Priorat
Black slate that reflects the sun and forces roots 20 metres deep. Five winemakers in 1989 who changed what Spanish wine meant to the world.
Priorat is a Denominación de Origen Calificada (DOCa) wine region in the province of Tarragona, Catalonia, Spain. It is one of only two DOCa designations in Spain (the other being Rioja) — the DOCa classification indicates the highest quality tier of Spanish wine designation, requiring production and tasting standards beyond the DO level. The Priorat DOCa covers approximately 2,000 hectares of vineyards in a dramatic landscape of steep terraced hillsides in the Priorat Massif. The defining geological feature of Priorat is its llicorella soil — a black and slate-grey schist with high mica content that is porous, extremely poor in nutrients, and reflects solar radiation. Llicorella forces vine roots to penetrate 15–20 metres deep to access water and nutrients — producing extremely concentrated, low-yield fruit. The primary red varieties are Garnacha (Grenache) and Cariñena (Carignan/Mazuelo), supplemented by Cabernet Sauvignon, Merlot, Syrah, and other permitted varieties. White wines (primarily from Garnacha Blanca, Macabeo, Pedro Ximénez, and Chenin Blanc) are produced in small quantities. The governing body is the Consejo Regulador de la DOCa Priorat.
The 1989 revolution — how five winemakers transformed a forgotten region
Before 1989, Priorat was a region in economic collapse. The terraced schist vineyards — too steep and rocky for mechanical harvest — had been abandoned progressively since the 1960s as agricultural labour left for Barcelona and industrial work. The remaining cooperative wines were bulk, oxidative, and sold cheaply. Priorat was unknown internationally.
In 1989, René Barbier (Clos Mogador), Álvaro Palacios (L'Ermita, Finca Dofí), Dafne Glorian and Carlos Pastrana (Clos de l'Obac), and Josep Lluís Pérez (Clos Martinet) — the "Quintet" — simultaneously established estates in Priorat. They recognised that the old Garnacha and Cariñena vines, stressed by llicorella soils, produced extraordinarily concentrated, mineral wine when yields were kept extremely low and careful winemaking applied. They used French barriques — then rarely used in Spain — and released wines that shocked critics with their intensity, complexity, and price. Álvaro Palacios' L'Ermita became Spain's most expensive wine within a decade of its first vintage (1993).
Priorat was elevated to DOCa in 2000 — the first region in Spain outside Rioja to achieve this classification. The region now has over 100 registered producers, international critical acclaim, and land prices that have made it economically viable once again.
Llicorella — the geological signature
Llicorella is the Catalan name for the schist soils of Priorat — composed primarily of slate, quartzite, and mica. The term covers dark grey/black schist (slate) and reddish quartzite llicorella varieties. These soils have three properties that fundamentally shape Priorat's wine character:
First, they are extremely poor in nutrients — essentially low-fertility rock. Vines grown in llicorella cannot produce high yields because there is insufficient nitrogen, phosphorus, and potassium to support vigorous growth. Yields of 10–20 hectolitres per hectare (compared to 50–80 in fertile plains) concentrate all the vine's sugar production into a small number of berries.
Second, llicorella drains rapidly and holds almost no water — forcing vine roots to penetrate extremely deeply (documented at 15–20+ metres) to access moisture from fractured rock. Vines with deep roots are more drought-resistant and produce fruit with more complex mineral character from the diverse rock layers encountered at depth.
Third, llicorella is dark and absorbs heat during the day, then releases it at night — moderating the extreme temperature swings of Priorat's continental-Mediterranean climate and extending the growing season slightly relative to paler soils in the same area.

Key Priorat producers and wines
The following are the founding and most internationally recognised Priorat producers, documented from official Consejo Regulador membership and critical records:
- Álvaro Palacios — L'Ermita (single terraced vineyard, primarily very old Garnacha, first vintage 1993 — Spain's most expensive wine for many years) and Finca Dofí (second wine). Also produces Les Terrasses (regional blend) as entry level.
- Clos Mogador (René Barbier) — the founding estate. Single 17-hectare vineyard. Complex blend of Garnacha, Cariñena, Cabernet Sauvignon, Syrah. First vintage 1989.
- Clos de l'Obac (Costers del Siurana) — Dafne Glorian and Carlos Pastrana. Miserere is the second label. Primarily Garnacha and Cariñena with international varieties.
- Clos Martinet (Josep Lluís Pérez) — Martinet Bru is the more accessible label.
- Mas Doix — old-vine Cariñena specialist. Some of Priorat's oldest Cariñena vines.
- Scala Dei — Catalonia's oldest winery (Carthusian monastery established ~1163). The village of Scala Dei is the historic heart of the appellation.
The mineral character of llicorella wines — what the science says
The claim that llicorella produces distinctively "mineral" wine is widely made in producer and critical literature. The scientific basis for this claim is more nuanced than the marketing language suggests — and is worth documenting accurately.
Soil mineralogy does not directly transfer to wine flavour. Schist/slate minerals (silicates, mica, iron compounds) are not volatile, not water-soluble in amounts that would reach the wine at sensory-relevant concentrations, and do not become aromatic compounds during fermentation. The "mineral" character of Priorat wine is not a direct transfer of rock compounds into the wine.
What llicorella does measurably affect: (1) Vine stress from nutrient and water limitation — producing low-yield, concentrated berries with high skin-to-juice ratio, which increases tannin and colour concentration; (2) Root depth — accessing diverse mineral layers at depth, which affects the mineral composition of the vine's xylem sap and may indirectly affect berry chemistry; (3) Thermal properties — the dark, heat-retentive schist moderates temperature extremes and influences ripening curve. The sensory "mineral" impression in tasting is likely a combination of high acidity, low pH, saline/mineral-adjacent compounds from specific fermentation-derived metabolites, and reduced fruit-forward sweetness (because the wine's sugar is balanced by high acid and tannin). Garnacha — old vines and their role in Priorat's quality
Many of Priorat's most celebrated wines are made from Garnacha vines between 50 and 100+ years old. Old vines produce smaller yields than young vines because the vine's production capacity decreases with age — the vine's energy goes into developing and maintaining its extensive root system rather than producing fruit. Old Garnacha in llicorella produces berries with thick skins (high tannin and colour), concentrated sugar (high natural alcohol), and preserved acidity (from the stress of deep-root water access). The combination produces wines with more complexity, depth, and longevity than young-vine Garnacha from the same site.
