Russian GOST 56368-2015
GOST 56368-2015 ("Vodka and Special Vodka") is the current Russian federal standard for vodka quality, replacing the earlier GOST R 51355-1999. Production: Rectification and Filtration
Column Rectification to 96% ABV
Vodka production begins with fermentation of the base material — most commonly rye, wheat, or potato mash — to produce a wash (beer) of approximately 8–14% ABV. This wash is then subjected to continuous column distillation through a multi-column rectification system, typically comprising an analyser column, an exhausting column, and one or more rectifying columns. The objective is to produce ethyl alcohol of ≥96% ABV (the EU threshold for "ethyl alcohol of agricultural origin") while removing congeners — aldehydes, fusel alcohols (higher alcohols: propanol, isobutanol, isoamyl alcohol), esters, and methanol — to below taste-threshold levels.
The rectification process exploits differences in volatility between ethanol and congener compounds. In a distillation column, more volatile compounds (low-boiling heads: acetaldehyde bp 20°C, ethyl acetate bp 77°C) concentrate in the upper portion of the column and are removed as "heads" or "foreshots." Less volatile compounds (fusel oils and high-boiling tails: isoamyl alcohol bp 131°C, propanol bp 97°C) concentrate in lower sections and are removed as "tails" or "feints." Ethanol (bp 78.3°C) concentrates in the middle section and is drawn off as the product stream. At 96% ABV, the ethanol-water azeotrope is approached; going beyond 96% requires further processing (molecular sieves or pressure-swing distillation for anhydrous ethanol).
Activated Carbon Filtration
After rectification and dilution to bottling strength (37.5–40% ABV, using demineralised or softened water), virtually all premium vodkas are treated with activated carbon — typically food-grade activated charcoal made from coconut shell, birch wood, or coal. The activated carbon surface area is typically 800–1,200 m² per gram, providing an enormous contact surface for adsorption of residual impurities.
Activated carbon removes trace congeners via two mechanisms: physical adsorption (van der Waals forces attracting non-polar organic compounds to the carbon surface) and chemical adsorption (chemisorption of polar compounds through surface functional groups). Charcoal filtration is not the only treatment method. Some producers use quartz sand filtration (mechanical), silver filtration (antimicrobial, some Russian producers), or freeze filtration (sub-zero cold stabilisation to precipitate fatty acid ethyl esters). The TTB in the United States permits charcoal filtering as a standard operation for vodka without changing the spirit's classification.
Water Quality and Dilution
Water chemistry is a significant quality differentiator in premium vodka. Rectified spirit is diluted from 96% to bottle strength using demineralised or artesian water. Mineral content in dilution water directly affects mouthfeel, taste, and stability.
