Cognac is a double-distilled grape brandy produced exclusively within the Cognac AOC — the Charente and Charente-Maritime departments of France, with small parts of Deux-Sèvres and Dordogne — governed by the BNIC (Bureau National Interprofessionnel du Cognac, Cognac) and the foundational Décret du 15 mai 1936. Permitted grape varieties are limited by regulation; Ugni Blanc (Vitis vinifera Trebbiano Toscano clone, 99%+ of plantings) provides the dominant wine base for distillation. All Cognac must undergo double distillation in Charentais copper alembic pot stills and age in Limousin or Tronçais oak. Age designations — VS (minimum 2 years), VSOP (minimum 4 years), XO (minimum 10 years since 1 April 2018) — are defined by the youngest eau-de-vie in the blend. Cognac is protected as a GI under EU Regulation 2019/787 Annex III and by bilateral trade agreements with over 70 countries.
The Cognac AOC: Scale and Structure
Cognac is France's most valuable exported spirit and one of the world's top-five spirits by export value. The BNIC (Bureau National Interprofessionnel du Cognac) reports approximately 200–230 million bottles exported annually in recent years, with China, the United States, and Singapore as the leading markets. The Cognac AOC encompasses approximately 79,000 hectares of vineyard across six crus in the departments of Charente and Charente-Maritime. Around 4,500 winegrowers, 130 professional distillers, and over 270 trading houses operate within the AOC.
The six crus — Grande Champagne, Petite Champagne, Borderies, Fins Bois, Bons Bois, and Bois Ordinaires — reflect a geological gradient from the central chalky soils that produce the most delicate, long-ageing eaux-de-vie, outward to heavier clay-sand soils that produce faster-maturing, fuller-bodied distillates. The word "Champagne" in Grande and Petite Champagne has no connection to the sparkling wine region of the same name; it derives from the Latin campania (open countryside) and refers to the open chalky plain landscape.

The BNIC: Structure and Role
The Bureau National Interprofessionnel du Cognac (BNIC), headquartered at 23 allées du Champ de Mars, 16101 Cognac, is the inter-professional body that governs the Cognac AOC on behalf of all stakeholders: winegrowers, distillers, and négociant-éleveurs (trading houses). Founded in 1946, the BNIC sets technical regulations for production, enforces age designation rules, certifies Cognac exports, operates the Centre de Documentation du Cognac, and promotes Cognac internationally. It works within the framework of the 1936 décret and the EU GI system.
BNIC certification is required for all Cognac export. The BNIC issues individual export certificates for each shipment and maintains detailed records of declared stock ages — the foundation of the age designation system. This certification infrastructure means the age designation on a Cognac label is a legally enforceable statement verifiable against BNIC records, unlike many other spirit categories where age claims are effectively self-reported.

The "Count" System: How Age Is Tracked
Cognac age is tracked using the "count" (compte) system maintained by the BNIC. Newly distilled eau-de-vie enters oak on 1 April each year (the official start of the count year). It is assigned Count 00 for its first year. On 1 April of the following year it becomes Count 01; on 1 April of its third year, Count 02; and so on. For age designation purposes: VS requires Count 02 (minimum 2 years); VSOP requires Count 04; Napoléon requires Count 06; XO requires Count 10. A blend's age designation is determined by the youngest eau-de-vie in the blend — if a VSOP blend contains even a small amount of Count 03 eau-de-vie, the entire blend must be labelled as VS.
Ugni Blanc: The Paradox of Cognac's Grape
Ugni Blanc (Vitis vinifera L. cv. Ugni Blanc, synonyms: Trebbiano Toscano in Italy, Saint-Émilion des Charentes locally) is the most planted white grape variety in France and the backbone of Cognac production, accounting for approximately 97–99% of Cognac AOC plantings. This dominance is paradoxical: as a table wine grape, Ugni Blanc is considered mediocre. Its wine is notably thin, high-acid (pH 2.8–3.2), low-sugar (7–9% potential alcohol at harvest), and largely devoid of aromatic complexity. It is precisely these characteristics — especially the high natural acidity — that make it ideal for distillation.
