PDO Santorini (Σαντορίνη) is a Protected Designation of Origin for wines produced exclusively on the island of Santorini (Thira) and the satellite islands of Thirasia and Aspronisi in the South Aegean. The primary variety is Assyrtiko (minimum 75% for dry PDO Santorini white wine), supplemented by Athiri and Aidani. Vinsanto (Βινσάντο) — the traditional sweet wine of Santorini — requires a minimum of 51% Assyrtiko from sun-dried grapes. The PDO is registered under EU Regulation 1308/2013 and administered by MAEAT (Ministry of Rural Development and Food) under Greek Wine Law 4235/2014.

What makes Santorini wine extraordinary?

Santorini is a volcanic island in the Aegean Sea — the visible tip of a massive underwater caldera formed by one of the largest volcanic eruptions in recorded geological time (the Minoan eruption, approximately 1600 BCE). The island's soil is not soil in any conventional sense: it is primarily volcanic pumice and ash, with almost no organic matter, almost no nutrients, and almost no water retention capacity. Rain is scarce — approximately 350 mm per year. There is essentially no groundwater for irrigation. The vines survive on morning dew absorbed through the leaves.

In these conditions, by any conventional viticulture logic, grapes should not grow. Certainly not grapes capable of producing serious, complex wine. Yet Santorini produces Assyrtiko — a white wine of extraordinary mineral intensity, piercing acidity, and citrus character that is unlike anything grown in more conventional wine environments. The impossibility of the growing conditions is the source of the wine's character.

Phylloxera immunity — the only living pre-phylloxera European vineyard at scale
Phylloxera vastatrix — the root louse that devastated European viticulture between 1860 and 1900, destroying over two thirds of all French vineyards — never reached Santorini. The volcanic pumice soil is inhospitable to phylloxera larvae, which cannot survive or burrow through it. As a result, Santorini's vines are all growing on their own roots — not grafted onto American rootstocks as virtually all European vines have been since the phylloxera crisis. These are ungrafted vinifera vines of documented age: some Santorini vines are estimated to be 200–500 years old. The oldest recorded Santorini vines are believed to predate the Ottoman conquest of the Cyclades. There is no equivalent pre-phylloxera, ungrafted vinifera vineyard of comparable scale anywhere in continental Europe.

The kouloura — basket vine training

Santorini's vines are trained in a method called kouloura (κουλούρα — Greek for "ring" or "coil"). The vine branches are woven into a low, basket-like circular form that sits close to the ground. The grapes grow inside the basket, protected from the fierce Meltemi winds that batter the island from June to September.

The kouloura system was not invented for aesthetics — it is a survival mechanism. Santorini's Meltemi winds reach 50–80 km/h regularly during summer. A normally trained vine would lose its canopy and grapes. The basket protects the fruit. The low training also means the grapes benefit from the heat retained in the volcanic soil at night, while being protected from the most desiccating effect of the wind during the day.

The kouloura is one of the oldest continuously practised viticultural techniques in the world. It is labour-intensive and impossible to mechanise. Every aspect of Santorini viticulture — planting, pruning, training, harvesting — is done by hand.

Assyrtiko — the grape

Assyrtiko (Ασύρτικο) is a white Greek grape variety indigenous to Santorini. At its best — fully ripe, from old ungrafted vines on volcanic soil — it produces wine with a flavour profile that has very few equivalents in the wine world: extreme acidity (pH often below 3.0), citrus fruit (lemon, lime, grapefruit), saline minerality, and a textural weight that comes from high extract and ripeness despite high acid. It is dry, austere, and mineral in its purest expression, with the ability to age for 10–20+ years.

Vinsanto — the traditional sweet wine of Santorini — shows a completely different side of the grape: sun-dried Assyrtiko concentrated to extraordinary richness, aged in barrel for years or decades, producing a wine of amber colour, dried apricot, honey, nuts, and oxidative complexity.

History — 3,500 Years of Viticulture

Archaeological evidence from the prehistoric settlement of Akrotiri (buried by the Minoan eruption c.1600 BCE and excavated from 1967 onward) includes wine presses, storage vessels, and carbonised grape seeds — demonstrating that Santorini was producing wine at least 3,500 years ago, making it one of the oldest documented wine-producing sites in the world.

Viticulture continued through Phoenician, Classical Greek, Hellenistic, Roman, Byzantine, and Venetian periods. The island was ruled by the Venetian Duchy of the Archipelago from 1207 to 1579, during which period Santorini wine — particularly the sweet Vinsanto — was an important trade commodity exported to Venice, Genoa, and across the Mediterranean. The name "Vinsanto" may derive from the Italian "vino di Santorini" (wine of Santorini) rather than "vino santo" (holy wine), though both interpretations are contested.

