PDO Naoussa (Νάουσα) is a Protected Designation of Origin for red wines produced exclusively in the municipal area of Naoussa, Imathia Regional Unit, Central Macedonia, Greece. The wine must be produced from 100% Xinomavro grapes. Minimum alcohol: 11.5% ABV. The wine undergoes mandatory ageing: minimum 12 months in oak and a minimum total ageing period of 24 months from harvest before release (36 months for Reserve/Αποθεματικό). The PDO is registered under EU Regulation 1308/2013 and governed by Greek Wine Law 4235/2014.

What is Naoussa?

Naoussa is a red wine PDO in northern Greece — in the Macedonia region on the eastern slopes of Mount Vermio. It produces what many wine critics consider Greece's most serious and age-worthy red wine, made from 100% Xinomavro — a grape whose name translates as "acid black" (from the Greek ξινό/xino, sour/acid, and μαύρο/mavro, black). The name is both accurate and descriptive.

Xinomavro is high in both tannins and acid — the same combination that gives Barolo (Nebbiolo) and Amarone (Corvina) their structure and longevity. Young Naoussa can be austere and demanding; with age (5–15+ years), it develops extraordinary complexity — savoury, earthy, with dried tomato, olive, spice, and a floral character that no other red wine variety produces in quite the same way.

The Nebbiolo comparison
Wine critics regularly compare Xinomavro to Nebbiolo — the grape of Barolo and Barbaresco. The comparison is apt in structure: both are high acid, high tannin grapes that produce pale-coloured red wines with exceptional longevity. Both lose their fruit character early and develop savoury, tertiary complexity with age. Both are demanding in youth and revelatory with time. The comparison is most useful as a guide to approachability (drink after significant ageing) rather than flavour (Xinomavro has its own distinct aromatic profile — more savoury, more olive-and-tomato, less floral than Nebbiolo). There is no confirmed genetic relationship between the two varieties.

What does Naoussa taste like?

Young Naoussa (1–5 years): deep garnet colour (fading rapidly at the edges — characteristic of Xinomavro's light pigmentation despite tannic structure), fresh red fruit, dried tomato, earthy notes, substantial tannins, high acidity. Can be austere and challenging without food.

With ageing (5–15 years): the tannins integrate, the colour lightens to brick-orange at the rim (Nebbiolo-like), and the wine develops extraordinary savoury complexity — dried tomato, olive tapenade, leather, earth, dried herbs, and a distinctive floral note (dried rose, violet). The acid remains high throughout, keeping the wine fresh and alive. The best Naoussa producers make wines that will age 20–30 years.

At table, Naoussa is naturally suited to roast lamb, grilled octopus (surprisingly compatible despite being a red wine), aged hard cheeses, and the rich stews of northern Greek cuisine.

History

Naoussa's viticultural history extends to antiquity — the region around Mount Vermio was producing wine in classical Greek and Macedonian periods. The town of Naoussa itself was an important commercial centre during the Byzantine and Ottoman periods, and wine production continued throughout these eras.

The modern appellation was formally established in 1971 under Greek wine law, making Naoussa one of Greece's oldest defined wine denominations. The original PDO regulations required 100% Xinomavro and set the ageing minimums that remain in force today. The 1971 legislation was subsequently updated under Greek Law 4235/2014 and brought into full conformity with EU Regulation 1308/2013.

The 1990s and 2000s saw a significant quality revolution in Naoussa. A new generation of Greek winemakers — many trained in Bordeaux, Burgundy, and Italian wine regions — brought modern winemaking techniques to Xinomavro. The debate between traditional Naoussa (extended oxidative ageing in large old oak, earthy and austere) and modern Naoussa (shorter oak, larger proportion of new French barrique, fruit-forward style) is ongoing and productive, similar to the "traditionalist vs modernist" debate in Barolo in the 1980s–1990s.

Terroir — Mount Vermio

Mount Vermio (altitude 2,052 m) provides the physical context for Naoussa's vineyards. The PDO zone covers vineyards on the eastern slopes at altitudes of 150–450 metres. Key terroir factors:

  • Altitude and temperature: the elevated vineyards experience cool nights even in summer, preserving acidity in the grapes. The northern latitude (approximately 40°N — same as Madrid and Istanbul) and altitude together make Naoussa one of the cooler major red wine zones of Greece.
  • Soils: predominantly clay and sandy loam, with sections of limestone. The iron-rich red clay soils (terra rossa) in the best sites contribute to the earthy, mineral character of the wines.
  • Aspect: eastern exposure on Mount Vermio's slopes provides morning sun warming with afternoon shade — moderating temperature extremes during the critical ripening period.

The Naoussa zone covers approximately 700 hectares of vineyard. Key sub-areas within the PDO include the villages of Gastra, Kopanos, and the slopes immediately above the town of Naoussa itself.

Xinomavro — Tannin and Acid Chemistry

Xinomavro's exceptional structure comes from two simultaneous extremes that are physiologically and chemically linked:

Tannin profile

Xinomavro berries are small with thick skins, producing high skin-to-pulp ratios and consequently high tannin concentrations. Total tannin content (measured as catechin equivalents) in Naoussa wines typically reaches 3.5–5.5 g/L — at the upper range for dry red wines globally. The tannins are predominantly composed of condensed tannins (proanthocyanidins) from skin extraction, with significant contribution from seed tannins in wines with extended maceration.

The tannin polymer length and structure evolves significantly during bottle ageing — early polymerisation with anthocyanins softens the perception of tannin without reducing the total extractable tannin, which is why young Naoussa tastes harsh and aged Naoussa tastes velvety despite similar chemical analysis.

Acid profile

Xinomavro retains exceptionally high malic and tartaric acid concentrations at full ripeness. This is a characteristic of the variety's phenological cycle — it ripens late (harvest typically October, later than most Greek varieties) and retains acid through a natural mechanism that resists acid degradation during ripening. Total acidity in Naoussa wines is typically 6–8 g/L (as tartaric), producing pH values of 3.3–3.5 — lower than most red wines at equivalent alcohol levels.

Colour evolution

Xinomavro's anthocyanin profile is unusual: it is relatively low in total anthocyanin concentration despite its thick skin (the skin is rich in tannin but relatively low in pigment compared to, for example, Syrah or Cabernet Sauvignon). The dominant anthocyanins are malvidin-3-glucoside compounds. The relatively low pigment concentration explains Xinomavro's characteristic light ruby colour in youth and rapid colour evolution to brick-orange at the rim — identical to the behaviour of Nebbiolo. Young wines appear lighter than their concentration suggests; aged wines appear brick-tawny with orange edges even at 10–15 years.
