is made briefly lively enough to taste right.

Txotx season
In the Basque Country, txotx season (roughly January–April) is a major cultural event: cider houses (sagardotegiak) open their fermentation tanks directly to customers, who move from barrel to barrel sampling cider straight from the tank, poured by the txotx method, typically alongside a set menu (omelette, cod, steak). It is one of the most distinctive drinking rituals in the cider world, with no real parallel in English or French cider culture.

Quebec Ice Cider & Other Notable Styles

Beyond the three classic European traditions, the New World has produced its own distinctive cider innovation, and malolactic fermentation adds a further technical variable across all styles.

Ice Cider (Cidre de Glace)

Pioneered in Quebec in the 1990s (inspired by ice wine), ice cider concentrates apple sugars before fermentation by one of two methods: cryoextraction (pressing apples that have frozen naturally on the tree or in storage, yielding a small amount of intensely concentrated juice) or cryoconcentration (freezing pressed juice and removing the ice, concentrating what remains). The concentrated must ferments slowly into a rich, intensely apple-flavoured, sweet dessert cider, typically 9–13% ABV. Quebec's cidre de glace received a geographical indication in 2014, regulating the term and production method.

Malolactic Fermentation (MLF)

As in wine, cider can undergo malolactic fermentation — bacteria convert the sharp malic acid (cider's dominant acid) into softer lactic acid. Some traditions encourage it for a rounder, less aggressive cider; others actively avoid it to preserve the bright, "green apple" sharpness that defines styles like sidra natural. It is one of the same stylistic forks found in winemaking, applied to apples instead of grapes.