The Ottoman period (1579–1821) and subsequent Greek independence did not significantly disrupt viticulture — Santorini's remote island location protected it from some of the agricultural disruptions of the mainland. The phylloxera crisis of the 1860s–1900s, which devastated continental Greek viticulture as it did French, never reached the island, preserving the ungrafted vine population intact.

Soil and Terroir

The Santorini terroir is defined by four factors that are unusual or unique:

1. Volcanic pumice and ash soil (aspa)

The island's surface is primarily volcanic pumice, ash, and lava deposits from successive eruptions. This soil is extremely porous (virtually no water retention), almost devoid of organic matter and clay, and rich in silica, aluminium, and trace minerals from volcanic origin. The mineral-saline character that defines Santorini Assyrtiko is directly attributed to this volcanic soil composition — the vine absorbs mineral compounds with no equivalent in limestone, loam, or granite soils.

2. Near-zero rainfall and no irrigation

Santorini receives approximately 350 mm of rainfall per year, mostly concentrated in winter. The island's porous volcanic soil retains essentially none of this water for summer use. Irrigation from groundwater is technically possible but extremely limited and regulated. Vines survive on moisture from morning dew (condensation on vine leaves and the light volcanic soil surface) — a phenomenon specific to the island's climate and soil physics.

3. Phylloxera-free volcanic soil

Documented above. The result is that Santorini's vines are all on original roots with no American rootstock, and include specimens of documented age several centuries old. Old-vine Assyrtiko from these ancient plants produces wine of greater concentration and complexity than younger plantings.

4. The Meltemi wind

The seasonal north wind (Meltemi) that dominates the Aegean from June to September creates challenging conditions for viticulture. The kouloura training system was developed specifically to protect grapes from this wind. The Meltemi's desiccating effect also reduces fungal disease pressure — Santorini has almost zero botrytis, mildew, or rot problems that necessitate chemical intervention in wetter wine regions.

Santorini PDO is registered under the EU wine GI framework (EU Regulation 1308/2013). The specification (product specification / καθορισμός προδιαγραφών) is administered by the Greek Ministry of Rural Development and Food.

Greek Wine Law: Santorini PDO was established under Greek Law 243/1969 (original designation) and is currently governed by Law 4235/2014 on wine, which updated the Greek wine classification system to align fully with EU Regulation 1308/2013.

Phylloxera Immunity — Soil Physics

Phylloxera vastatrix (Daktulosphaira vitifoliae) — the North American root louse that devastated European viticulture — burrows through soil to attack vine roots. The standard understanding of volcanic pumice soil and phylloxera immunity is based on two mechanisms:

  • Physical barrier: pumice and volcanic ash have large particle sizes and very high porosity. Phylloxera larvae typically move through cohesive clay-loam soils via soil moisture films connecting soil particles. Pumice lacks this cohesive structure — the larvae cannot effectively burrow or establish stable migration paths through the granular volcanic material.
  • Moisture conditions: phylloxera larvae require certain soil moisture conditions for survival and movement. Santorini's extremely dry, porous volcanic soil — with virtually no retained moisture — creates conditions hostile to larval survival even if introduced.

Sandy soils have been noted to offer some phylloxera resistance throughout Europe (the Colares region in Portugal survived phylloxera on its sandy coastal soils for the same physical reasons). Volcanic pumice is effectively an extreme version of the same physical principle. No authenticated cases of phylloxera infestation in Santorini's vineyards have been documented.

The practical consequence: the ungrafted Santorini vines are true Vitis vinifera growing on their own roots. This means the root system, soil interaction, and presumably some aspects of flavour expression are as they were before phylloxera transformed European viticulture. This is irreplaceable — if Santorini ever loses its phylloxera-free status, it cannot be recovered.

Assyrtiko Genetics and Aroma Chemistry

Assyrtiko's genetic profile was established through VNTR (variable number tandem repeat) and SSR (simple sequence repeat) marker analysis by Greek ampelographers including Stavrakakis and Biniari (2004) and subsequent work by the Aristotle University of Thessaloniki. Assyrtiko is a Greek indigenous variety with no established close genetic relationship to major international varieties — it is genetically distinct from Chardonnay, Riesling, Sauvignon Blanc, and all other major white varieties.

The high acid character of Assyrtiko derives from high malic and tartaric acid concentrations at harvest — Santorini Assyrtiko can reach total acidity of 7–10 g/L (as tartaric) at 13–14% potential alcohol, a combination that is extremely unusual. Most white grapes at this ripeness level would show acid loss through malolactic fermentation temptation; Assyrtiko retains its acid through the natural vine adaptation to Santorini's hot, dry conditions.

The mineral saline character — the most distinctive feature of top Santorini Assyrtiko — is associated with elevated concentrations of certain mineral ions from the volcanic soil. Research by Kotseridis et al. and others has documented the role of volcanic mineral uptake (silicon compounds, trace minerals) in the distinctive palate weight and finish of Santorini wines, though the complete chemistry of "minerality" in wine remains scientifically unsettled.
