The traditional Georgian method of making Kvevri wine (კვევრი ღვინო) was inscribed on the UNESCO Representative List of the Intangible Cultural Heritage of Humanity in December 2013 (reference 00870). Georgia, located in the South Caucasus between the Black Sea and the Caspian Sea, has documentary and archaeological evidence of continuous winemaking for approximately 8,000 years — making it the oldest documented wine-producing culture on earth. The Kvevri, a large beeswax-lined clay vessel buried in the ground, is the defining technology of this tradition. Grapes are fermented and aged in Kvevri in a process unique in the world of wine.

Why Georgia matters in wine history

Every bottle of wine you have ever drunk traces its origins, in some cultural sense, to the South Caucasus — the mountainous region that includes modern Georgia, Armenia, and Azerbaijan. This is where the wild grape (Vitis vinifera sylvestris) was first domesticated. This is where humans first discovered that crushed grape juice, left alone, spontaneously ferments into wine. The oldest archaeological evidence of deliberate wine production — clay vessels with grape residue, grape pips, grape pomace — comes from sites in this region, and particularly from Georgia.

The Neolithic site of Gadachrili Gora in the Kvemo Kartli region of Georgia yielded evidence — published in the Proceedings of the National Academy of Sciences in 2017 — of wine production dating to approximately 6,000 BCE. Combined with earlier findings from the Areni-1 cave site in Armenia (c.4100 BCE) and Hajji Firuz Tepe in Iran (c.5400 BCE), the picture that emerges is of a continuous wine culture in the South Caucasus stretching back approximately 8,000 years. Georgia represents the best-documented and most continuous of these traditions.

The first winemakers chose this geography for good reason
Georgia sits at a remarkable natural intersection: the wild Eurasian grape vine grows natively in the Caucasus forests. The climate — warm summers, cold winters, regular rainfall — suits viticulture perfectly. The mountain valleys provide diverse exposures and microclimates. And the local clay, fired at the right temperature, produces vessels that are permeable to oxygen in a controlled way. The Kvevri was not a random invention. It was the perfect technology for the place where viticulture began.

What is a Kvevri?

A Kvevri (also spelled qvevri — the two spellings are both in common use; kvevri is the traditional Georgian Mkhedruli script transliteration, qvevri is the more academic romanisation) is a large, egg-shaped clay vessel used for the fermentation, ageing, and storage of wine. It is made from local clay, fired in a kiln, and lined on the interior with beeswax. It is then buried in the ground up to its neck, with only the opening visible above the floor of the marani (wine cellar).

Kvevri range in size from approximately 100 litres to 3,000+ litres, though most working Kvevri for winemaking are in the range of 500–2,000 litres. Once filled with grape must and sealed with a stone lid, the buried Kvevri maintains a remarkably stable temperature — the surrounding earth acts as natural temperature regulation, keeping the wine cool in summer and protecting it from freezing in winter. This thermal stability was the original reason for burying the vessel and remains its most important practical function.

After fermentation and ageing, the wine is pumped or scooped out from the top, the Kvevri is cleaned, and a fresh coat of beeswax is applied before the next vintage. A well-maintained Kvevri can last for generations — some active Kvevri in Georgian cellars are documented as 200–300 years old.

Amber wine — the Kvevri method and skin contact

The most distinctive product of the traditional Georgian Kvevri method is what is now internationally called "amber wine" or "orange wine" — white wine made with extended skin contact. In conventional white winemaking, the grape skins are separated from the juice before or during fermentation. In the traditional Georgian method, white grapes are crushed and the entire grape — skins, seeds, and stems — is fermented together in the Kvevri for an extended period (weeks to months, depending on the producer).

This extended skin contact extracts tannins from the skins and seeds, colour compounds (producing the characteristic amber/orange hue), and additional flavour compounds. The result is a white wine with the structure and tannic grip of a light red wine, a colour ranging from pale gold to deep amber, and a flavour profile of dried fruit, nuts, honey, earth, and a firm, tannic finish. It is a fundamentally different category of wine from conventional white wine, and it is Georgian in origin.

The global "natural wine" movement that has profoundly influenced wine culture since the 2000s drew heavily on this Georgian amber wine tradition as an alternative to the clean, stripped white wine style that dominated international markets in the 1980s–1990s. Josko Gravner, an Italian producer from Friuli who began making skin-contact wines in Kvevri in the late 1990s after visiting Georgia, is often credited with introducing the Georgian method to the international wine audience.

