Mendoza
A French grape rejected in its homeland that found its finest expression 10,000 kilometres away. High altitude. No rain. Water from snow. The world's Malbec capital.
Mendoza is Argentina's primary wine-producing province and one of the world's most significant wine regions by volume and international market presence. It is designated as an Indicación Geográfica (IG) wine region under Argentine wine law, administered by the Instituto Nacional de Vitivinicultura (INV). The province covers approximately 180,000 hectares of vineyard land — Argentina's largest wine-producing area and approximately 70% of the country's total production. The city of Mendoza sits at approximately 760 metres altitude, at the base of the Andes on the eastern slopes. Vineyards range from approximately 600 metres (low-altitude Maipú district) to over 1,450 metres (Valle de Uco, Gualtallary sub-district) — making Mendoza one of the world's highest-altitude wine regions. Malbec (Vitis vinifera cv. Côt, known as Malbec in Bordeaux and Auxerrois in Cahors) is the dominant and internationally defining variety (~37% of Mendoza plantings). Other significant varieties: Cabernet Sauvignon, Chardonnay, Torrontés, Bonarda. All viticulture in Mendoza requires irrigation — the region receives approximately 200mm of rainfall annually (insufficient for dryland farming), and vines are irrigated by channels fed with snowmelt from the Andes. The governing body is the INV.
Malbec — from French obscurity to Argentine icon
Malbec (also known as Côt in the Loire Valley, Auxerrois in Cahors, and Pressac in Saint-Émilion) is a dark-skinned red variety originally from southwestern France. In France it is currently a minor variety — used in small quantities in Bordeaux blends and as the primary variety in the Cahors AOP, where it produces deeply tannic, rustic wines called "black wine" (vin noir).
In 1853, French agronomist Michel Aimé Pouget brought Malbec cuttings to Mendoza at the request of the Argentine government, which was attempting to modernise the country's wine industry. The variety thrived in Mendoza's high-altitude, dry, sunny, continental climate in a way it had never done in the cooler, wetter Loire and Bordeaux regions. Argentina's Malbec has since completely outgrown its French parent in commercial significance — Mendoza is now the world's leading Malbec-producing region by both area planted and international market recognition.
The transformation is chemical and climatic: in Mendoza's 800–1,200m altitude sites, Malbec accumulates deep anthocyanin colour (darker than any Bordeaux or Cahors expression), concentrated fruit (plum, blackberry, chocolate), softer tannins than Cahors (attributable to more complete phenolic maturity in the warm, dry, high-UV Mendoza climate), and significant but balanced acidity from the cool nights. The altitude's high UV-B radiation specifically increases anthocyanin and flavonoid synthesis in the grape skin — documented in Azuma et al. (2012) as a UV-B response mechanism — producing the characteristic ink-dark colour of Mendoza Malbec.
Andes snowmelt — the irrigation that makes Mendoza possible
Mendoza receives approximately 200mm of rain per year — dramatically less than most commercial wine regions (Bordeaux ~900mm, Burgundy ~750mm, Barossa ~350mm). Without irrigation, viticulture would be impossible. The Andes mountains to the west receive substantial snowfall; the meltwater feeds a network of rivers (principally the Mendoza, Tunuyán, and Diamante rivers) and irrigation canals that were originally constructed by the indigenous Huarpe people and expanded during the colonial period.
This irrigation system is what makes Mendoza's agriculture possible — and it gives winemakers a degree of control over vine water stress that European producers working under natural rainfall do not have. Irrigation management is a critical winemaking decision: restricted irrigation during berry development promotes smaller berries with higher skin-to-juice ratio (more colour and tannin per litre); more generous irrigation during flowering and fruit set supports yield; and stress irrigation before harvest concentrates sugars and flavour compounds. This irrigation control is documented as a factor in Mendoza's consistent wine quality across vintages — rainfall variation is minimal, and vine water stress is managed rather than suffered.

Torrontés — Argentina's signature white
Torrontés Riojano (the most commercially significant Torrontés variety) is Argentina's signature white grape, producing intensely floral, aromatic wines with notes of rose petal, peach, and apricot. It is grown primarily in the Cafayate sub-region of Salta province (at ~1,700m — some of the world's highest commercial vineyards outside Bolivia) and in La Rioja province. Despite its Muscat-like aromatics (from geraniol, linalool, and related terpenes), Torrontés wines are typically bone dry. DNA analysis has confirmed that Torrontés Riojano is a natural crossing of Criolla Chica (a mission grape brought by Spanish colonists) and Muscat of Alexandria — explaining its intensely perfumed character. Altitude and UV-B — why high-altitude Mendoza Malbec is darker
The documented difference in colour intensity between low-altitude (700m) and high-altitude (1,200–1,500m) Mendoza Malbec is attributable primarily to UV-B radiation — which increases with altitude (approximately 10% per 1,000m elevation) and directly stimulates anthocyanin and flavonoid biosynthesis in grape skins as a UV-protective response.
UV-B radiation activates the CHS (chalcone synthase) and DFR (dihydroflavonol 4-reductase) enzyme pathways that produce anthocyanins and other flavonoids — documented in Azuma et al. (2012) in Plant Science. Higher UV-B at altitude → greater activation of these pathways → more anthocyanins → deeper colour. This is one of the documented mechanisms behind the observation that Valle de Uco Malbec (800–1,500m) consistently shows higher total anthocyanin concentration than Maipú Malbec (700–800m) from equivalent sites and vintages.
The combination of high UV-B, large diurnal temperature variation (typical of 1,000m+ altitude in a semi-arid continental climate), and low humidity (dry Andes climate inhibits disease pressure, allowing extended hang time) creates the specific conditions that produce Mendoza Malbec's signature profile: deep colour, soft tannins (fully ripe skins), high flavour concentration, and sufficient acidity for balance.
