Feni (also spelled Fenny) is a spirit drink produced exclusively in the State of Goa, India, from the juice of the cashew apple (Anacardium occidentale) or from the sap (neera) of the coconut palm (Cocos nucifera). Cashew Feni is produced by double or triple distillation of fermented cashew apple juice in traditional copper pot stills (bhatti). Coconut Feni is produced by double distillation of fermented toddy drawn from the coconut palm. The spirit must be produced within the geographical boundaries of the State of Goa. Feni is registered as a Geographical Indication of India under GI Application No. 155 (2009), filed under the Geographical Indications of Goods (Registration and Protection) Act, 1999.

What is Feni?

Feni is Goa's spirit — made from either cashew apples or coconut toddy, distilled in traditional copper pot stills by small-scale producers across the state. It is the only spirit in India with a state-specific Geographical Indication: GI No. 155, registered in 2009, meaning that only spirits produced within Goa from the defined raw materials and processes can legally carry the name "Feni" or "Fenny."

Cashew Feni is the more celebrated and more internationally known variety. The cashew apple — the fleshy fruit attached to the cashew nut — is pressed to extract its juice, fermented in clay pots or tanks for approximately three days, and then double or triple distilled in a bhatti (a traditional copper pot still arrangement unique to Goa). The resulting spirit is typically 40–45% ABV, clear to pale gold, with a pungent, distinctive character: a powerful cashew fruit aroma, slightly fruity, slightly funky, unlike anything produced anywhere else.

The bhatti is a traditional Goan pot still assembly consisting of a copper pot (bhann) sealed with clay, a bamboo or copper tube acting as a condenser (surnali), and a coconut shell or clay pot (rendos) as a receiver. The design is entirely indigenous — it was not borrowed from Portuguese distillation technology brought to Goa in the 16th century, but appears to predate Portuguese arrival and reflects local metalworking and agricultural traditions. Traditional bhatti distillation involves two or three passes: the first distillation produces urrak (the first distillation product, ~15% ABV, drunk locally as a seasonal drink); the second pass on urrak produces cashew Feni (~40–43% ABV); a third optional pass produces caju feni at higher strength.

Cashew Feni vs Coconut Feni

Cashew Feni (Caju Feni) is distilled from fermented cashew apple juice. The cashew apple season runs from March to May in Goa. Cashew Feni has a pronounced, assertive character — pungent fruit aromatics, a slightly rustic edge, and significant body. It is the more complex and age-worthy of the two varieties.

Coconut Feni is distilled from toddy — the naturally fermented sap drawn from the cut flower spathes of coconut palms by local collectors called toddy tappers. The toddy is collected daily and ferments naturally overnight; double distillation in the bhatti produces coconut Feni, which is lighter, sweeter, and more delicate than cashew Feni, with a creamy coconut character.

Both are Goa's heritage drinks, drunk alongside local Goan cuisine — fish curry and rice, sorpotel, vindaloo — and both carry the GI protection equally.

History — Portuguese Goa and the Origins of Feni

The cashew tree (Anacardium occidentale) is not native to Goa — it is native to Brazil and was introduced to Goa by Portuguese traders in the 16th century, probably around 1560–1580. The Portuguese brought it initially to prevent coastal erosion, but Goan communities quickly recognised the value of the cashew apple (the tree's large, fleshy false fruit that the cashew nut hangs from) as a fermentation base. Within a century of the cashew's introduction, Goan distillers were producing a spirit from it.

The tradition of distillation in Goa likely predates the cashew, however. Coconut toddy fermentation and distillation was practised by Goan communities before Portuguese arrival (the first Portuguese fleet arrived in 1498; Goa was captured in 1510). The Portuguese recognised and regulated the existing toddy industry rather than creating it.

Goa remained under Portuguese administration from 1510 until 1961, when it was annexed by India through military action (Operation Vijay). During this period, Feni production was a significant cottage industry employing thousands of families — distillers (bhattikars), toddy tappers (rendeiros), and cashew farmers. The integration of Goa into India subjected Feni production to Indian excise law, which created significant regulatory tension: Indian excise frameworks were designed for large-scale distilleries and did not accommodate the traditional small-batch bhatti model.

The GI registration in 2009 — initiated by the Goa government and the Confederation of Indian Alcoholic Beverage Companies — represented the formal recognition of Feni's unique heritage status and provided legal protection against imitation production outside Goa.

Production in Detail

Cashew Feni — complete process

  • Harvest (March–May): Cashew apples are hand-harvested when fully ripe. The cashew nut (attached externally to the base of the apple) is removed and dried separately for the nut trade. Only the apple flesh is used for Feni.
  • Treading (coyro): The cashew apples are traditionally stomped (like grape treading) in stone troughs to extract juice. Some larger producers now use mechanical pressing. The juice is mixed with the pressed pulp and collected in sealed clay or plastic fermentation containers.
  • Fermentation: The cashew must ferments for 2–3 days using wild yeasts naturally present on the fruit skin. The resulting fermented wash (neero) is approximately 7–9% ABV.
  • First distillation (urrak): The fermented neero is loaded into the bhatti copper pot, sealed with clay, and heated with wood fire. The first distillation produces urrak, approximately 15% ABV — a seasonal local beverage drunk fresh, typically mixed with lemon juice and soda water.
  • Second distillation (Feni): The urrak is redistilled in the bhatti to produce cashew Feni, approximately 40–43% ABV. Some producers do a third distillation to produce higher-strength Feni.

The entire process — from cashew apple to bottled Feni — takes approximately one week for a single batch. A traditional bhatti processes approximately 100–300 litres of fermented wash per day.

GI Registration and Regulatory Framework

Feni was registered as a Geographical Indication of India under GI Application No. 155 in 2009. The registration was filed under the Geographical Indications of Goods (Registration and Protection) Act, 1999 (Act 48 of 1999), which is India's primary GI legislation implementing India's obligations under the TRIPS Agreement (Agreement on Trade-Related Aspects of Intellectual Property Rights, WTO).

The cottage industry regulatory challenge

India's excise framework historically required minimum production thresholds and industrial-scale facilities for spirits licensing — conditions that traditional bhatti producers, many producing fewer than 500 litres per year from a single fruit-season operation, could not easily meet. Goa's state government has negotiated special provisions under Goa's Excise Duty Act that accommodate traditional small-batch Feni production, but the tension between artisanal heritage production and industrial licensing requirements remains an ongoing policy issue.

Cashew Apple Chemistry

The cashew apple (Anacardium occidentale pseudofruit) has an unusual chemical composition relevant to Feni's distinctive character:

  • High sugar content: ripe cashew apples contain 10–14% fermentable sugars (predominantly fructose and glucose) — comparable to a ripe wine grape, making spontaneous fermentation to 7–9% ABV readily achievable in 2–3 days.
  • High tannin and astringency: cashew apple juice contains high concentrations of tannins (particularly anacardic acid and catechins) and astringent compounds. These are partially removed during fermentation but contribute to the slightly pungent, raw character of urrak and fresh Feni.
  • Anacardic acid: a distinctive phenolic compound (alkylsalicylic acid) found in the cashew apple and nut shell. While most anacardic acid is concentrated in the shell oil (CNSL — cashew nut shell liquid), traces in the apple juice contribute to Feni's characteristic flavour notes.
  • Volatile ester profile: distillation of cashew ferment produces a distinctive ester profile dominated by isoamyl acetate (banana/pear), ethyl hexanoate (apple/pineapple), and various short-chain fatty acid esters — contributing to the fruity, slightly sweet top notes of quality cashew Feni over the more assertive base character.