Why High Acidity Is Desirable for Distillation
High acidity in the base wine has several benefits for cognac production. First, it acts as a natural preservative during the 8–10 weeks between harvest and distillation (all Cognac must be distilled by 31 March of the year following harvest), reducing the need for sulphur dioxide additions that would create off-flavours in the distillate. Second, organic acids in the wine are partially carried into the distillate and contribute to the ester formation during ageing — acetic acid, lactic acid, and tartaric acid-derived compounds participate in esterification reactions with alcohols over the years in oak. Third, the high-acid, low-alcohol wine ferments completely and cleanly with minimal residual sugar, producing a distillate of greater aromatic purity.
The low alcohol content of Ugni Blanc wine (~7–9% ABV) is also advantageous: lower-alcohol wines produce higher esters and congener concentrations in the distillate at equivalent distillation cut points, compared to a higher-alcohol wine of the same volume.

Terroir: Chalk and the Cru Gradient
The soil geology of the Cognac AOC is the primary driver of cru differentiation. Grande Champagne — the innermost, most prestigious cru — sits on Campanian chalk (from the Campanian stage of the Late Cretaceous, 72–83 million years ago): a porous, brilliant-white chalky limestone that absorbs water slowly, drains well, and reflects light onto the vine canopy. The chalk's slow water release keeps vines slightly stressed during summer, producing small berries with concentrated acid and delicate flavour compounds. Grande Champagne eaux-de-vie are characterised by exceptional finesse, slow maturation, and the longest ageing potential of any Cognac cru — a well-made Grande Champagne eau-de-vie continues to develop in oak for 50–80 years.
Moving outward from the centre, the chalk content decreases and clay content increases. Fins Bois and Bons Bois have more clay-limestone and sandy soils; their vines have easier water access, producing higher-yield, fuller-bodied wine that distils to eaux-de-vie with faster maturation, less finesse but more immediate fruit and body. This gradient directly maps to blending utility: virtually all major house blends use a Grande or Petite Champagne core for their age structure, with Fins Bois additions for fruit and volume.
The Charentais Alembic and Double Distillation
Still Design and the Role of Copper
All Cognac must be double-distilled in the alambic charentais (Charentais alembic or pot still). The design has remained largely unchanged since the 17th century: a copper pot (chaudière, 15–25 hectolitres capacity for the first distillation), a chapiteau (onion-shaped copper dome), a col de cygne (swan-neck lyne arm), a chauffe-vin (wine preheater — a coil immersed in the incoming wine that recovers heat from outgoing vapour), and a condensing worm (serpentin) immersed in cooling water.
The requirement that the still be copper is not merely traditional — it is chemically functional. Copper acts as a catalyst for several important reactions during distillation: it adsorbs sulphur compounds (particularly hydrogen sulphide H₂S and dimethyl sulphide DMS) that would otherwise produce off-flavours; it catalyses the formation of beneficial esters through radical-mediated reactions in the vapour phase; and it participates in Maillard-like reactions with wine protein fragments, contributing to the characteristic rancio note that defines aged Cognac. The surface area of copper contact and the condition (oxidation state) of the copper surfaces directly affect the quality of the distillate.
First Distillation (Première Chauffe): The Brouillis
The wine (7–9% ABV) is heated in the chaudière. Vapours pass through the chapiteau and swan neck, are pre-cooled in the chauffe-vin, and condensed in the serpentin. The first distillation (première chauffe) produces a distillate called the brouillis at approximately 27–32% ABV. The brouillis is not a complete run from start to finish — the distiller makes a "head" cut (têtes) and a "tail" cut (secondes/queues) at defined distillation fractions, collecting only the heart fraction. The têtes (rich in acetaldehyde and methanol) and secondes/queues (rich in fusel alcohols and higher-boiling congeners) are typically returned to subsequent wine charges for redistillation.
Second Distillation (Deuxième Chauffe): The Bonne Chauffe
The bonne chauffe (good distillation) is the second pass. Three to four batches of brouillis are combined and redistilled in the same still. The distiller again makes careful head and tail cuts. The heart fraction — the new eau-de-vie de Cognac — exits the still at approximately 68–72% ABV. BNIC regulations specify that the new distillate must not exceed 72.4% ABV, preserving the flavour congeners that would be lost at higher distillation strengths.