History — 8,000 Years in Summary

The archaeological record for Georgian wine is one of the most documented in the ancient world:

  • c.6000 BCE: Gadachrili Gora site, Kvemo Kartli, Georgia — clay sherds with tartaric acid residue and grape anthocanins, published 2017 (McGovern et al., PNAS). Earliest direct chemical evidence of wine in Georgia.
  • c.4100 BCE: Areni-1 cave, Armenia — winery installation including grape press, fermentation vats, drinking vessels. Well-preserved and extensively studied.
  • Bronze Age (c.3000–1000 BCE): Kvevri vessels appear consistently across Georgian archaeological sites, indicating an established tradition of in-ground clay vessel wine storage.
  • Classical antiquity: Greek and Roman writers describe "Colchian wine" (Colchis being the ancient name for western Georgia in Greek sources) and Georgian wine was traded across the Black Sea and into the Mediterranean.
  • 4th century CE: Christianity adopted as the state religion of the Kingdom of Iberia (eastern Georgia). The vine and wine became deeply embedded in Georgian Orthodox Christian iconography and practice — the cross of St. Nino (Georgia's patron saint) is traditionally made from grapevines. The religious and cultural centrality of wine in Georgia is inseparable from its Christian heritage.
  • Soviet period (1921–1991): Georgia was a major wine producer within the USSR, supplying approximately 40% of Soviet wine consumption. Soviet-era industrialisation significantly disrupted traditional Kvevri production in favour of industrial methods. Many traditional Kvevri vineyards were converted to high-yield industrial production. The knowledge of Kvevri making itself nearly died out.
  • Post-independence revival (1991–present): Georgian independence in 1991 sparked a cultural revival including the rediscovery of traditional Kvevri winemaking. A new generation of Georgian winemakers ("Natural wine" producers including Iago Bitarishvili, Pheasant's Tears, Ramaz Nikoladze, and others) revived traditional methods. International interest accelerated through the 2000s–2010s as the global natural wine movement embraced Georgian amber wine.
  • 2013: UNESCO inscribes "the traditional Georgian method of making Kvevri wine" on the Intangible Cultural Heritage list.

The Kvevri Winemaking Process

Step 1 — Harvest and crushing

Grapes are harvested and crushed, producing must (grape juice with skins, seeds, and often stems). For white amber wine, the white grape skins remain with the must; for standard white wine, skins may be separated earlier. For red wine, the red grape must follows a similar process.

Step 2 — Transfer to Kvevri

The must is transferred to the buried Kvevri — traditionally using vessels and a funnel, though modern producers may use pumps. The Kvevri is filled to approximately 80% capacity to allow for fermentation expansion and cap management.

Step 3 — Spontaneous fermentation

No cultured yeast is added in traditional Kvevri winemaking — indigenous wild yeasts on the grape skins and in the marani initiate fermentation. This typically begins within 24–48 hours and runs for 2–4 weeks for primary fermentation. The winemaker pushes the cap (the floating mass of skins and seeds) down manually once or twice daily to maintain skin contact and prevent drying and oxidation of the cap surface.

Step 4 — Sealing and ageing

After primary fermentation, the Kvevri is sealed with a stone or wooden lid (often sealed with beeswax at the rim). For amber wine styles, the wine continues to age on the skins for weeks to months — the extended skin contact continues to extract tannins and phenolics. For simpler styles, the wine may be pressed and the skins removed at this point.

Step 5 — Spring racking

Traditional Georgian practice involves leaving the sealed Kvevri through winter. In spring (typically March–April), the wine is pumped off the lees and skins into a clean Kvevri for further ageing, or bottled for commercial release.

Step 6 — Kvevri maintenance

After emptying, the Kvevri is cleaned with water, cherry laurel leaves (traditional antimicrobial), and spring water. A fresh interior coat of beeswax is applied by heating the vessel and brushing melted beeswax onto the interior surface. This maintains the vessel's impermeability to the wine while allowing the controlled micro-oxygenation through the clay walls.

Georgia has over 500 documented indigenous grape varieties — one of the greatest concentrations of viticultural biodiversity in the world. This is consistent with its role as the original centre of Vitis vinifera domestication: the Caucasus is the genetic homeland of the cultivated vine, and Georgia preserves more of that original genetic diversity than anywhere else on earth.

Regulatory Framework

Georgian wine law underwent comprehensive modernisation after independence and particularly following the EU-Georgia Association Agreement (DCFTA — Deep and Comprehensive Free Trade Agreement) signed in 2014.

