Nityam shastikashah shali mudam saindhavum phalam / Amalakam ghritam kshoudram nityam sevaniyam matam — Daily: Shashti (60-day rice), Shali rice, moong, rock salt, Amalaki, ghee, and honey. These seven are appropriate for daily use by all.

The six Nitya Sevaniya foods

Shali rice — old Shali variety

Shashti Shali (rice harvested at 60 days) is the classical ideal — lighter and more digestible than standard rice. Old Shali (stored for at least one year) is documented as preferred: the storage process reduces Kapha-aggravating properties. Modern white basmati, aged for 1–2 years, is the closest commercial equivalent to classical Shali. Primary property: Laghu (light), Sheeta (cold), Madhura — the most balanced grain for daily consumption.

Mudga — split moong dal

The only legume on the Nitya Sevaniya list — all other legumes produce Vata or Kapha aggravation when consumed daily. Moong dal's tridoshic properties and exceptional digestibility make it the classical daily protein source. Mudga full documentation.

Saindhava — rock salt

The only salt appropriate for daily use. All other salts are Ushna (hot) and Pitta-aggravating when consumed daily. Saindhava full documentation.

Amalaki — Indian gooseberry

The only Rasayana appropriate for daily use. Tridoshic, highest classical Vitamin C source, liver-protective, Agni-supportive. Daily consumption as fresh fruit or in Chyawanprash is the classical standard. Amalaki full documentation.

Goghrita — cow's ghee

In appropriate quantity (not excess — Matra is critical). Tridoshic in moderate use, enhances Agni, nourishes all Dhatu, the primary fat of classical daily diet. Classical quantity: 1–2 teaspoons daily for adults with normal digestion.

Madhu — honey

Unheated, raw honey as Anupana (vehicle) and daily supplement. Yogavahi — enhances absorption of whatever it accompanies. Classical quantity: small amounts (1–2 teaspoons) daily. Never heated above 40°C. Madhu full documentation.

And warm water

Charaka Samhita documents Ushna Jala (warm water) separately from the Nitya Sevaniya list but as universally beneficial daily — throughout the day, between meals, and as the standard Anupana. Warm water is documented as Deepaniya (Agni-kindling), Pachana (Ama-digesting), and Srotoshodhana (channel-clearing). Cold water is documented as Agni-impairing when consumed in excess or directly before/after meals.

The Nitya Sevaniya as a daily foundation
Charaka Samhita's intent is not that these six foods are the entire daily diet — it is that they form the foundation that any daily diet should include. A meal of Shali rice, moong dal prepared with rock salt and ghee, with Amalaki as a side, with warm water as the beverage — this is the classical Nitya Sevaniya meal. Everything else is built on top of this foundation, adjusted by constitution, season, and condition.