Oak Ageing: Limousin and Tronçais Oak
New eau-de-vie (clear, high-alcohol, fruity) enters new Limousin or Tronçais oak barrels (270–350L, called pièces) for initial ageing. Limousin oak (Quercus robur, from the Limousin forest of Haute-Vienne and Corrèze) has wider grain than Scottish or American oak, allowing more rapid oxygen and extract transfer. Tronçais oak (Quercus petraea, from the Forêt de Tronçais, Allier) has finer grain and contributes more vanilla/coconut oak lactone character with slower tannin extraction. New barrel ageing typically lasts 1–2 years; thereafter the eau-de-vie is transferred to older, seasoned barrels (known as roux — "old reds") where it continues ageing at a slower rate. Very old cognacs may spend decades in the same seasoned cask.
Early landed vs late bottled is a distinction relevant to cognac imported to the UK market in particular. "Early landed" refers to cognac shipped in cask to the UK warehouse shortly after distillation and aged in the cooler, more humid UK conditions — producing a softer, less evaporative ageing with a different rate of flavour development than French-cellared cognac of the same age. "Late bottled" cognac is aged in France, then bottled and exported. The climatic difference (Cognac, France: 12–17°C average, variable humidity; UK warehouse: 10–14°C, higher humidity) produces meaningfully different organoleptic outcomes, with early landed cognac often showing a distinctly softer, more floral, less rancio character.
The Four Major Houses
While over 270 Cognac houses are registered with the BNIC, four houses — Hennessy, Rémy Martin, Courvoisier, and Martell — account for approximately 80–85% of total Cognac exports by volume. Each is owned by a major global spirits group and has a distinct production philosophy, cru sourcing strategy, and house style.
World's largest Cognac producer (~50% of all Cognac exported annually). Acquired by LVMH (Moët Hennessy division) in 1971. Sources from all six crus with concentration in Grande and Petite Champagne; maintains the world's largest Cognac reserve in its warehouse complex. The Hennessy Master Blender (Chef de Cave) has historically been female — Christine Chaigneau-Beaumont succeeded Renaud Fillioux de Gironde's lineage. Key expressions: VS, VSOP Privilège, XO (created 1870 by Maurice Hennessy as the first cognac blended for personal consumption rather than trade), Paradis, Richard Hennessy. Hennessy's dominance is partly attributable to its early penetration of the US market (post-Prohibition) and particularly the Black American community, where Hennessy achieved near-iconic status in popular culture from the 1990s.
The only major house to use exclusively Fine Champagne (Grande and Petite Champagne, ≥50% Grande) eaux-de-vie across its entire range — a quality positioning that limits volume but enables exceptional ageing character. Owned by Rémy Cointreau since 1991. Current Chef de Cave: Baptiste Loiseau. Rémy Martin VSOP is the world's best-selling Fine Champagne Cognac. Famous for its Napoleonic connection — legend holds that Napoleon III granted Courvoisier the title "Official Cognac Supplier to the Emperor." Acquired by Allied Domecq, then Fortune Brands, then Beam Inc, then Suntory Holdings (2014). Chef de Cave: Thibaut Hontanx. Sources heavily from Fins Bois and Bons Bois, giving Courvoisier expressions a fruit-forward, approachable style. The oldest of the four major houses, founded by Jean Martell from Jersey in 1715 (not 1724 as sometimes cited; Martell claims 1715 as its founding date). Acquired by Seagram 1987, then Pernod Ricard 2001. Martell has historically favoured Borderies eaux-de-vie — the smallest cru, known for its characteristic violet/iris floral note and nutty, rounded character — giving Martell a distinctive house style different from the Grand Champagne-focused competitors. Château Chanteloup, Martell's historic estate, remains the production centre. Blending Philosophy and the Cellar Master
The cellar master (Chef de Cave or Maître de Chai) is the most important technical role in any Cognac house. The Chef de Cave is responsible for the entire maturation programme — selecting which eaux-de-vie to buy from distillers, monitoring their progress through years and decades of ageing, deciding when to move them between barrel types, and ultimately blending them into the house's core expressions. The blending objective is consistency: each bottling of Hennessy XO or Rémy Martin VSOP must taste identical to the previous one, despite being assembled from a constantly changing pool of ageing eaux-de-vie. This requires building and maintaining a mental and sensory model of the house style that spans decades of stock.
Permitted additives in Cognac (under BNIC rules): caramel colouring (up to ~2% by volume; for colour consistency across batches from different wood-aged parcels — all large-house Cognacs use it); boise (oak chip infusion to add rapid wood character to younger eaux-de-vie); sugar syrup/sucrose (up to 20g/L to smooth rough younger spirits in VS-grade products). The use of these additives is legal and regulated but not required to be disclosed on the label.