Georgian Law on Wine and Vine (2014): the primary legislation governing Georgian wine production, appellation system (PDO and PGI designations), labelling requirements, and the definition of the "Georgian method" (Kvevri winemaking).

PDO wines of Georgia — the formal designations

Georgia has a developed PDO system with over 20 registered appellations, primarily within Kakheti. Key PDOs:

  • Kindzmarauli — semi-sweet red from Saperavi, Kvareli municipality, Kakheti. One of Georgia's most internationally recognised wines.
  • Mukuzani — dry red from Saperavi, Gurjaani municipality, Kakheti. Georgia's most prestigious dry red PDO; minimum 3 years ageing.
  • Tsinandali — dry white from Rkatsiteli and Mtsvane, Telavi and Kvareli, Kakheti.
  • Khvanchkara — semi-sweet red from Alexandrouli and Mujuretuli, Ambrolauri, Racha. Famously associated with Joseph Stalin, who reportedly served it at the Yalta Conference (1945).
  • Rkatsiteli (PDO) — specific appellation for Rkatsiteli from designated villages in Kakheti.

UNESCO Intangible Cultural Heritage — Inscription 2013

The "Traditional Georgian method of making Kvevri wine" was inscribed on the UNESCO Representative List of the Intangible Cultural Heritage of Humanity at the 8th session of the Committee for the Safeguarding of the Intangible Cultural Heritage, held in Baku, Azerbaijan, in December 2013 (Decision 8.COM 8.19).

The inscription specifically covers: the craft of Kvevri making (the production of the clay vessels), the practice of Kvevri winemaking (the entire process from harvest to bottling in Kvevri), and the related social and cultural practices associated with Georgian wine culture — including the supra (traditional Georgian feast), the tamada (toastmaster tradition), and the role of wine in Georgian Orthodox Christian rituals.

The inscription recognised that "Kvevri clay wine vessels are an integral part of Georgian cultural traditions" and that the practice "brings communities together, reinforces their identity and ensures continuity of traditions."

Kvevri Chemistry — Why In-Ground Clay Vessels Produce Distinctive Wine

The Kvevri's chemical impact on wine derives from three physical properties of the fired, beeswax-lined clay vessel:

1. Micro-oxygenation through clay walls

Fired clay is permeable to oxygen at a rate significantly higher than glass but lower than wooden barrels. The exact oxygen transmission rate (OTR) of Kvevri clay varies with firing temperature, clay composition, and wall thickness, but is generally estimated at 0.5–2 mg/L/year. This is within the range of oak barrel micro-oxygenation (1–5 mg/L/year depending on barrel size and age) but distinct from both glass (essentially zero OTR) and new oak (which also contributes extractive compounds). The controlled oxygen exposure promotes tannin polymerisation and colour stabilisation without the wood-extract contribution of barrels.

2. Thermal stability from burial

The surrounding earth maintains Kvevri temperature at approximately 12–14°C year-round in most Georgian cellars. This temperature range is ideal for slow fermentation (promoting ester retention) and long ageing (slowing oxidative reactions while allowing controlled evolution). The temperature stability also prevents the freeze/thaw cycling that can damage wine in above-ground storage in Georgia's continental climate.

3. Beeswax lining

Beeswax (primarily composed of long-chain hydrocarbons, fatty acid esters, and free fatty acids) creates a semi-inert barrier between the clay body and the wine. It prevents the direct mineral extraction from clay that would otherwise occur (raw unfired clay dramatically affects wine chemistry) while maintaining the porous clay's oxygen transmission. Beeswax compounds are largely insoluble in wine at cellar temperatures, contributing minimally to wine flavour directly.

Extended skin contact chemistry

For Kakheti-style amber wine (6 months skin contact), the extended maceration extracts:

  • Condensed tannins (proanthocyanidins): from grape skins and seeds — contributing astringency, structure, and antioxidant protection that allows the wine to age without preservatives
  • Anthocyanins: from white grape skins (present in very small quantities) — responsible for the amber/orange colour; these are extracted at much lower concentrations than from red grapes but accumulate with extended maceration
  • Hydroxycinnamic acids: ferulic acid, caffeic acid — contributing to the characteristic "oxidative" aromatic notes (dried fruit, nuts, hay) of amber wine and providing antioxidant stability
  • Potassium and bitartrate precipitation: the tannin content physically encourages bitartrate crystal formation during cold winter conditioning in the buried Kvevri, naturally stabilising the wine against tartrate precipitation in bottle
